JOE'S HOMEMADE MUSHROOM SOUP

Steps:
- Melt butter in a large saucepan over medium heat. Cook and stir onion and mushroom in hot butter until onion is tender, about 3 minutes. Stir flour, pepper, and salt into the onion mixture. Gradually stream milk and chicken broth into mixture while stirring to incorporate.
- Bring the liquid to a boil; cook at a boil until thickened, about 2 minutes. Remove saucepan from heat. Stir parsley and nutmeg into the soup. Ladle soup into bowls and top each with a dollop of sour cream.

JOLEAN'S SLOP SOUP
This was a staple in our family growing up. Very inexpensive and easy, and kid-friendly. Odd thing about it was that our friends from school would ask to stay for supper at our house whenever Mom made this, and she concocted it simply because we didn't have much in the way of groceries/money back then!!

Steps:
- Brown the garlic and ground chuck and break into chunks while cooking. Drain thoroughly.
- Pour soups and water into large stock pot. Stir until smooth and no lumps, while heating on medium heat on the stove.
- Add browned ground beef, mushrooms, oregano, basil, salt & pepper. Cook until gently bubbling.
- Add noodles and simmer on low for 10 minutes (until noodles are al dente', or tender but not mushy.) Add pat of butter and stir in as it melts.
- Serve with warm garlic & cheese bread.

So yummy, so easy, and so cheap. The story is that my father-in-law made this up. It's the most asked for dinner by my kids. We usually serve with mac and cheese. Makes enough to serve our family of 6 w/large portions and to have left overs for tomorrow (which are always eaten).

We were brought up calling it slop growing up and it kinda looks like slop, but we all love to eat it and it's even better leftover. Call it whatever you want . . . no one asked you if you liked the title. Season to taste means exactly that . . . if someone who is eating this is on a salt-restricted diet, than make something a bit more healthy than a dish named Slop.

- Slice onions and saute in butter.
- Add potatoes after 5 minutes.
- Saute potatoes until fork tender.
- Brown the ground beef in separate pan and drain drippings.
- Fold in mushroom soup and ground beef into potato mixture gently.

- Season to taste.
JOLEAN'S CHICKEN BROCCOLI CASSEROLE
I've seen and tried MANY of these similar casseroles, but somehow none of them quite match the flavor of this one! My Mom tweaked it to her own taste, and it has stood the test of time! An honest and true favorite in my family for 2 generations now, I can tell you that this one is IT! :)

- In a large pan, cover chicken breasts with water, add 2 teaspoons salt and seasonings. Bring to a boil and simmer 1 hour. Let cool and break into large pieces.
- Cook frozen broccoli as per directions, reserving 1/4 cup of liquid.
- In a large casserole dish, layer 1/2 chicken pieces, then all of the cooked broccoli, then layer the rest of the chicken pieces.
- Mix soup, mayonnaise, broccoli juice and lemon juice in a small bowl.
- Pour soup mix over chicken & broccoli and poke through to make sure it seeps throughout the casserole.
- Mix stuffing in melted oleo and cover top of casserole with it.
- Bake COVERED at 350 degrees for 45 minutes.
- Uncover and bake 15 minutes longer to brown the top.
