STRAWBERRY SPARKLE CAKE

15 egg whites
1 teaspoon cream of tarter
1 1/2 cups plus 2 tablespoons superfine sugar
1 cup cake flour
1/4 teaspoon salt
1 teaspoon vanilla extract
One 3-ounce package strawberry gelatin
2 1/2 cups boiling water
1 pound package frozen strawberries
1 1/2 cups heavy cream
1/4 cup powdered sugar
Whole strawberries, for decorating

Steps:

  • For the cake: Preheat the oven to 350 degrees F. Beat the egg whites until frothy. Add the cream of tartar and beat until stiff. Sift the superfine sugar three times and add slowly to the egg whites.
  • Sift the cake flour and salt five times, and then fold slowly into the egg whites. Sprinkle in the vanilla and fold.
  • Bake for 35 to 45 minutes in an unbuttered angel food cake pan.
  • Set aside to cool completely, inverted on a bottle or jar that fits the cake pan.
  • For the filling: Dissolve the gelatin in boiling water and add the strawberries, stirring to break up and mix the berries.
  • For the icing: Whip the cream with the powdered sugar until thick.
  • To assemble: Place the cake, wide-side down, on a serving plate. Cut a 1-inch layer from the top and set it aside. Cut around the cake 1 inch from the outer edge to 1 inch from the bottom. Cut around the cake 1 inch from the inner edge to 1 inch from the bottom.
  • Gently remove the section of cake between the cuts and pour in the strawberry mixture.
  • Place the cake layer back on top and spread the icing all over the top and sides of the cake. Decorate with whole strawberries.
  • Refrigerate for 1 hour before serving.

  • Heat oven to 350 degrees F.
  • Prepare cake batter, in 2-1/2-qt. ovenproof bowl, as directed on package; scrape side of bowl. Beat cream cheese, egg and granulated sugar until well blended; spoon into center of batter in bowl.
  • Bake 1 hour 5 min. or until toothpick inserted in center comes out clean. Cool cake in bowl 10 min. Loosen cake from bowl with knife; invert onto wire rack. Remove bowl. Cool cake completely.
  • Meanwhile, beat dry pudding mix, powdered sugar and milk in medium bowl with whisk 2 min. Stir in COOL WHIP. Refrigerate until ready to use.
  • Place cake on plate; frost with pudding mixture. Cover with coconut. Keep refrigerated.

2 cups sugar
4 large eggs, separated
1 teaspoon vanilla extract
1/2 teaspoon almond extract
2-1/2 cups all-purpose flour

1 cup whole milk
1 cup sweetened shredded coconut
1-1/2 teaspoons grated orange zest
ICING:
2 cups sugar
3 large egg whites
5 tablespoons melted snow (or water)
2 teaspoons light corn syrup
1 teaspoon vanilla extract

Steps:

  • In a bowl, cream butter and sugar until light and fluffy. Add egg yolks and extracts; beat well. Combine flour, baking powder and 1/2 teaspoon salt. Add to creamed mixture alternately with milk. Add coconut and orange zest. In a small bowl, beat egg whites with remaining salt until stiff peaks form; gently fold into batter. Pour into three greased 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean (if wood burning stove is used, start peeking after 25 minutes). Cool in pans for 10 minutes; remove to wire racks to cool completely. , For icing, combine sugar, egg whites, water and corn syrup in a heavy saucepan or double boiler. With a portable mixer, beat on low for 1 minute. Continue beating on low speed over low heat until frosting reaches 160°, about 8-10 minutes. Pour into a bowl; add vanilla. Beat on high until stiff peaks form, about 7 minutes. Place one cake layer on a serving plate. Spread with frosting and sprinkle with coconut. Repeat. Top with last layer. 6 cups frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved
2 tablespoons lemon juice
1 cup white sugar
1 (10 ounce) package flaked coconut
2 (.25 ounce) packages unflavored gelatin
4 tablespoons water
1 cup boiling water

Steps:

  • Line a 4 quart round mixing bowl with parchment paper.
  • Break cake up into small bite-sized pieces.
  • Drain the crushed pineapple, reserve the syrup. You should have 1 cup of syrup if not add enough water to make 1 cup.
  • Dissolve the gelatin in the 4 tablespoons of cold water. Add the boiling water, pineapple syrup, sugar and lemon juice. Mix well and place in the refrigerator until mixture just starts to thicken.
  • Add the crushed pineapple to the gelatin mix and then fold in 4 cups of the whipped topping.
  • Place a layer of cake pieces, then a layer of the pineapple mixture in the prepared bowl. Continue until all the cake and pineapple mixture is used up. Refrigerate for at least 12 hours or overnight.
  • Turn the chilled cake out onto a serving platter and frost it with the remaining whipped topping and sprinkle with the coconut.

1 green Fruit Roll-Up, unrolled

6 black licorice bites

Steps:

  • Prepare cake mixes according to package directions. Divide batter among two greased and floured 9-in. round baking pans, one 9-in. square baking pan and 12 cupcakes. Bake at 350° for 20-25 minutes and cupcakes for 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. , Place one round cake off center and 1 in. from the bottom of a 25x16-in. covered board. 400g white sugar cube
100g preserving sugar
3 tbsp edible pearly balls
1 egg white , lightly whisked
edible silver glitter
1 20cm-wide Christmas cake (see 'goes well with')
ribbons
shop-bought decorations (optional)

Steps:

  • Once the cake has been removed from the oven, increase the heat to 200C/180C fan/gas 6. Leave the cake in its tin. Put the sugar cubes in a large bowl and crush with the end of a rolling pin to a sugary rubble. Mix in the preserving sugar, pearly balls and egg white - it should have the texture of wet sand. Tip the mixture on top of the cake and level the surface. Bake the cake for 5 mins to set the sugary crust, then remove and leave to cool.
  • Once completely cooled, remove from the tin and peel off the baking parchment. Sprinkle the top with edible glitter, tie ribbons around the side and decorate with your favourite figurines, if you like.

1 cup buttermilk
2 recipes Swiss Meringue Buttercream with Variations, tinted to desired shade with gel-paste food coloring
Edible glitter dust
Confectioners' sugar

Steps:

  • Preheat oven to 325 degrees. Butter six 4-by-2-inch round cake pans, line with parchment, and butter parchment; dust with flour, tapping out excess. Whisk together flour, baking powder, and salt in a medium bowl.
  • With an electric mixer on medium speed, beat butter and granulated sugar until pale and fluffy, 3 to 5 minutes. Add eggs, 1 at a time, beating well after each addition. Mix in zest and vanilla. Add flour in 3 batches, alternating with 2 batches of buttermilk; mix until just combined.
  • Divide batter among prepared pans. Bake until golden brown and a cake tester comes out clean, about 30 minutes. Transfer pans to wire racks to cool completely.
  • With a serrated knife, trim tops of cakes to level; split horizontally to make a total of 12 layers.
  • Spread 1/2 cup buttercream on each side of 6 bottom layers, and top with remaining layers. Spread a thin layer of buttercream over each cake to form a crumb coat; refrigerate until firm, about 30 minutes. Spread a second coat of buttercream over each cake; smooth with an offset spatula. Refrigerate 30 minutes (or up to 2 days).
  • Set cakes on a wire rack set over a piece of parchment. Stir together edible glitter dust with confectioners' sugar to achieve desired color; the more sugar used, the lighter the hue.
  • Cut strips of acetate to preferred width (ours are 1/2-inch wide) and rest them on top of the cakes to create a design. Parallel stripes are the easiest. You can also crisscross stripes, or cover half the cake to create a half-moon. Sift glitter dust over each cake. Carefully lift pieces; reuse to decorate remaining cakes.

  • In a large bowl, cream shortening and sugar until light and fluffy. In another bowl, combine the egg whites, milk and vanilla. Combine the flour, baking powder and salt; add to the creamed mixture alternately with egg white mixture, beating well after each addition., Pour 2 cups batter into each of four greased and floured 6-in. round baking pans. Pour 3 cups batter into each of four greased and floured 9-in. round baking pans. For 6-in. pans, bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. For 9-in. pans, bake at 350° for 27-33 minutes or until a toothpick inserted in the center comes out clean. (Smaller cake pans have a deeper fill and need to bake longer.)
