3 1/2-inch-thick slices whole-grain bread, crusts removed (each slice of bread should be about 3 inches wide and 5 inches long)
2 tablespoons mascarpone cheese (at room temperature)
3 thinly sliced pieces prosciutto
1 4-ounce ball fresh mozzarella cheese, drained, patted dry with paper towels, and cut into 6 sticks, each about 1 1/2 inches long and 1/2 inch thick
6 baby pickles (ends trimmed)
1 3-inch piece of carrot, peeled and cut into 1/4- inch-thick sticks
3 1/2-inch-thick slices country white bread, crusts removed (each slice of bread should be about 3 inches wide and 5 inches long)
2 tablespoons mascarpone cheese (at room temperature)
3 deli-style slices roast turkey
1 2-ounce piece white cheddar cheese cut into sticks, each about 1 1/2 inches long and 1/2 inch thick
3 cooked green beans (ends trimmed)
1 3-inch piece of carrot, peeled and cut into 1/4- inch-thick sticks

Steps:

  • For the prosciutto and mozzarella sushi: Place the bread slices on a work surface. Using a rolling pin, lightly roll the bread until 1/4 inch thick. Spread one side of each slice of bread with 1 teaspoon of mascarpone cheese. Place 1 slice of prosciutto on each slice of bread. Using kitchen shears, trim the prosciutto to fit the bread. Spread each slice of prosciutto with 1 teaspoon mascarpone cheese. Place 2 cheese sticks, end to end, along the narrow edge of the bread. Place 2 pickles, end to end, in front of the cheese. Place a carrot stick between the pickle and the cheese. Starting at the narrow end, roll up the bread like a jelly roll and press lightly to stick. Using a sharp knife, cut each roll into 3 pieces.
  • For the turkey and cheddar sushi: Place the bread slices on a work surface. Using a rolling pin, roll the bread until 1/4 inch thick. Spread one side of each slice of bread with 1 teaspoon of mascarpone cheese. Place 1 slice of turkey on each slice of bread. Using kitchen shears, trim the turkey to fit the bread. 1 tablespoon fresh chopped basil
1 teaspoon fresh minced chives
1 tablespoon fresh chopped parsley
1 tablespoon lemon juice
Salt and freshly ground black pepper
6 taco-sized flour tortillas
1 pound thinly shaved turkey
3 carrots, julienned
1 cucumber, julienned

Steps:

  • Mix the cream cheese, basil, chives, parsley, lemon juice, and sprinkle with salt and pepper together in a bowl. Lay out the tortillas and spread with the herb cream cheese mixture. Next, layer on the turkey, carrots and cucumber onto each tortilla. Like making sushi, roll the tortillas up tightly, then wrap in plastic wrap and refrigerate, about 1 hour. When ready to serve, unwrap the sushi rolls and slice into quarters.

My Mom discovered this sausage roll recipe years ago and it has been passed around many, many times. A sausage mixture is baked into a puff pastry roll and served as little appetizer bites.

1 pound ground pork sausage
1 onion, finely chopped
2 stalks celery, finely chopped
1 tablespoon chopped fresh parsley
ground black pepper to taste
½ (17.5 ounce) package frozen puff pastry, thawed

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • In a medium bowl, mix together ground pork sausage, onion, celery, parsley and pepper.
  • Roll one pastry sheet into an 8x12 inch rectangle. Spread with 1/2 the sausage mixture. Beginning with one of the shorter sides, roll pastry. Moisten with water. Seal the edges with a moist fork. Slice the roll into approximately 1 inch pieces. Repeat with second pastry sheet and remaining sausage mixture.
  • Flatten the roll pieces onto a large baking sheet. Bake approximately 20 minutes, flipping after 10 minutes, until sausage is evenly browned and pastry is golden brown. Drain on paper towels and serve warm.
