Very nice with butter or cheese. Biscuit-like (crunchy) and sweet. Also called knackebrod.

2 ¾ cups all-purpose flour
¼ cup white sugar
½ teaspoon baking soda
salt
½ cup butter
1 cup buttermilk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Sift together the flour, sugar, baking soda, and salt into a large bowl. Rub in the shortening until the mixture appears sandy. Stir in the buttermilk until the dough holds together. Roll out on a lightly floured surface to 1/8-inch thick. Cut into 4-inch squares, then cut each square diagonally into triangles, and prick with a fork.
  • Bake the triangles in preheated oven on ungreased cookie sheets until dry and lightly browned, about 10 minutes.

A Swedish type of Christmas candy you can do at home, but nothing says that you can't make these in the summer. Tastes like toffee.

¾ cup light molasses
¾ cup heavy whipping cream
¾ cup white sugar
2 teaspoons unsweetened cocoa powder
¼ cup chopped almonds, or to taste
1 teaspoon vanilla extract

Steps:

  • Mix molasses, cream, sugar, and cocoa powder together in a pot; bring to a boil. Heat to 251 degrees F (122degrees C), or until a small amount of syrup dropped into cold water forms a firm but pliable ball, 30 to 40 minutes. The finished candy will be same firmness of the ball in water. Remove pot from heat and stir in almonds and vanilla extract.
  • Spoon candy into small paper candy cups. Cool to room temperature and store in an airtight container at room temperature.

1 cup dark corn syrup
1/4 cup butter
1 cup cream
1 cup chopped blanched almonds or 1 cup mixed nuts

Steps:

  • Combine sugar, syrup, butter and cream in a heavy saucepan.
  • Cook over low heat, stirring occasionally, until mixture forms a firm ball, about 250 degrees on a candy thermometer.
  • Add nuts and pour into small fluted waxed paper candy cups or onto well-buttered cookie sheet. If poured on a cookie sheet, allow to set before cutting into small squares with oiled scissors.
  • Wrap in waxed paper.

1 egg
1 1/2 teaspoons vanilla
1 1/3 cups flour
1 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup walnuts, chopped fine
1 1/2 tablespoons cinnamon
2 tablespoons sugar

Steps:

  • Cream butter and gradually add 1 cup sugar.
  • Beat in vanilla and eggs.
  • Sift the flour with baking powder and 1 teaspoon cinnamon.
  • Add to egg mixture and blend well.
  • Chill for 30 minutes.
  • Preheat oven to 350 degrees.
  • Combine walnuts, cinnamon and sugar.
  • Roll chilled dough into sugar.
  • Place cookies on greased and floured baking sheets about 3 inches apart. Bake about 12 minutes. Cool on racks.

Arla has great recepies. My recepie is: Mix equal parts (1 dl of each) Sugar. Syrup. Cream. Boil in the microwave oven until desired thickness. This takes 8 minutes in mine, and you need a large tray, or it will spill and make a huge mess.
