Swedish Kringles image

This is a flaky bar-type treat that my mom made many times when I was a kid. It is a tasty almond-flavored treat that is nice at Christmastime!

Categories     Bread     Yeast Bread Recipes

Time 1h15m

Yield 8

Number Of Ingredients 12

1 cup all-purpose flour
½ cup butter
1 tablespoon water, or as needed
1 cup water
½ cup butter
1 cup all-purpose flour
3 eggs
1 teaspoon almond extract
1 cup confectioners' sugar
1 tablespoon heavy cream
1 tablespoon butter, softened
1 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • To make the dough cut 1/2 cup butter into 1 cup flour using a knife or pastry blender. Add water as needed and mix until crumbly, leaving pea-sized chunks. On a floured surface roll the dough out to 3 or 4 inches in width. Place on a rectangular cookie sheet.
  • In a small saucepan over high heat, bring 1 cup water and 1/2 cup butter to a boil. Remove from heat and stir in flour; mix until smooth. Beat in eggs one at a time, mixing well after each. Stir in 1 teaspoon almond extract. Spread filling over dough.
  • Bake in preheated oven for 55 to 60 minutes. The pastry will fall a little as it cools.
  • Meanwhile, combine confectioners' sugar, cream, 1 tablespoon butter and 1 teaspoon almond extract. Spread icing over pastry as soon as it's removed from the oven.

SWEDISH KNäCKEBRöD

Swedish Knäckebröd image

Awesome Swedish flatbread. Goes well with soups and cheeses. Comes out similar to Rye Crisp. You can try this with wheat flour instead of rye. I would not recommend plain white flour but any 'grain' flour tried might be interesting. World Tour 2005

SWEDISH CRISPBREAD (KNäCKEBRöD)

Swedish Crispbread (Knäckebröd) image

This is the traditional Swedish crispbread often served at Midsummer or Christmas together with herring and cheese (SOS - Sill, Ost, Smor). I prefer fennel as a spice, but you could try caraway or aniseed, or a mixture as well. Make sure the oven is as hot as possible. The hole in the middle is traditional, and necessary for the placing on the stick. If you don't have a Swedish roller, prick the breads everywhere with a fork before baking.

Provided by Andreacute Grisell

Categories     Breads

Time 1h40m

Yield 16 breads

Number Of Ingredients 6

1 1/2 teaspoons yeast (or 1 package dry yeast)
2 cups lukewarm water
1/2 tablespoon salt
1 tablespoon fennel, crushed or 1 tablespoon anise seed
3 1/2 cups coarse rye flour
1 1/2-2 cups wheat flour

Steps:

  • Dissolve yeast in the water (if using dry yeast, follow instructions).
  • Add salt and fennel/aniseed.
  • Add rye and enough wheat flour to make a quite firm dough.
  • Knead vigorously for at least five minutes.
  • Divide into 16 parts and roll to balls.
  • Let rise, covered, for 40 minutes.
  • Heat the oven to maximum heat.
  • Roll out one piece at a time to a thin circle, 8-10 inches in diameter.
  • Use plenty of rye flour when rolling.
  • Make a one-inch hole in the middle.
  • Prick the surface all over with a fork (in Sweden we have special rolling pins for this purpose).
  • Bake one at a time on a dry tray in the oven for about 2-4 minutes.
  • They should get brown, but not too burnt.
  • Slip them on a stick (e. g. a broom) through the hole in the middle to cool.
  • Store in a dry place and eat with butter, cheese and/or pickled herring, maybe together with beer and aquavit.

MAMYE'S SWEDISH BREAD RECIPE BY TASTY

Mamye's Swedish Bread Recipe by Tasty image

Matt's mom, Laura, shows him how to make a holiday recipe passed down from their late family friend, Mamye: Swedish Bread. This sweet, cardamom-flavored bread is golden brown and crunchy on the outside and fluffy on the inside, making it the perfect sweet treat for the holiday season.

Provided by Matt Ciampa

Categories     Bakery Goods

Time 3h25m

Yield 2 loaves

Number Of Ingredients 11

1 cup whole milk
½ teaspoon kosher salt
½ stick unsalted butter, plus more for greasing
¾ cup sugar, divided, plus 1 teaspoon
¼ teaspoon ground cardamom
1 cup warm water
1 package active dry yeast, 1/4 ounce (7 grams)
1 large egg, lightly beaten
4 cups all purpose flour, sifted
water, for brushing
coarse sugar, for decorating

Steps:

  • In a medium saucepan, combine the milk, salt, butter, ¾ cup sugar, and the cardamom. Warm over medium heat, stirring until the butter melts and the sugar dissolves, about 5 minutes. Remove the pot from the heat and let cool slightly, about 5 to 7 minutes. Milk should be warm to the touch but not too hot.
  • In a liquid measuring cup, dissolve the yeast and remaining teaspoon of sugar in the warm water. Let sit until the mixture is foamy, about 3 to 5 minutes.
  • Once the milk mixture has cooled, pour into a large bowl and add the yeast mixture and the egg. Stir until well combined.
  • Add the flour, 1 cup (125 grams) at a time, stirring or kneading with your hands between each addition, until no longer sticky. Turn the dough out onto a lightly floured surface and knead for 15 minutes, or until it springs back when pressed. Transfer to a large bowl greased with butter, cover with plastic wrap, and let rise in a warm spot until doubled in size, about 1 hour.
  • Line a baking sheet with parchment paper.
  • Turn the dough out onto a clean surface and divide in half. Cut each half into 3 equal portions. Stretch and roll each piece into a 14-inch rope. Place 3 pieces parallel to each other and pinch together the ends on one side, tucking underneath to conceal. Braid the strands together, pinch the ends together at the other end and tuck underneath. Place the loaf on the prepared baking sheet and cover with a damp towel. Let rest until doubled in size, about 1 hour. Repeat with remaining dough.
  • Preheat the oven to 350°F (180°C).
  • Uncover the loaves and lightly brush with water. Sprinkle with coarse sugar, brushing the excess from the baking sheet.
  • Bake for 25-30 minutes, rotating halfway through, until the top is golden brown and the loaf sounds hollow when tapped on the bottom. Let cool before slicing.
  • Enjoy!
