Cocktail Meatballs with a Sweet and Spicy Gochujang-Honey Glaze

1/2 lb ground pork
1/2 lb ground beef
1 tablespoon gochujang (spicy Korean chili paste)
2 tablespoons soy sauce
1 tablespoon ginger (minced or grated)
2 garlic cloves (minced or grated)
1 scallion (minced)
1 teaspoon sesame oil
1 tablespoon honey
1/2 cup panko breadcrumbs
1 egg (lightly beaten)
1/2 teaspoon kosher salt
1/4 teaspoon pepper
2-4 tablespoons gochujang (start with 2 and taste)
1/4 cup honey
2 tablespoons ketchup
2 tablespoons rice vinegar (unseasoned)
1 tablespoon toasted sesame oil
1 tablespoon soy sauce
Scallion (thinly sliced)
Toasted sesame seeds

Steps:

  • Preheat oven to 375°F / 190ºC
  • Place all the meatball ingredients into a large mixing bowl and, using your hands, mix together until completely blended (but don't over-mix).
  • With wet hands (to keep the meatballs from sticking), form 1 - 1 1/2 tablespoon sized meatballs (Using a small portion scoop makes this easier but you could do it by eye). Place balls about an inch apart onto a parchment-lined baking sheet. Bake meatballs for 15 to 20 minutes or until just cooked through.
  • Meanwhile combine all glaze ingredients in small pot. Bring to a simmer over medium heat and cook until mixture is slightly thickened, about 5-7 minutes. Set aside and let cool.
  • Brush glaze onto meatballs and top with green onions and sesame seeds. Serve with extra gochujang glaze on the side for dipping.

2 tablespoons minced garlic (from about 6 cloves)
2 tablespoons minced ginger (from a 2-inch piece)
5 tablespoons gochujang paste (available at Asian markets and walmart.com)
1 pound ground chuck (80 percent lean)
1 pound ground pork
1 large egg
Kosher salt
1/4 cup safflower oil
3/4 cup ketchup
2 tablespoons rice vinegar
2 teaspoons toasted sesame oil
1 tablespoon packed light-brown sugar
Thinly sliced scallions and toasted sesame seeds, for serving

Steps:

  • In a large bowl, use your hands to gently combine garlic, ginger, 3 tablespoons gochujang, beef, pork, egg, and 1 tablespoon salt just until evenly combined (do not overwork, or meatballs will be dense and tough). Scoop 1 tablespoon of mixture into your palm; gently roll into a ball and transfer to a baking sheet. Repeat with remaining mixture. Meatballs can be formed, loosely covered, and refrigerated on sheet up to 1 day.
  • Heat a large skillet over medium-high. Swirl in 2 tablespoons safflower oil. Add halfof meatballs in a single layer and cook, turning a few times, until browned in places and a crust forms, 5 to 7 minutes. Transfer to a plate. Wipe out skillet with a paper towel and brown remaining meatballs in remaining safflower oil.
  • Wipe skillet clean. Combine ketchup, remaining 2 tablespoons gochujang, vinegar, sesame oil, 1/2 cup water, and brown sugar in skillet; bring to a simmer over medium. Carefully add meatballs. Simmer, stirring occasionally, until sauce thickens slightly and meatballs are just cooked through and evenly coated, 6 to 8 minutes. Transfer to a shallow bowl, sprinkle with scallions and sesame seeds, and serve warm, with toothpicks.

1 pound lean ground turkey
3 tablespoons low sodium soy sauce
1 tablespoon minced ginger
1 teaspoon sesame oil
2 to 3 dashes fish sauce
2 garlic cloves, minced
1 green onion, thinly sliced
1 serrano chile, seeded and minced
2 tablespoons rice flour (all purpose works fine)
1 egg white, lightly beaten
salt and pepper to taste
¼ cup gochujang (spicy Korean chile paste)
2 tablespoons light corn syrup (OR 2 1/2 tablespoons honey)
2 teaspoons granulated sugar
2 tablespoons rice wine vinegar
1 tablespoon sesame oil
½ tablespoon low sodium soy sauce
green onion, thinly sliced
toasted sesame seeds

Steps:

  • Preheat oven to 375°F.
  • Place all turkey meatball ingredients into a large mixing bowl and mix together until completely blended. (make sure not to over mix)
  • Form 1 - 1 ½ tablespoon sized cocktail meatballs with the turkey mixture and place onto a baking sheet, lined with parchment, about 1 inch apart.
  • Bake meatballs for 15 to 20 minutes or until just cooked through.
  • For the gochujang glaze: Place all ingredients into a small mixing bowl and whisk together until fully combined.
  • Brush glaze onto meatballs and top with green onions and sesame seeds. Serve with extra gochujang glaze on the side for dipping.

1 pound ground beef
1/2 pound ground pork
1/2 cup panko breadcrumbs
1 large egg, lightly beaten
3 cloves garlic, minced
1 large yellow onion, finely diced
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
1/2 teaspoon freshly cracked black pepper
Two 10-ounce jars red pepper jelly or hot pepper jelly
1/2 cup orange juice
2 tablespoons soy sauce

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix the meats, panko, egg, garlic, onion, paprika, salt and pepper in a large bowl with your hands until completely combined. Scoop mixture into heaping tablespoons, then roll into neat balls. Transfer to a 9-by-13-inch baking dish. Bake until cooked through, 25 to 30 minutes.
  • Add pepper jelly, orange juice and soy sauce to a small pan. Cook over medium-high heat until it simmers, then remove from the heat. Pour jelly sauce over the meatballs and toss to coat.

KOREAN BARBECUE-STYLE MEATBALLS



Korean Barbecue-Style Meatballs image

These meatballs, inspired by traditional Korean barbecue, bring the savory-sweet flavors of caramelized meat without the need for a grill. As the meatballs bake, the soy sauce marries the garlic and scallions to create a glaze. This meatball mixture can be made ahead and left to marinate in the fridge for 3 hours or even overnight. Use ground beef that is 85 percent lean meat, 15 percent fat, or 80 percent lean and 20 percent fat for juicier meatballs. The Ritz crackers here make for a more tender meatball, but feel free to substitute plain dry bread crumbs. The meatballs are tasty on their own, but for a simple dipping sauce, combine 2 tablespoons soy sauce and 1 tablespoon distilled white vinegar. Serve over steamed rice with kimchi, or as a sandwich with mayonnaise or marinara sauce.

Everybody loves meatballs at parties, and this recipe won't let you down! Seasoned beef meatballs are simmered in a sweet and spicy sauce. You can also use ground venison instead of the ground beef.

½ cup dry bread crumbs
¼ cup milk
⅛ teaspoon ground black pepper
1 tablespoon snipped fresh parsley
⅓ cup minced onion
1 teaspoon salt
1 egg
½ teaspoon Worcestershire sauce
¼ cup shortening
1 (12 ounce) bottle chile sauce
1 ¼ cups grape jelly

Steps:

  • In a large bowl, combine the ground beef, dry bread crumbs and milk. Blend in ground pepper, parsley, onion, salt, egg and Worcestershire sauce. Mix thoroughly.
  • Shape the beef mixture into 1 inch meatballs. In a large skillet, melt the shortening over medium heat and brown the meatballs.
  • Meanwhile, in a medium saucepan, mix the chile sauce and grape jelly over medium heat, stirring occasionally, until jelly is melted.
  • Pour the sauce over the browning meatballs and simmer for 30 minutes, or until meatballs are thoroughly cooked.

Either hand roll meatballs using your favorite meatball recipe or purchase frozen prepared meatballs. If you use frozen, allow for more simmering time.
