1 pork tenderloin (1 pound), cut into 1-in. cubes
1/4 teaspoon salt
1/4 teaspoon pepper
2 tablespoons olive oil
1 medium onion, chopped
1 medium green pepper, chopped
3 garlic cloves, minced
1 cup chicken stock
1 can (20 ounces) pineapple tidbits, drained
1 cup honey barbecue sauce
1/2 cup packed brown sugar
2 finely chopped chipotle peppers plus 2 teaspoons adobo sauce
2 tablespoons reduced-sodium soy sauce
Hot cooked rice

Steps:

  • Sprinkle pork with salt and pepper. In a large skillet, heat oil over medium-high heat. Add pork; cook until browned, 4-6 minutes. Remove., In same skillet, cook onion and pepper until softened, 2-4 minutes. Add garlic; cook 1 minute. Return pork to pan; stir in chicken stock. Cook, covered, until pork is tender, about 5 minutes., Stir in next 5 ingredients; simmer, uncovered, until sauce is thickened, about 5 minutes. Serve with rice.

1 teaspoon minced fresh ginger root
1 teaspoon minced garlic
1 teaspoon olive oil
1 pound pork tenderloin, cut into 3/4-inch slices
⅓ cup salsa
1 tablespoon seedless raspberry preserves
2 tablespoons chopped fresh cilantro

Steps:

  • Mix soy sauce, ginger, and garlic in a small bowl.
  • Heat oil in a large nonstick skillet over medium-high heat. Arrange pork slices in a single layer in the skillet. Spoon soy sauce mixture over the pork. Cook pork until completely browned and just slightly pink in the center, about 3 minutes per side. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C). Remove pork to a plate, retaining juices in the skillet.
  • Stir salsa and raspberry preserves into the drippings in the skillet; cook and stir until slightly thickened, about 30 seconds. Spoon sauce over pork slices and top with cilantro.

1 (1 1/2 pound) pork tenderloin
1 tablespoon olive oil for brushing
ground black pepper to taste
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 tablespoon minced onion
1 clove garlic, minced
1 teaspoon crushed red pepper flakes
1 teaspoon prepared horseradish

Steps:

  • Preheat an outdoor grill for medium-high heat. Cut tenderloin into 9 slices and brush with olive oil. Season to taste with freshly ground black pepper.
  • Place the meat onto preheated grill. Grill until no longer pink in the center, 3 to 4 minutes per side. When finished, place pork on a plate, and allow to rest for 5 minutes.
  • While pork is cooking, stir together sugar, Worcestershire sauce, vinegar, Dijon mustard, onion, garlic, red pepper flakes, and horseradish in a small saucepan. Bring to a simmer over medium heat, and stir until smooth. Pour sauce over sliced tenderloin to serve.

1 (5 to 7-pound) pork shoulder
1/2 cup light brown sugar
4 cloves garlic, minced
1 tablespoon ground cumin
1 tablespoon salt
1 1/2 teaspoons cayenne pepper
2 onions, coarsely chopped
2 cups low-sodium broth or water
1 cup cola

Steps:

  • Preheat the oven to 350 degrees F. Rinse and dry the pork shoulder.
  • Mix together the brown sugar, garlic, cumin, salt, and cayenne. Rub the mixture generously and evenly over the pork shoulder.
  • In a large roasting pan or Dutch oven, add the chopped onions, broth, and cola. Place the seasoned pork in the Dutch oven and roast for 4 to 6 hours, checking the pork every hour for tenderness and liquid level.
  • When the pork is tender enough that it is falling apart, shred it with a fork. Reserve the juices and pour them over the shredded pork before serving.

1 teaspoon salt
1 teaspoon freshly ground pepper
1 20 oz. can pineapple chunks in juice, drained, juice reserved, pineapple set aside
1/2 cup brown sugar, packed
2 tablespoons soy sauce
3 tablespoons tomato paste
1 tablespoon cornstarch
2 tablespoons fresh parsley, minced

Steps:

  • 1. Season tenderloins with salt and pepper.
  • 2. Heat oil in large skillet over medium-high heat and brown tenderloins on all sides. Place in crock.
  • 3. In small bowl, whisk together pineapple juice, brown sugar, soy sauce, tomato paste and cornstarch. Pour over pork tenderloin. 4. Cover and cook on HIGH for 4 hours or LOW for 6 hours or until internal temperature reaches at least 160 degrees Fahrenheit for medium doneness.
  • 5. Remove cover and stir in pineapple chunks.
  • 6. Cover and cook on HIGH for 15-30 minutes until pineapple is heated through.
  • 7. Slice pork and serve with sauce and pineapple.
  • 8. Garnish with minced parsley.
  • 9. Serve over hot, cooked rice if desired.

1 tsp extra-virgin olive oil
2 tblsps honey
1 tbsp minced garlic
1 1/2 tsp hot-pepper sauce

Steps:

  • Preheat oven to 350. Lightly moist a small roasting pan with olive oil spray. Set aside. In a small bowl combine, cumin, cinnamon, salt, black pepper, allspice, garlic powder and chipotle pepper. Rub the pork evenly with olive oil. Then rub evenly with the spice mixture until coated. Cover loosely with plastic wrap and refrigerate 15 min. Heat a non stick skillet over med-high heat and spray with olive oil. Place pork in pan and cook one min per side or until browned on all sides. Transfer to prepared pan. Coat the honey mixture on top. Roast tenderloin in oven 16-18 min or until a thermometer reads 160 degrees. Remove from oven. Cover with tin foil loosely. Let stand 10 min. Transfer to cutting board. This is my absolute favorite marinade for pork tenderloin. It is simple, sweet, warm flavors and a little spice with some red pepper. Just marinade in a large baggie anywhere from 4-8 hours and grill. You can use an indoor grill, but I prefer outdoor.

2 teaspoons canola oil
1/2 cup green pepper strips
1/2 cup sweet red pepper strips

  • Drain pineapple, reserving juice in a 1-cup measuring cup; set pineapple aside. Add enough water to pineapple juice to measure 1/2 cup. In a small bowl; combine the cornstarch, soy sauce, brown sugar, pepper flakes and reserved juice mixture until smooth. Set aside., In a nonstick skillet or wok, stir-fry pork in hot oil until meat is no longer pink. Remove and keep warm. 1 large onion, sliced thin
1/4 cup soy sauce
12 -16 ounces apricot preserves

Steps:

  • Wrap tenderloin in bacon.

  • Lay tenderloins on top of onions.
  • Mix soy sauce and apricot preserves and pour on top of wrapped tenderloins.
