Balinese Pork Satay (Sate Babi) With Sweet Soy Glaze and Peanut Sauce Recipe image

This recipe is inspired by the delicious pork satay I had at a night market on the north shore of Bali: little chunks of marinated meat threaded onto bamboo skewers, grilled over coals until charred, then served with a sweet-and-spicy peanut-based dipping sauce.

For the Spice Paste:
One (1-inch) knob fresh turmeric, peeled (about 10g), or 1 teaspoon (4g) ground turmeric
2 stalks lemongrass, bottom 4 inches only, outer layers and root removed, thinly sliced (about 80g)
8 medium cloves garlic, sliced (about 60g)
2 small shallots, sliced (about 75g)
3 whole dried pasilla or guajillo chilies, stems and seeds removed, roughly chopped (about 40g)
2 tablespoons (about 30g) palm sugar or brown sugar
2 teaspoons (about 6g) whole coriander seed
1 tablespoon (about 9g) whole white peppercorns
Kosher salt
2 pounds (1kg) boneless pork shoulder, cut into 3/4-inch cubes
For the Glaze:
1 cup kecap manis (8 ounces; 240ml); see note
1/4 cup sugar (about 2 ounces; 50g), plus more if needed
One (2-inch) knob ginger, roughly chopped
4 medium cloves garlic, roughly chopped
For the Dipping Sauce:
10 ounces roasted peanuts (285g; about 1 1/2 cups)
1/4 cup (60ml) vegetable or canola oil, divided
1 ounce (30g) tamarind pulp, soaked and strained (see note), or 2 teaspoons (10ml) tamarind concentrate
1 tablespoon (15ml) kecap manis or fish sauce
Water, as necessary
Sugar, to taste

Steps:

  • To Cook: Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange coals on one side of charcoal grate. Set cooking grate in place, cover grill, and allow to preheat for 5 minutes. Alternatively, set half the burners on a gas grill to the highest heat setting, cover, and preheat for 10 minutes. Clean and oil the grilling grate.
  • Brush pork with another layer of glaze just before serving and serve with peanut sauce on the side or spooned on top.

Sate Babi (Or Ayam) image

This is what we call a sweet sate and the chili paste that I add does not really belong in this recipe. Can be made with chicken breasts and then it is called Sate Ayam. Here it usually served with a ketjap peanut sauce and prawn crackers, it can be an appetizer, snack or a side dish when part of an Indonesian rijsttafel. If you cannot get the sweet soy sauce, use regular and add some brown sugar. Marinating time is not included.

1 1/2 lbs pork tenderloin (or chicken breasts)
1 small onion, grated
1 -2 garlic clove, crushed
1/2 cup ketjap manis, sweet soy
salt
white pepper
2 teaspoons ground coriander
2 teaspoons ground cumin
1/2 tablespoon lemon juice
1 -2 teaspoon sambal oelek (optional) or 1 -2 teaspoon chili paste (optional)

Steps:

  • Cut the pork up, into cubes.
  • Make a marinade from the remaining ingredients.
  • Add the meat and leave to marinate for 30 minutes minimum.
  • Skewer the meat onto metal or bamboo/wooden skewers, if you use the wooden soak for half an hour in water, keep the marinade.
  • Roast them under a grill, in a grill pan or best of all on the barbeque until done, usually about ten minutes or shorter.
  • Baste with the remaining marinade during cooking.

Number Of Ingredients 8

1 pound pork loin, boneless, or shoulder, with some fat, cut into 1/2-inch dice
2/3 cup soy sauce, sweet (ketjap manis) or 1/3 cup each regular soy sauce and molasses
2 cloves garlic, minced
2 shallots, thinly sliced
1 cucumber, peeled and seeded, then cut into 1/2-inch dice
1 tablespoon galangal, , ground, dried
4 limes, kaffir or key limes, or 2 Persian limes, cut into wedges
Mixed Vegetable Achar (see recipe) optional

Steps:

  • 1. Thread the pork onto the skewers, 5 to 6 pieces per skewer. Combine 1/3 cup of the soy sauce, the garlic, and shallots in a plate and roll the satés around in the mixture. Cover and let marinate, in the refrigerator, for 1 hour, turning the skewers occasionally to ensure even marinating.2. Preheat the grill to high.3. Meanwhile, set out 4 dinner plates. On one side of each plate place a mound of diced cucumbers, a small pool of the remaining soy sauce, a small pile of the galangal powder, and a few lime wedges.4. When ready to cook, oil the grill grate. Arrange the satés on the hot grate and grill, turning with tongs, until the meat is nicely browned and cooked through, about 8 minutes in all.5. To eat, skewer a piece of cucumber on the end of the skewer. Dip the saté first into soy sauce, then into the galangal powder. Squeeze a little lime juice over all, then pop the saté into your mouth. Eat the Shallot Achar (if using) to cleanse the palate between satés.Serves 4 as an appetizer, 2 to 3 as an entrée

6 candlenuts
1 piece fresh turmeric (2 cm long)
1/2 stalk lemongrass
salt
1 pinch sugar

Steps:

  • Heat the oil, fry the spice-paste until fragrant, remove and set aside.
  • Mix the meat with the fried spices until everything is well-coated.
  • Skewer the meat, about 3-4 pieces per skewer.
  • Mix the remaining marinade with the sweet soy sauce and the margarine.
  • Broil the sate, dipping it in the sauce from time to time.
