SWEET HEAT SRIRACHA PECANS
Made with the favorite hot sauce...Sriracha. Can eat out of hand, but trying topping a salad. Adapted from Pecans: A Savor the South Cookbook by Kathleen Purvis

Steps:
- Preheat the oven to 325°. Spread a sheet of aluminum foil on the counter.
- Combine the honey and Sriracha in a small saucepan over medium-low heat until liquefied and well mixed. Remove from heat and add the pecans. Stir with a wooden spoon or rubber spatula until the pecans are lightly coated and all the honey mixture is used.
- Spread on a rimmed baking sheet in a single layer. Bake for 15 minutes. I suggest lining the sheet with parchment paper.
- While the pecans are baking, combine the sugar and salt in a heat-proof bowl. When the pecans are done, scrape them into the bowl and stir until all the sugar mixture is used. Spread on the foil and let cool. Store in an airtight container for up to 5 days.

SWEET AND SPICY PECANS
These pecans have graced our family's Christmas sweet gift platters. I've also sprinkled them over my gourmet salads. They add so much in either case. I can't get enough of them! Lining the pans with parchment paper makes for easier removal of the pecans and easier cleanup!

Steps:
- Stir 1 cup sugar into the hot water in a large bowl until the sugar is completely dissolved. Soak the pecans in the water for 1 hour; drain.
- Preheat an oven to 400 degrees F (200 degrees C). Line two 9x13 inch baking dishes with parchment paper.
- Sift the 2/3 cup sugar, chili powder, and cayenne pepper together in a separate large bowl; add the pecans and toss to coat evenly. Spread the coated pecans in a single layer into the prepared dishes.
- Bake in the preheated oven until the coating on the pecans are bubbly, stirring once, 10 to 15 minutes. Remove the pecans from the pans immediately and spread onto a counter or other flat surface covered with parchment paper to cool.

- Preheat oven to 250 degrees F (120 degrees C). Lightly butter a baking sheet.
- In a bowl, beat the egg white until foamy. Mix in cinnamon, sugar, salt, and water. Mix well. Stir in pecan halves, stirring until well coated. Spread on baking sheet.
- Bake in preheated oven for 1 hour, stirring every 15 minutes.

- Preheat grill to medium-high heat.
- Combine the first 3 ingredients and 1 tablespoon Sriracha in a small bowl.
- Brush hot dogs with remaining 1 tablespoon Sriracha. Grill hot dogs, covered with grill lid, 4 - 6 minutes or until thoroughtly heated.
- Place hot dogs in buns and top with mayonnaise mixture. Sprinkle with chopped pickles and cabbage.

- Place chicken wings in a large bowl. Mix oil, coriander, garlic salt and pepper; add to wings and toss to coat. Refrigerate, covered, 2 hours or overnight., For sauce, in a small saucepan, melt butter. Stir in orange juice, chili sauce, honey and lime juice until blended., Grill wings, covered, over medium heat 15-18 minutes or until juices run clear, turning occasionally; brush with some of the sauce during the last 5 minutes of grilling., Transfer chicken to a large bowl; add remaining sauce and toss to coat.
