CAMOTE DELIGHT RECIPE
Sweet Potato/Camote Delight Recipe. This Pinoy dessert is so easy to prepare. Peel off the skin and mashed the cook camote or sweet potato then add condensed milk, butter and sugar then mixed it and refrigerate.

Steps:
- Boil the Sweet Potato until cook
- Peel the skin then place on a separate bowl.
- Mix the butter, sugar and condensed milk
- Mash sweet potato "camote" with fork until smooth.
- Add butter mixture in mashed Camote and mix well.
- Spoon in paper cups, top with butter and chilled for 30 minutes then serve.

Steps:
- Combine the pineapple, sweet potatoes, and salt; cook over low heat, stirring constantly, for 5 minutes.
- Dissolve cream of tartar and brown sugar in boiling water; mix in potato mixture.
- Cook over low heat until a soft ball is formed when a drop is placed in cold water.
- Remove from heat and beat until smooth and shiny.
- Mix in almonds.
- Drop by the teaspoon onto a buttered surface.
- Chill.

- In a large dutch oven, add the cut sweet potatoes, piloncillo cone, cinnamon stick, clove, and water. Bring to a simmer over medium hight heat. Once simmering, cover and lower heat to medium low. After 40 minutes, stir everything, breaking the the piloncillo if needed. Check the doneness of the potatoes. Cover and cook for another 20-30 minutes, or until the sweet potatoes are tender and the syrup has thickened. If the syrup is on the thin side, simmering for another 5-10 minutes.
- Once done, turn off the heat and let it sit for 10-15 minutes. Transfer the sweet potatoes to a serving dish. Pour the piloncillo syrup over the potatoes. Serve!

- Continue to cook, stirring occasionally, until mixture reaches firm ball stage (244°). Remove from heat; cool to lukewarm (110°). Add sweet potatoes; beat at medium speed of an electric mixer until mixture thickens. Stir in pecans. Pour candy into a well-buttered large serving platter. Cool and cut into 1-inch squares.
