SWEET POTATO NACHOS - VEGAN, PALEO AND GLUTEN-FREE!



Sweet Potato Nachos - Vegan, Paleo and Gluten-Free! image

Craving nachos but want a healthier option? Try these fully loaded sweet potato nachos. Sweet potatoes give you plenty of fiber, good carbs and beta carotene and these delicious toppings will make these nachos a fan favorite!

Number Of Ingredients 13

3 large sweet potatoes
1 tbsp Avocado oil
1 tsp chili powder
1 tsp garlic powder
1 cup cheese or vegan cheese, shredded (optional; leave out if paleo)
1 small tomato diced
1/2 small white onion diced
1 15 oz can black beans drained and rinsed
1/3 cup canned sliced black olives (optional)
8 rings pickled jalapenos diced
1/2 cup salsa verde
1/2 cup guacamole or Avocado Crema (see recipe link in post and in Recipe Notes)
3 tbsp cilantro chopped (optional)

Steps:

  • Preheat your oven to 425 degrees F.
  • Slice the sweet potatoes (skin on) into 1/4 inch slices. You can use a knife but it works best if you use the slicer attachment on your food processor or a mandoline so the slices are all the same thickness. In a large bowl, toss with the sweet potato slices with the avocado oil and spices.
  • Line 3 baking sheets with parchment paper. Place the sweet potato rounds on the baking sheets in a single layer. Bake for 15 minutes and then flip the sweet potatoes over and bake for about 6 more minutes or until they start getting golden and slightly crispy. Be sure to keep an eye on them so they don't burn!
  • Take the sweet potatoes out of the oven. Top with the cheese or vegan cheese if using.
  • Put your sweet potato chips on a large plate or platter. Decorate with toppings and enjoy!

  • Cut the sweet potatoes into 1/4" dials. Then, transfer the dials into a medium-sized bowl and season with smoked paprika, chili powder, cumin, salt, pepper, and a tablespoon or two of olive oil.
  • Then arrange all of the dials onto a parchment-lined baking sheet and transfer them to the preheated oven. Roast the potatoes for 15 minutes and then remove them from the oven and flip each dial onto the other side. Bake for an additional 15 minutes.
  • While the sweet potatoes are in the oven, prepare the toppings. Warm the black beans, adding lime, salt and pepper to taste. Smash Avocado with 1 lime juiced and ~1/2 tsp salt.
