- Pre-heat oven to 450 degrees F.
- Line two 10x15-inch baking sheets with Reynolds Wrap® Aluminum Foil.

- Bake 13-14 minutes until edges are brown. Remove chips with crispy brown edges and continue baking other chips, checking constantly and removing as edges brown.

- Cut the sweet potato into ⅛-inch to ¼-inch (3- to 6-mm) slices. In a medium bowl, toss the sweet potato slices with olive oil until fully coated. Add the seasonings and toss to coat. Arrange the slices on a baking sheet without overlapping the potatoes.
- Bake for 25 - 35 minutes, flipping halfway, until golden brown. Let the slices cool to room temperature.

- Put potatoes in a large bowl, and cover with cold water. Let stand, stirring occasionally, 15 minutes. Drain. Lay between paper towels to dry completely.
- Heat 2 1/2 inches oil in a large, heavy pot until a deep-fry thermometer registers 340 degrees. Working in small batches, fry potatoes, turning occasionally, until crisp and golden, 3 to 4 minutes. (Adjust heat between batches as needed to keep oil at a steady temperature.) Using a slotted spoon, transfer to a baking sheet lined with paper towels to drain. Sprinkle with salt. Serve warm or at room temperature.

These chips are made without any fat. For attractive, circular chips, look for sweet potatoes that are round rather than long. It is best to make very thin slices with a mandoline (see the Guide).

- Heat oven to 200 degrees with two racks. Line two rimmed baking sheets with parchment paper, and set aside. Using a mandoline, slice the potato crosswise, as thin as possible. Arrange the slices on the prepared sheets, touching as little as possible. Sprinkle lightly with salt and pepper.
- Cook for 50 minutes. Slices will be dehydrating and shrinking; turn chips over, and rotate baking sheets if needed for even cooking. Cook until slices are crisped and fluted around the edges and the centers are still orange, not brown, 30 to 40 more minutes. Transfer to cooling racks, and cool chips on baking sheets. (Chips will be soft when removed from oven and will crisp as they cool.) Store in an airtight container, at room temperature, up to 3 days.

- Place potato flat on work surface, holding one end. Using vegetable peeler and starting at center of potato, shave into long, wide ribbons in quick strokes. Turn potato and continue shaving opposite end. Turn potato over and repeat process for each side. Repeat with remaining potatoes.
- Heat oil to 375°F in heavy, wide, 4-inch-deep pot. Shake one handful of potatoes in oil; do not crowd. Fry until crisp and slightly golden, stirring occasionally, 30 to 60 seconds. Remove with slotted spoon; drain on paper towels. Season with salt. Repeat with remaining potatoes in batches. (Can be prepared 6 hours ahead. Cover lightly and store at room temperature.)
