~ SPICY TAMALE CASSEROLE ~
A recipe given to me years ago, that I've doctored up to suit my family. Make as spicy as you prefer. Ours is very spicy as the jalapeno's I use are quite hot. This casserole is pretty simple and if you have a large enough, oven proof skillet, you can bake it in that, to save extra dirtied dishes. Delicious! Enjoy!

- 1. Preheat oven to 350 degree F. In a large skillet over medium heat, add a couple tablespoons oil. Saute onions, garlic and peppers until tender.
- 2. Now, crumble the ground beef into the skillet and cook until no longer pink. Stirring occasionally. Drain any grease and return to pan.
- 3. Add the seasonings, tomatoes, broth, corn, olives and simmer for 10 minutes.
- 4. While meat mixture simmers, bring 2 cups water to a boil, add salt and slowly add the corn meal, whisking quickly as you add. Once thoroughly combined...stir this mixture into eat mixture.
- 5. Spray a 9 x 13 baking dish with non stick cooking spray. Spread mixture into dish and spread cheese evenly on top.
- 6. Bake for 30 - 35 minutes or until golden and bubbly around the edges. I leave it set up for 10 - 15 minutes before cutting. Can serve with condiments of your choosing. Sour cream, green onions is delicious with this yummy casserole.
EASY TAMALE CASSEROLE
My mom liked to make the Hamburger Helper® version of this recipe. When I moved to another state, I could not find it, so I came up with this. Memories of home. My hubby likes for me to spice this up sometimes, so I will use a 14-ounce can of tomatoes and green chiles in it or just use a Mexican-style cornbread mix sometimes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Heat a cast-iron skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Season beef with salt and pepper.
- Stir onion into the ground beef; cook and stir for 1 minute and immediately remove skillet from heat.
- Stir pinto beans and crushed tomatoes into the beef mixture.
- Beat cream-style corn, cornbread mix, and egg together in a bowl until smooth; spread over the top of the ground beef mixture in the skillet. Sprinkle Cheddar cheese over the corn mixture.
- Bake in preheated oven until the cheese is melted and the cornbread is set in the middle, about 25 minutes.

- Preheat the oven to 425 F. Spray two large pie pans (or 3-quart casserole pans) with cooking spray.
- In a large saute pan over medium heat, cook the ground meat until brown, drain off the excess fat, then add the onions and saute until they are white and translucent. Stir in the mushrooms, garlic and bell pepper. Cover and let cook for several minutes, opening to stir quite frequently, until the mushrooms are tender.
- Add the black beans, corn, tomato sauce, salsa, broth, hot pepper and seasonings and stir to mix well. Let cook for about 10 more minutes until everything is hot. Split the filling between the two pie pans.
- In a medium mixing bowl, whisk together the milk, eggs and olive oil. Sprinkle with the cornmeal, flour, sugar, baking powder and salt, then stir with a spoon just until fully mixed. Spread the top of each pie with half of the cornbread mixture.

- Put in a saucepan cornmeal, salt, and water. Add gradually Pet milk. Boil and stir until mixture thickens. Cover and let cool. Preheat oven to 375 degrees. Grease a shallow 9 X 13-inch baking pan.
