My mom shared this recipe with me back in the '80s, and now it's a Turkey Day mainstay. We freeze locally grown corn during peak season, and I love to use it in this special side. -Wendy Young, Cordova, Maryland

4 large eggs
1 can (12 ounces) evaporated milk
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups frozen corn (about 20 ounces), thawed
3 cups shredded Swiss cheese, divided
1/4 cup chopped onion
3 cups soft bread crumbs
1/4 cup butter, melted

Steps:

  • Preheat oven to 350°. In a large bowl, whisk together first 4 ingredients; stir in corn, 1-1/2 cups cheese and onion. Transfer to a greased 11x7-in. baking dish., Toss bread crumbs with melted butter; sprinkle over casserole. Sprinkle with the remaining cheese., Bake, uncovered, until golden brown and heated through, 35-45 minutes. Let stand 10 minutes before serving.

This is from "The Swiss Cookbook". The author says that Emmentaler, Gruyere or any combo of the two can be used--that gruyere has a stronger taste. I haven't made it yet. She says that it is a traditional recipe. Times are just guesses. I don't know how long it will take to make.

2 cups cornmeal
6 cups water
1/4 cup butter
2 cups grated swiss cheese (emmentaler or gruyere, romano or parmesan)
2 teaspoons salt
1/2 teaspoon paprika
1 cup heavy cream

Steps:

  • Blend cornmeal and 2 cups water to a smooth mixture.
  • Bring the other 4 cups of water to a boil. Gradually stir in the cornmeal mixrture. Cook over low heawt, stirring frequently, until thick and smooth, or until the mixture clears the sides of the saucepan.
  • Beat in the butter, 1.5 cups grated cheese, salt and paprika. Spread mixture on a buttered cookie sheet to a depth of 1 inch. Chill.
  • Butter a shallow baking dish.
  • Cut cornmeal mixture into fingers and place them in it. Pour cream over it. Sprinkle with remaining cheese.
  • Bake at 350 for 15-20 minutes or until top is lightly browned.

4 cups full fat homogenized milk
1 cup yellow cornmeal
1 teaspoon fine salt
1 cup heavy cream
2 cups swiss cheese, shredded
1/2 cup sweet onion, chopped (pan fried until golden) (optional)
1/2 cup wild mushroom, mix (pan fried until golden) (optional)

Steps:

  • Preheat oven to 400 degrees.
  • In a heavy pan add the milk, cornmeal and salt.
  • Bring to a boil, whisking constantly.
  • Reduce heat and simmer gently for 7 minutes.
  • Stir and beat occasionally to keep mixture smooth.
  • Stir in the cream.
  • Pour slightly less than half the mixture into a buttered glass or ceramic 8 x 8 x 2 pan.
  • Sprinkle with the mushrooms and sweet onions and half the cheese.
  • Pour in the remaining batter and top with the rest of the cheese.
  • Bake in a preheated oven for 40 minutes and let stand 10 minutes before serving.

This is a family favorite. Sometimes I substitute chickpeas or other beans for the kidney beans. I suppose if you like ground beef, you could substitute ground beef for the kidney beans as well. If you love cheese, by all means, use more ... if I've got enough I do!

3 garlic cloves
1 onion
1 green pepper
1 teaspoon cumin
2 teaspoons chili
2 tablespoons flour
1 (28 ounce) can tomatoes
3 cups cooked kidney beans
salt and pepper
2 beaten eggs
3/4 cup milk
6 tablespoons oil
1 cup cornmeal
1 teaspoon salt
1 teaspoon baking soda
2 cups corn
2 cups cheddar cheese

Steps:

  • Saute garlic, onion and green peppers in oil.
  • Add cumin and chili. Cook for 2 minutues.
  • Add flour. Cook for 1 minute.
  • Add tomatoes and kidney beans. Add salt and pepper to taste. Simmer for 20 minutes or longer. (Sometimes I'll simmer it for longer. The flavour is better the longer you simmer it.).
  • While the tomato mixture is simmering, make the cornbread mixture.
  • Mix together the eggs, mild and oil.
  • Add the cornmeal, salt and baking soda. Mix.
  • Add the corn. Mix.
  • Grease/spray 9 x 13 pan.
  • Pour 2/3 cup cornmeal mixture into the bottom of the pan.
  • Sprinkle 1 1/2 cups of cheddar cheese on top of the cornmeal mixture.
  • Pour tomato mixture on top of cheese.
  • Spoon the rest of the cornmeal mixture around the outer edges of the pan, on top of the tomato mixture.
  • Sprinkle remaining cheese in the middle of the pan, on top of tomato mixture.
  • Bake at 350°F for 45 minutes.
  • Let rest for 10 minutes before serving.

1 cup cornmeal
10 -12 ounces meaty bacon
1 lb dry curd cottage cheese
1/2 lb shredded swiss cheese
1/2 lb feta cheese or 1/2 lb bryndza cheese
1 lb sour cream

Steps:

  • Place cornmeal in a saucepan with four cups of water and cook until water is absorbed; set aside.
  • Mix cottage cheese, crumbled feta cheese and sour cream in a bowl; set aside.
  • Chop bacon and cook until done and drain on paper towels.
  • In a square baking dish (9x9-inches), layer with half the cornmeal, half the cheese, and half the bacon. Repeat layer and top with shredded Swiss cheese.
  • Bake at 325°F for 30-40 minutes or until top is lightly browned.
  • Remove from oven and cool for 10-15 minutes before serving.
