Swiss Chard with Crispy Shallots image

Provided by Alex Guarnaschelli

Categories     side-dish

Time 25m

Yield 4 to 6 servings

Number Of Ingredients 7

2 cups canola oil, plus 2 tablespoons
6 shallots, peeled and thinly sliced
1 tablespoons all-purpose flour
Kosher salt and freshly ground white pepper
2 bunches (about 2 to 2 1/2 pounds) Swiss chard, trimmed and washed, leaves separated from stalks, the stalks cut into 1-inch thick and 3-inch long matchsticks, leaves torn into bite-size pieces
1 tablespoon extra-virgin olive oil
2 tablespoons sherry vinegar

Steps:

  • In a medium pot, heat 2 cups oil to 325 degrees F.
  • In a bowl, toss the shallot slices with the flour. Test a shallot slice to assure the oil is sufficiently hot enough to fry the shallots. Fry them in small batches until golden brown, removing them with a slotted spoon and drain them on a paper towel. Season with salt and pepper, to taste.
  • Heat a large skillet, and add 1 tablespoon of oil. When the oil begins to smoke, add the Swiss chard stalks and season with salt and pepper. Cook until tender, 3 to 5 minutes. Transfer to a serving bowl. Heat the remaining oil and quickly saute the leaves until they "wilt", 1 to 2 minutes. Combine in the bowl with the stalks. Stir in the olive oil and sherry vinegar. Top with the shallots.

SPAGHETTI AND SWISS CHARD WITH GARLIC CHIPS

Spaghetti and Swiss Chard With Garlic Chips image

Executive food editor Kemp Minifie brought the idea for this restorative pasta from her own home. Everyone in the test kitchen loved the briny intensity of feta and olives offset by sweet currants and slightly bitter chard. The garlic doesn’t stay crisp for long, so be sure to serve immediately.

Provided by Shelley Wiseman

Categories     Garlic     Pasta     Sauté     Vegetarian     Quick & Easy     Father's Day     Dinner     Swiss Cheese     Gourmet     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Makes 4 to 6 servings

Number Of Ingredients 9

1/3 cup extra-virgin olive oil
1 head garlic, cloves peeled and thinly sliced lengthwise
1 medium onion, finely chopped
1/2 cup dried currants
2 pounds green Swiss chard, stems and center ribs finely chopped and leaves coarsely chopped separately
1/2 cup water
1 pound spaghetti
1/2 cup Kalamata olives, cut into slivers
6 ounces feta, crumbled (1 1/2 cups)

Steps:

  • Heat oil in a 12-inch heavy skillet over medium heat until it shimmers, then cook garlic, stirring, until golden, about 3 minutes. Transfer garlic with a slotted spoon to paper towels to drain.
  • Cook onion in oil remaining in skillet over medium heat, stirring occasionally, until softened, 3 to 5 minutes. Add currants and cook, stirring, until plumped, about 1 minute.
  • Stir chard stems into onion mixture with water and 3/4 teaspoon each of salt and pepper. Cook, covered, over medium-high heat until almost tender, about 5 minutes. Stir in chard leaves and cook, covered, until stems and leaves are tender, about 5 minutes.
  • Meanwhile, cook spaghetti in a pasta pot of boiling salted water (2 tablespoons salt for 5 quarts water) until al dente. Reserve 1 cup pasta-cooking water and drain spaghetti.
  • Toss spaghetti with chard, olives, and 1/2 cup cooking water, adding more cooking water if necessary. Season with salt and pepper. Serve sprinkled with feta and garlic chips.

  • Garlic Sauteed Swiss Chard. If you’re looking for a simple, easy-to-make side dish, you can’t beat garlic sauteed Swiss chard. You’ll simply saute the chard as you would any greens, with olive oil, garlic, and salt.
  • Lemon Parmesan Garlic Swiss Chard. This recipe is quite similar to the garlic-sauteed one above. However, you’ll also use lemon juice, lemon zest, and parmesan cheese for this one.
  • Swiss Chard With Ginger. For this sauteed chard recipe, you’ll start with the standard ingredients: chard, olive oil, and salt. To those, you’ll add minced fresh ginger, minced garlic, and a bit of soy sauce for flavor.
  • Swiss Chard With Cannellini Beans. If you grew up with a gramma who knew how to cook on a budget, then you probably enjoyed a lot of “beans-n-greens,” as my grandma called them.
  • Swiss Chard With Garbanzo Beans. If cannellini beans aren’t your thing, try garbanzo beans instead. You’ll also want to add pancetta and a finely chopped shallot for this recipe.
  • Swiss Chard and Brown Rice Risotto. There’s something about risotto, garlic, and mushrooms that just works, and this recipe combines all three, along with Swiss chard, onions, chicken stock, and more.
  • Creamed Swiss Chard With Garlic Breadcrumbs. If you’re a fan of creamed spinach, you’ll love creamed Swiss chard, especially if you make it using this recipe.
