1 ½ cups Old El Paso® Thick 'n Chunky Salsa
1 (16.3 ounce) can Pillsbury® Grands!® refrigerated biscuits
½ cup shredded Monterey Jack cheese or Mexican cheese blend

Steps:

  • In 10-inch nonstick skillet, mix cooked beef and 1/2 cup of the salsa. Cook over medium-high heat, stirring occasionally, until hot.
  • Press each biscuit into 6-inch round. Spoon 1/3 cup meat mixture and 1 tablespoon cheese onto center of each round. Fold dough in half over filling; press to seal. Place on greased cookie sheet.
  • Bake at 375 degrees F 9 to 14 minutes or until golden brown. Serve with remaining salsa.

Basic Empanadas image

These tasty and convenient Latin-American-style turnovers can be frozen for up to three months, individually wrapped in plastic and placed in resealable plastic bags. There's no need to thaw before baking, they can go right from the freezer to the oven.

2 pounds ground pork or beef
2 medium onions, finely diced
2 jalapeno chiles, minced (ribs and seeds removed for less heat, if desired)
1/2 teaspoon chili powder
2 cans (14.5 ounces each) tomatoes, diced
coarse salt and ground pepper
1 cup fresh cilantro, chopped
4 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
2 teaspoons salt
1/2 cup (1 stick) cold butter, cut into small pieces
1 cup cold water
1 large egg, lightly beaten with 1 tablespoon water (do not beat until ready to bake)

Steps:

  • Make the filling: In a 12-inch skillet over medium-high, cook meat until no longer pink, breaking it up into small pieces, 5 to 7 minutes.
  • Add onion and jalapenos; cook until soft, 5 minutes. Stir in chili powder and tomatoes. Cook over medium until mixture has thickened, 12 to 15 minutes. Season with salt and pepper. Fold in cilantro. Let cool.
  • Make the dough: In a bowl, combine flour, baking powder, and salt. Using your fingers, cut in butter until mixture is crumbly. Add just enough cold water so dough comes together.
  • Form empanadas. If desired, freeze on a baking sheet until firm, 2 hours. Wrap tightly in plastic; freeze in plastic bags.
  • To bake fresh or frozen empanadas, preheat oven to 400 degrees. Place on parchment-lined baking sheets. Brush tops with egg wash, avoiding crimped edges. Bake until golden brown, rotating sheets halfway through, 30 to 40 minutes.

1 (12 ounce) package stouffer's frozen harvest apples
1 tablespoon all-purpose flour
1/4 cup butter or 1/4 cup margarine
1/4 cup firmly packed light brown sugar
1/4 teaspoon ground allspice
3 1/2 cups baking mix
1 cup whipping cream
2 tablespoons butter or 2 tablespoons margarine, melted

Steps:

  • Thaw apples in microwave at half power 6 to 7 minutes; let stand 3 minutes. Stir together apples and flour.
  • Melt 1/4 cup butter in a medium skillet over medium heat; add apple mixture, brown sugar, and allspice. Cook, stirring constantly for 4 minutes or until thickened. Remove from heat. Coarsely mash apple mixture, and set aside.
  • Stir together baking mix and 1 cup whipping cream with a fork until moistened. Turn dough out onto a lightly floured surface, and knead 3 to 4 times.
  • Roll dough to 1/2-inch thickness. Cut into 12 (5-inch) squares.
  • Divide apple mixture into 12 servings and place 1 serving in center of each square. Fold 1 side of square over, pressing edges with a fork to seal. Place on a lightly greased baking sheet. Brush tops evenly with 2 tablespoons melted butter.
  • Bake at 400F for 18 to 20 minutes or until golden brown. Serve immediately.

I love Colombian empanads/food since I've lived there but I rather go out and eat it! The man of the house must have tacos so I've started using this filling and it make us both happy. I wrap my taco in lettuce. The meat is very very addictive...once you start eating it you might just finish it with a spoon. I never have any leftovers no matter how much I make!!!! Try the pique sauce with it too!

4 large olives (finely chopped) or 10 small olives (finely chopped)
1/2 large sweet onion, chopped
2 garlic cloves (minced)
4 tablespoons sofrito sauce (use recipe or buy it already made by Goya)
1 (5 g) packet sazon goya con culantro y achiote (can be found in the latin food section of the supermarket)
salt and pepper, for seasoning
1 -2 tablespoon olive oil

Steps:

  • In large heated skillet add olive oil and onions. Cook until onions are translucent.
  • Remove onion from skillet and set aside.
  • Add meat to same skillet and brown until done.
  • Add onions back to skillet with meat.
  • Add remaining ingredients to meat mixture. Stir well and cooks through for about 10 minutes to ensure that all the ingredients blend.
  • Serve and enjoy.
