Indian cuisine celebrates chicken in remarkable ways, and this dish was inspired by classic tandoori cooking. Rich flavors result from rubbing the bird with a fragrant paste of spices, onion, and yogurt (which acts as a tenderizer) and letting it infuse the meat. The cucumber, lime, and chiles provide sharp, bright contrast to the seductively scented roast.

1 1/2 teaspoons whole cumin seeds
1 teaspoon whole coriander seeds
1/2 teaspoon whole fennel seeds
1 onion, coarsely chopped
2 large garlic cloves, minced
2 tablespoons minced ginger
3 tablespoons vegetable oil
1/2 teaspoon ground turmeric
1/2 cup Greek yogurt
Coarse salt
1 whole chicken (about 4 1/2 pounds)
Cucumbers, lime wedges , and chiles (such as serrano)

Steps:

  • Toast cumin, coriander, and fennel seeds in a skillet over medium heat until fragrant, about 2 minutes. Grind into a fine powder.
  • Puree onion, garlic, and ginger. Heat oil in a skillet over medium-high heat. Add onion mixture. Fry until translucent, about 5 minutes. Stir in spice mixture and turmeric. Let cool.
  • Stir yogurt into onion mixture. Season with salt.
  • Place chicken, breast side up, on a rimmed baking sheet, and tuck wings under. Tie legs together with kitchen twine. Pat chicken dry with paper towels. Gently separate skin from breast of chicken, and rub some of the yogurt mixture under the skin on each side. Cover with plastic wrap, and refrigerate for at least 8 hours or overnight.
  • Preheat oven to 450 degrees. Uncover chicken, and season with salt. Reduce oven temperature to 400 degrees. Roast chicken for 30 minutes. Remove from oven, and tent loosely with foil. Return to oven, rotating sheet. Roast until juices run clear and an instant-read thermometer inserted into the thickest part of a thigh reaches 165 degrees, about 30 minutes more. Let rest for 10 minutes before serving with cucumbers, lime wedges, and chiles.

4 large or 8 small chicken thighs, skin-on and bone-in
700ml full-fat natural yogurt
4 large garlic cloves, grated
1 thumb-sized piece of ginger, peeled and grated
1 heaped tbsp tomato purée
2 tsp ground cumin
2 tsp ground coriander
2 tsp ground turmeric
1 tsp hot chilli powder
1½ tsp sweet smoked paprika
1 lemon, juiced
pilau rice, to serve
3 limes, juiced
1 tsp sugar
1 red chilli, finely chopped
1 large cucumber, halved, seeds removed and cut into half moons
½ small red onion, finely chopped
300ml Greek yogurt
½ tsp ground cumin
1 small bunch of coriander
1 small bunch of mint
pinch of sugar

Steps:

  • Slash the chicken with a sharp knife. Mix the yogurt, garlic, ginger, tomato purée, spices, lemon juice and 1½ tsp salt in a large bowl. Add the chicken, turn to coat, then cover and chill in the fridge overnight.
  • For the pickle, mix together the lime juice, sugar, chilli and 1 tsp salt, then toss with the cucumber and red onion. Chill until ready to use or up to 1 hr.
  • Blitz the yogurt, cumin and herbs with a pinch of salt until smooth. Chill until needed.
  • Shake off the excess marinade and put the chicken on a baking tray, reserving the marinade. Heat the oven to 180C/160C fan/gas 4, then once at temperature, change the setting and heat the grill to high. Grill the chicken, skin-side-up, for 10-15 mins or until beginning to blacken a little. Change the setting back to an oven heat of 180C/160C fan/gas 4. Transfer the chicken to a roasting tin, then brush with the reserved marinade and cook for 20 mins. Serve with the cucumber, yogurt, cucumber pickle and pilau rice.

1/2 cup yogurt
3 tablespoons Tandoori Masala, recipe follows
1 tablespoon chopped garlic
Juice of 1 lime
A pinch of salt
One 3-pound chicken, cut into 8 pieces
Lime wedges, for garnish
1/4 cup cumin seeds
1/4 cup coriander seeds
3 tablespoons smoked paprika
2 tablespoons garam masala
2 teaspoons garlic powder
1 teaspoon red chili powder
1 teaspoon fenugreek seeds
1 teaspoon ground ginger
1 teaspoon turmeric
8 green cardamom pods
5 whole cloves
1/2-inch piece cinnamon stick

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the yogurt, Tandoori Masala, garlic and lime juice into a large dish and add the chicken pieces. Rub the marinade into the chicken until it is completely covered. Place the chicken onto an oiled baking sheet. Place in the oven and bake until the chicken is cooked but still tender, 35 to 40 minutes. Serve with lime wedges.
  • Grind the cumin seeds, coriander seeds, smoked paprika, garam masala, garlic powder, red chili powder, fenugreek seeds, ground ginger, turmeric, cardamom, cloves and cinnamon stick in an electric spice grinder. Store in an airtight container.

I love Indian food and I REALLY love tandoori chicken. But, not having a 900-degree tandoor oven presented a problem. Or so I thought. Fortunately, The Spice House has amazing tandoori chicken spices that make it SO easy to make tandoori chicken at home! Moist, tasty, and low-calorie, tandoori chicken is now a new staple in my cooking repertoire.

2 pounds bone-in chicken thighs, skinned (about 12)
1 cup plain, unsweetened, full-fat yogurt
2 teaspoons kosher salt
2 tablespoons tandoori seasoning
1 drop of red food coloring (optional, but traditional)
juice of 1 medium-sized lemon
1 large onion, sliced

Steps:

  • Mix all except onions together in large non-metallic bowl, being sure to coat all chicken pieces in yogurt and seasonings. Cover and refrigerate for 4 hours.Meanwhile, preheat oven to 400°F. Line a half-sheet shallow baking pan with foil and place a wire rack on top of that (I used the rack normally used for cooling cookies.) Take chicken out of refrigerator and place on rack, spacing evenly.Bake 30 to 40 minutes, turning once and placing onions on top at that time. If you want to add some extra char, trying using your oven's broiler once chicken is thoroughly cooked.This is delicious served with raita and basmati rice. You can garnish this with fresh cilantro and even lime wedges.

TANDOORI-STYLE CHICKEN

Cooking chicken the night before to serve cold or at room temperature the next day is a brilliant plan for summer soirées, picnics or potlucks. Since the flavors of something cold are usually less pronounced than when they were warm, and since flavors are always muted during storage anyway, the key is to start with more flavor: a blast of herbs, a rub or a marinade. A fiery jalapeño and ginger spiked yogurt marinade to give life to my take on tandoori chicken, for example. The lack of any messy sauces means that they can all be packed up and taken on a picnic without worrying about dripping, leaking containers. A resealable plastic bag or sheet of aluminum foil will work just fine. You could even happily eat everything with your fingers - if, say, you eschewed (or forgot) the plastic forks and knives and just packed a stack of paper napkins.

  • With a sharp knife, make several incisions on each chicken piece to help marinade penetrate meat. Transfer chicken to a large glass or ceramic baking dish and pour in marinade, turning chicken pieces to coat. Cover dish with plastic wrap and transfer to refrigerator for at least 4 hours or overnight.
  • Preheat oven to 450 degrees. Remove chicken pieces from marinade. Transfer chicken to a roasting pan and drizzle with vegetable oil. Roast, basting occasionally, until juices run clear and meat is just cooked through, about 25 minutes. Let cool completely, then wrap and refrigerate. Tandoori chicken gets its name from the clay oven it is traditionally cooked in, the tandoor. The chicken is marinated in yogurt and an incredibly complex mix of spices, and then roasted in the extremely hot tandoor oven. Don't worry if you don't have a tandoor clay oven sitting in the backyard; a grill will work just fine.

1 ½ tablespoons tandoori masala powder

  • Whisk lime juice, yogurt, tandoori powder, salt, and pepper in a bowl. Pour mixture into a resealable plastic bag. Add chicken, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator for at least 2 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove chicken from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels.

juice 2 lemons
4 tsp paprika
2 red onions, finely chopped
16 skinless chicken thighs
vegetable oil, for brushing
300ml Greek yogurt
large piece ginger, grated
4 garlic cloves, crushed
¾ tsp garam masala
¾ tsp ground cumin
½ tsp chilli powder
¼ tsp turmeric

Steps:

  • Mix the lemon juice with the paprika and red onions in a large shallow dish. Slash each chicken thigh three times, then turn them in the juice and set aside for 10 mins.
  • Mix all of the marinade ingredients together and pour over the chicken. Give everything a good mix, then cover and chill for at least 1 hr. This can be done up to a day in advance.
  • Heat the grill. Lift the chicken pieces onto a rack over a baking tray. Brush over a little oil and grill for 8 mins on each side or until lightly charred and completely cooked through.

1 tablespoon curry powder
2 teaspoons onion powder

Steps:

  • In a small bowl, combine the ginger powder, curry powder, onion powder and cayenne pepper; set aside 2 teaspoons of the mixture.
  • To make the brine: In a large bowl, combine buttermilk, salt, sugar and minced garlic; mix to combine until the sugar and salt are dissolved completely.
  • Stir in the remaining ginger mixture into buttermilk mixture (keep about 2 teaspoons to flavor the chicken pieces before grilling).
  • Place the chicken pieces in a large heavy-duty ziploc freezer bag, and then place in a shallow dish to catch any small leaks.
  • Pour the buttermilk brine/ginger mixture mixture over the chicken pieces in the bag.
  • Coat the pieces well with the brine.
  • Place in refrigerator for 3-4 hours, turning the bag occasionally to distribute the marinade over the chicken.
  • When ready to grill, remove the chicken from the bag and discard marinade/brine.
  • Sprinkle the chicken with the reserved 2-3 teaspoons of the ginger spice.
  • Set grill to medium temperature.
  • Place the chicken on the grill and cover with grill lid.
  • Cook chicken for about 50-60 minutes.
  • To make the curry-cucumber sauce: In a bowl combine all the ingredients; mix well to combine.
  • Cover and chill until serving.

1 teaspoon salt
1 lemon, juiced
1 ¼ cups plain yogurt

½ cup plain whole-milk Greek yogurt
2 tsp. tomato paste
1½ tsp. paprika
1 tsp. ground coriander
5 tsp. kosher salt, divided
1½ lb. skinless, boneless chicken breasts, cut into 2" pieces
¼ cup plus 2 Tbsp. grapeseed or vegetable oil, divided
1 medium butternut squash (about 2 lb.) peeled, cut into 1" pieces
6 scallions, thinly sliced
6 Tbsp. fresh lime juice
2 Tbsp. finely chopped peeled ginger (from one 3" piece)
3 cups cilantro leaves with tender stems; plus more for serving (optional)
Steamed rice (for serving)

Steps:

  • Place racks in upper and lower thirds of oven; preheat to 450°F. Mix yogurt, tomato paste, paprika, coriander, and 2 tsp. salt in a medium bowl. Add chicken and toss to coat. Let sit at room temperature at least 10 minutes.
  • Rub a rimmed baking sheet with 1 Tbsp. oil. Arrange chicken on sheet, making sure there's space around each piece.
  • Toss squash, 1 Tbsp. oil, and 1 tsp. salt on another rimmed baking sheet and spread out into a single layer.
  • Roast chicken on upper rack and squash on lower, tossing squash halfway through, until chicken is cooked through and starting to char in spots, and squash is fork-tender and golden brown around the edges, 15-17 minutes.
  • Meanwhile, purée scallions, lime juice, ginger, 3 cups cilantro, 3 Tbsp. water, and remaining ¼ cup oil and remaining 2 tsp. salt in a blender until smooth.
  • Divide rice among bowls. Top with sauce, chicken, squash, and cilantro leaves, if using. Alternatively, serve chicken, squash, rice, and sauce separately for any picky eaters at your table, or keep the sauce on the side entirely.
  • Do Ahead: Chicken can be marinated 1 day ahead; cover and chill. Chicken and squash can be roasted and sauce can be made 2 days ahead; cover and chill separately. Reheat chicken and squash in a 300°F oven before serving.

This Indian chicken dish has two marinades and takes more effort, but the wonderful spicy flavours are well worth it - it's a guaranteed crowd-pleaser

4 chicken legs, skin removed
4 skinless chicken breasts
1 lime , cut into wedges
green chutney
a few mint leaves , chopped
4 tsp Kashmiri chilli powder
1 tbsp ginger & garlic paste
1 lime , juiced
2 tsp Kashmiri chilli powder
2 tsp ginger & garlic paste
1 tbsp lime juice
1 ½ tsp paprika
1 tsp turmeric
80g natural yogurt
1 tsp garam masala
1 tbsp vegetable oil

Steps:

  • Slash the flesh of the chicken pieces roughly 1cm apart. Put the chicken and all the first marinade ingredients in a bowl and mix well. Leave in the fridge for at least 2 hrs, and up to 4 hrs.
  • Blend all the ingredients for the second marinade together. Remove the chicken from the first marinade and put it in a clean bowl. Add the second marinade and rub it into the chicken, then chill in the fridge for at least 4 hrs.
  • Light a barbecue with a lid, load the coals on one side and get them to a point where they are white-hot, then let them cool a little. Don't put the chicken directly over the heat, otherwise the spices will burn. Barbecue on a medium heat with the lid on for 10-15 mins or until cooked through, turning them once. (Or heat oven to 200C/180C fan/gas 6 and cook the chicken on a baking tray for 30 mins or until cooked through.) Sprinkle with mint and spoon over some green chutney, if you like (see our recipe). Serve with lime wedges for squeezing over.

This recipe was from my sister, Paula, who lived in northern England with her English husband. Indian food and 'takeaways' are very popular there. I serve this dish with rice and a spinach salad with tomato wedges, hard boiled eggs, cucumber slices, feta cheese and black olives. Doubling the marinade will provide plenty of sauce to go over the rice.

1 (2 to 3 pound) chicken, skinned and quartered
2 tablespoons lemon juice
1 teaspoon salt
4 teaspoons ground allspice
2 tablespoons plain yogurt
2 tablespoons lemon juice
2 tablespoons vegetable oil
2 tablespoons distilled white vinegar

Steps:

  • Make cuts in the chicken flesh, almost to the bone. Pour 2 tablespoons of the lemon juice over the chicken and rub in the salt.
  • Combine the tandoori spice, yogurt, 2 tablespoons lemon juice, oil and the vinegar. Coat the chicken with the mixture, rubbing well into the cuts. Place the chicken in a 13x9 inch pan, cover with foil and refrigerate overnight, turning occasionally.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bake covered chicken at 350 degrees F (175 degrees C) for 1 hour. Remove foil the last 15 minutes of baking.

4 thick trout fillets
1 tbsp tandoori curry paste
500g new potatoes , larger ones halved
2 tbsp vegetable oil
1 garlic clove , chopped
1 tsp ground cumin
1 tsp garam masala (or ground coriander)
½ tsp ground turmeric
320g frozen peas
yogurt , coriander leaves and mango chutney, to serve

Steps:

  • Coat the trout in the curry paste. Put the potatoes in a large pan of cold salted water, bring to the boil and cook for 15-20 mins until tender but still retaining their shape. Drain and leave to steam-dry.
  • Heat the grill. Put the trout fillets on a baking tray lined with foil and cook until tender, about 6-8 mins.
  • Meanwhile, heat the oil in a large frying pan and add the garlic and spices. Cook for a few mins until fragrant, then tip in the potatoes. Fry for 3 mins until crisp at the edges, then throw in the frozen peas. Cook for 2-3 mins more until warmed through. Season well and serve with the trout, coriander sprinkled over, and yogurt and chutney on the side.
