I recently had this at a party and asked for the recipe but have not prepared it yet. I'll modify instructions if necessary

1 1/2 cups couscous
1/2 teaspoon salt
1 1/2 cups water, boiling
1 red bell pepper, diced
1 cup carrot, diced
1 cup green beans, diced
1/4 cup canola oil
4 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon cinnamon
3 tablespoons orange juice
4 tablespoons chopped parsley
1 tablespoon fresh spearmint
1 pinch cayenne pepper
1/4 cup red onion, chopped
1/2 cup almonds, sliced,toasted
1/3 cup currants

Steps:

  • In a large bowl combine boiling water, couscous and salt, stir and let stand 5 minutes, fluff with fork steam the bell pepper, carrots, and green beans for 1 minute& mix with couscous Mix remaining ingredients together& pour over couscous.

Another idea for gift baskets, the feta is off course wonderful to add to salads!This works out much cheaper making it yourself then buying it.

7 ounces feta cheese
3 -5 sprigs fresh rosemary
12 -15 black olives
1 teaspoon black peppercorns
1 small dried red chili pepper, optional
1 cup virgin olive oil, approx

Steps:

  • Dry the cheese with paper kitchen towel, cut into 1-inch cubes.
  • Add to a jar, alternating with the other ingredients.
  • Fill the jar with the olive oil, seal and leave for one week in a cool dark place so the flavors have time to develop.
  • After opening keep the feta in the fridge.

I like to use an assortment of olives from an olive bar, such as Nicoise, Kalamata, Picholine, along with stuffed olives that have feta, garlic, almonds, and other things in them, etc. These go great with a Greek salad.

1 lb kalamata olive (or variety Greek olives; about 75-80)
1/4 cup extra virgin olive oil
2 tablespoons finely chopped parsley
2 tablespoons finely chopped fresh cilantro
2 tablespoons fresh lemon juice
1/2-1 teaspoon crushed red pepper flakes (amount to taste)
3 cloves garlic, minced

Steps:

  • Rinse olives and drain.
  • Place olives in a jar with tight fitting lid.
  • Combine other ingredients and pour over olives.
  • Attach lid firmly, and shake jar lightly to coat olives.
  • Refrigerate, turning jar occasionally, for 24 hours, to develop flavor.
  • Use within 7 days.
