A simple yet festive main dish. If you're not up to the task of roasting a turkey this dish is for you. Serve with Cranberry Chutney. Originally submitted to ThanksgivingRecipe.com.

1 pound turkey tenderloins
3 tablespoons soy sauce
1 tablespoon Dijon-style prepared mustard
2 teaspoons dried rosemary, crushed

Steps:

  • Place the turkey tenderloins in a sealable plastic bag and set aside.
  • In a small bowl combine the soy sauce, mustard and rosemary. Pour over turkey, seal bag and shake to coat. Marinate in the refrigerator for 1 to 4 hours shaking once or twice.
  • Preheat oven on the broiler setting. Remove the turkey from the marinade and place on the rack in the broiler pan. Broil 4 inches from the heat, turning once, for 20 to 22 minutes or until meat is cooked through and when pierced with a fork the juices run clear. Slice and serve with Cranberry Chutney.

1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon salt
1/4 teaspoon cayenne pepper (or more to taste)
1 lb turkey tenderloins or 1 lb chicken tenderloins
1/3 cup onion, chopped
1 jalapeno pepper, seeded and minced
2 teaspoons olive oil
1 (15 ounce) can black beans, rinsed and well drained
1 (8 3/4 ounce) can corn, drained
1/3 cup tomatoes, chopped
2 tablespoons fresh cilantro, chopped
1 lime, quartered

Steps:

  • In small bowl, combine chili powder, cumin, salt and cayenne pepper; sprinkle one half of mixture over turkey. Note: I increase the spice mixture for the tenderloins.
  • In medium, non-stick skillet over olive oil over medium-high heat; saute onion and jalapeno pepper 2 to 3 minutes or until onion softens. Add beans, corn, tomatoes, remaining chili powder mixture. Cook 25 to 30 minutes or until mixture is heated throughout. Sprinkle with cilantro.
  • Meanwhile, preheat charcoal grill for direct-heat cooking. Grill tenderloins 15 to 20 minutes or until meat is no longer pink in center and meat thermometer reaches 160 degrees F.
  • Allow tenderloins to stand 10 minutes before serving.
  • Serve grilled tenderloins with bean/corn mixture with a squeeze lime wedge over each serving.

1/4 to 1/2 teaspoon salt
1/8 teaspoon cayenne pepper
1 turkey breast tenderloin (1/2 pound)
3 teaspoons olive oil, divided
1/4 cup chicken broth
2 tablespoons lime juice
3 tablespoons chopped onion
2 tablespoons chopped jalapeno pepper
1 cup canned black beans, rinsed and drained
1/2 cup frozen corn, thawed
3 tablespoons chopped fresh tomato
4 teaspoons picante sauce
1 tablespoon minced fresh cilantro
2 lime wedges

Steps:

  • In a small bowl, combine the chili powder, cumin, salt and cayenne. Sprinkle half the spice mixture over turkey. In a skillet, brown turkey in 2 teaspoons oil for 3-4 minutes on each side. Add broth and lime juice to skillet. Reduce heat; cover and simmer until turkey juices run clear and thermometer reads 170°, turning once, 15-18 minutes., In a small skillet, saute the onion and jalapeno in remaining oil until crisp-tender. Transfer to a bowl. Add the beans, corn, tomato, picante sauce, cilantro and remaining spice mixture. Serve turkey with salsa and lime wedges.

1 tablespoon olive oil
2 tablespoons all-purpose flour
2 cups Russian-style salad dressing
¼ teaspoon honey
1 (1 ounce) envelope dry onion soup mix

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat the olive oil in a large skillet over medium-high heat. Coat the pork tenderloin with flour, and brown in the hot skillet on all sides. Transfer to a casserole dish. In a medium bowl, mix together the salad dressing, honey and onion soup mix. Slather the tenderloin with this mixture.

2 tablespoons honey mustard
3/4 lb turkey tenderloins

Steps:

  • Heat grill.
  • In small bowl, combine salad dressing and mustard; mix well and set aside.
  • When ready to grill, carefully oil grill rack.
  • Place turkey on 4 to 6 inches from heat.
  • Cook 20 to 25 minutes or until turkey is no longer pink in center, turning and brushing several times with dressing mixture during last 10 minutes of cooking time.
  • Discard any remaining dressing mixture.
