- Using a blender or food processor blend the egg yolks, salt& vinegar together Very slowly with the blender swithced on quite high speed pour a very thin, slow stream of oil into the egg yolks, stop every once in a while and blend for a second then resume with the oil until all has been poured in Add lemon juice and the tbsp of water.

- In the food processor combine the egg yolks and malt vinegar. With the machine running, add the oil, drop by drop, until the mixture starts to look homogeneous and thick and silky. When the mixture looks like it has come together and is starting to thicken, the oil can be added a little bit faster until all the oil is added. Add the remaining ingredients and taste for seasoning. Season with salt, if needed. Transfer to a container with a lid and refrigerate until ready to use.

- Put the egg yolk into a small bowl and whisk with a fork.
- Dribble a little bit of Olive oil into the bowl with the yolk and whisk while doing so.
- Repeat this over and over again until the mixture is thick, white and creamy. (you may need a little bit more/ less Olive oil.
- When the yolk mixture is nice and creamy, add the mustard and mix again.
- add the vinegar and parsley and mix again.
- Chop the Cappers abit, or if you like the cappers whole put them in whole. (add as much or as little cappers as you like, but I usually add about 1 tablespoon), add abit of the capper juice as well to give the Sauce extra flavour (about 1 Teaspoon).
- Add your spices, Salt and pepper and serve.
- Note- This TarTar sauce keeps in the fridge for about 2 Days.
