Number Of Ingredients 14

3 tablespoons butter, softened
1/4 cup packed brown sugar
4 teaspoons sugar
1 large egg
1/3 cup sour cream
3 tablespoons 2% milk
2/3 cup all-purpose flour
1/2 cup graham cracker crumbs
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon baking soda
1/3 cup milk chocolate chips
6 tablespoons marshmallow creme

Steps:

  • In a small bowl, cream butter and sugars until light and fluffy. Beat in the egg, then the sour cream and milk. Combine the flour, graham cracker crumbs, salt, baking powder, cinnamon and baking soda; beat into creamed until moistened. Fold in chocolate chips., Coat six muffin cups with cooking spray; fill one-fourth full with batter. Spoon 1 tablespoon marshmallow creme into each muffin cup. Top with remaining batter. , Bake at 400° for 14-16 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

1 1/2 cups all-purpose flour
1/2 cup graham cracker crumbs (about 8 squares)
1/4 cup packed brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
1 egg
1 1/2 cups buttermilk
1/4 cup vegetable oil
3/4 cup semi-sweet chocolate chips
1 1/4 cups miniature marshmallows, divided

Steps:

  • In a large bowl, combine the dry ingredients.
  • Combine egg, buttermilk and oil; mix well.
  • Stir into dry ingredients just until moistened.
  • Fold in chocolate chips and 1 cup marshmallows.
  • Fill greased jumbo muffin cups three fourths full.
  • Sprinkle with remaining marshmallows.
  • Bake at 375 degrees for 18-20 or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pan to wire rack.
  • Serve warm.

Found this recipe in a taste of home booklet. Its one I haven't seen before and I had to try it because my family loves Smores! The marshmellow center really makes these muffins stand out in the crowd. My kids gobbled them all up and then wanted the one I was eating!!lol

3 tablespoons butter, softened
1/4 cup brown sugar, packed
4 teaspoons sugar
1 egg
1/3 cup sour cream
2/3 cup all-purpose flour
1/2 cup graham cracker crumbs
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon ground cinnamon
1/8 teaspoon baking soda
3 tablespoons milk
1/3 cup milk chocolate chips
6 tablespoons marshmallow creme

Steps:

  • In a small mixing bowl, cream butter and sugars until light and fluffy.
  • Beat in egg.
  • Stir in sour cream.
  • Combine the flour,graham cracker crumbs, salt, baking powder, cinnamon, and baking soda.
  • Add to creamed mixture alternately with milk just until moistened.
  • Fold in chocolate chips.
  • Coat six muffin cups with cooking spray.
  • Fill one-fourth full with batter.
  • Spoon 1 Tbsp marshmellow creme into each muffin cup.
  • Top with remaining batter.
  • Bake at 400 degrees for 14-16 minutes or until a toothpick comes out clean.
  • Cool for 5 minutes before removing from pan to wire rack.
  • Serve warm.
  • Note: Fill empty muffin cups halfway with water before baking.

¾ cup teff flour
¾ cup brown rice flour
½ cup arrowroot flour
1 ½ teaspoons baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
¼ teaspoon salt
⅔ cup water
½ cup chopped pecans
⅓ cup olive oil
2 eggs, beaten
½ cup raisins
½ cup golden raisins
½ cup dried apricots, chopped
½ cup dried cranberries

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a muffin tin.
  • Mix teff flour, brown rice flour, arrowroot flour, baking powder, cinnamon, nutmeg, cloves, ginger, and salt together in a large bowl. Form a well in the center of the flour mixture. Add water, pecans, olive oil, and eggs to the well. Whisk the wet ingredients into the dry ingredients until batter is fully combined. Fold raisins, golden raisins, apricots, and cranberries into batter. Pour batter into the prepared muffin tin.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes.

Number Of Ingredients 8

42 squares graham crackers, finely crushed (about 3 cups crumbs)
1/4 cup sugar
1 Tbsp. baking powder
1 egg
1 cup milk
3 Tbsp. honey
1-1/2 cups bear-shaped chocolate graham snacks, divided
1/2 cup JET-PUFFED Miniature Marshmallows

Steps:

  • Preheat oven to 350°F. Mix graham crumbs, sugar and baking powder in large bowl; set aside. Beat egg, milk and honey with wire whisk until well blended. Add to graham mixture; stir just until moistened. Stir in 1 cup of the graham snacks.
  • Spoon batter evenly into 12 medium muffin cups sprayed with cooking spray. Toss remaining 1/2 cup graham snacks with the marshmallows. Sprinkle evenly over batter; press lightly into batter.
  • Bake 16 to 20 min. or until toothpick inserted in centers comes out clean. Let stand 5 min. in pan; remove from pan to wire racks. Cool slightly.
