Steps:
- Preheat the oven to 300 degrees F. Line 2 cookie sheets with parchment.
- Sift together the flour, baking soda and cinnamon in a bowl. Cream the butter and sugar in a separate bowl, then gradually add the eggs. Add the dry ingredients alternately with the milk, blending well. Mix the pecans, cherries, pineapple and raisins in a large bowl, then pour the batter over them. Fold the fruit and nuts into the batter by hand, mixing well. Drop the batter by tablespoonfuls onto the prepared cookie sheets. Bake for 20 to 25 minutes, or until golden and done.
TEXAS SHEET CAKE COOKIES
This is the cookie version of the fudgy, chocolaty goodness that is a Texas sheet cake. Make sure to frost these cookies while both the cookies, and the frosting, are still warm--because this frosting sets up quickly! Feel free to top these with either chopped walnuts or pecans, if desired. Store in airtight containers.

Steps:
- Place chocolate chips in the top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Let cool.
- Preheat the oven to 350 degrees F (175 degrees C).
- Whisk flour, cocoa powder, baking powder, cinnamon, baking soda, and salt together in a bowl until thoroughly combined. Set aside.
- Combine butter and sugar in a bowl and beat using an electric mixer until light and fluffy. Beat in egg and vanilla extract until thoroughly combined. Mix in melted chocolate until thoroughly incorporated. Stir in 1/2 of the dry ingredients, mixing until just combined. Mix in buttermilk. Stir in remaining dry ingredients, mixing until just combined.
- Use a medium cookie scoop to drop rounded balls of dough 1 1/2 inches apart on the prepared baking sheets.
- Bake in the preheated oven until cookies are just set, 8 to 10 minutes. Do not overbake. Remove from the oven and allow cookies to cool slightly on the baking sheets. Do not remove cookies from the baking sheets.
- Combine butter, heavy cream, cocoa powder, vanilla extract, and salt in a saucepan set over low heat. Whisk until butter is melted and frosting is smooth and combined. Mix in powdered sugar 1 cup at a time, whisking thoroughly after each addition. Keep whisking over low heat until frosting is smooth and shiny, 1 to 2 minutes.
- Remove chocolate frosting from heat and immediately pour approx 1 to 2 tablespoons over each cookie while still warm. Use the back of a spoon to gently smooth out frosting as needed. Allow cookies to cool and frosting to set completely before gently removing from the baking sheets.

- Press the four hard-boiled egg yolks through a sieve and set aside.
- Put the first four ingredients into food processor.
- Cut cold butter into pieces and add to the flour mixture. Mix in food processor until pea sized clumps are formed.
- Add hard-boiled and raw egg yolks and mix until large clumps are formed. Don't overmix dough. Take dough out of food processor and knead a few times to form the dough. Wrap dough in foil and put in the fridge for at least 15 minutes.
- Meanwhile preheat oven (390 F, 200 C). Grease a baking tray.
- Take dough out of the fridge and divide into portions you can handle. Knead the dough a few times.
- Flour the workspace and the dough very lightly and roll out thin (like a back of a knife) using a rolling pin.
- Cut out cookies using cookies forms. To make the terrace cookies you need a "large", a "medium" and a "small" cookie form of the same shape. If you don't have cookie forms in different sizes, you can cut out cookies with a knife.
- Bake cookies for 7-10 minutes. Baking time depends on your oven. Cookies should be lightly brown (don't overbake them).
- Let cool cookies completey on a cooling rack.
- Meanwhile heat up the jam on low heat so that it gets a little more fluid.
- Make the terrace cookies: put a little of the jam on the underside of the medium sized cookie and put on the large one. Put a little jam on the small cookie and put on the medium one. Dust with caster sugar.
- Store cookies in an airtight cookie box.
- NOTE: The number of cookies depends on the size of your cookie forms and how thin you roll out the dough. So my number is just a vague guess.
- NOTE: Baking/cooking time is given for one baking tray.

- Beat the butter at medium speed with an electric mixer until creamy; gradually add the sugar, beating well. Add the eggs 1 at a time, beating until blended after each addition. Add the vanilla, beating until blended.
- Combine the flour, baking soda and salt; gradually add the flour mixture to the butter mixture, beating at low speed until blended.
- Divide the dough in half; wrap each portion in plastic wrap and refrigerate 1 hour.
- Heat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Roll half of the dough out to 1/4-inch thickness on a floured surface. Cut out cookies with a 2 1/2-inch round cutter, and place 1 inch apart on the prepared baking sheets. Bake until the edges begin to brown, 10 to 12 minutes, rotating the sheets and switching their positions halfway through baking time. Let cookies stand on baking sheets 5 minutes. Transfer to wire racks to cool. Repeat procedure with remaining dough.
BARBARA'S TEA CAKES (COOKIES)
A dear friend shared this recipe with me many years ago. The recipe became a favorite & I have used it for everything over the years. It has made it way to many a Girl Scout mtg, school party, potluck, etc. Tea Cakes became my family's favorite cookie at the holidays. It isn't Christmas without a platter of these & a bag for everyone to take home. They are good plain and sweeter with the glaze & icing.

Steps:
- Cream together sugar & shortening until fluffy.
- Add eggs & vanilla. Mix well.
- Sift dry ingredients together.
- Add alternately to mixing bowl with the milk.
- Beat until well mixed.
- Dump onto lightly floured surface & knead until dough is smooth.
- Place in sealed bag or covered bowl. Chill several hours.
- Preheat oven to 350 degrees.
- Roll dough on floured surface taking care to not add too much flour. The thinner the cookie the crispier it will be. I prefer them softer so leave my dough about 1/4-1/3 inch thick.
- Cut as desired. Place on ungreased cookie sheets with room to expand. Rolling the scraps together take care to not overwork the dough. The additional flour makes the cookies tougher.
- Bake approx 10 minutes or until done & lightly brown. They should still be very white.
- Cool a few minutes & then remove to cookie racks to finish cooling before decorating.
- Glazing; Sift the powdered sugar to remove all lumps. Stir in the vanilla & the milk a tablespoon at a time. Whisk together until the desired consistency is reached. To use as a glaze I make it about the thickness of pancake batter. It is NOT spreadable like a frosting. Color as wanted to provide the background color.
- Lay the cookies as close as possible on wax paper. Spoon the glaze over the cookies sparingly. Use the spoon to smooth the glaze to the edges of the cookies. Let dry.
- If more decorating is planned the glaze does support both buttercream & royal icings.
LIGHT AND CHEWY CAKE COOKIES

- Preheat oven to 375 degrees F (190 degrees C). Spray cookie sheets with non-stick cooking spray.
- Mix ingredients in the order given. Drop by tablespoons onto cookie sheets about 2 inches apart.
- Bake for 3 1/2 to 4 minutes, then switch racks and bake another 3 1/2 to 4 minutes. Remove from oven and let cool on racks.
