HOW TO MAKE BEEF SATAY
With grilling season still in full swing, you can never have enough new and exciting ways to enjoy beef. This is the main course-size version of a fabulous Thai appetizer, strips of beef marinated in Asian spices, skewered, and grilled for a truly amazing combination of flavors. I think you should try this very soon.

Steps:
- Place ginger, garlic, onion, brown sugar, fish sauce, vegetable oil, soy sauce, coriander, cumin, turmeric, and cayenne pepper into a mixing bowl; whisk into a smooth marinade.
- Bruise lemon grass by hitting it lightly several times with the back of a large chef's knife; mince the lemon grass and add to the marinade.
- Cut beef sirloin into strips about 2 1/2 inches long and 1/8 inch thick. Thoroughly mix the beef into marinade until all beef strips are completely coated, about 1 minute. Cover bowl with plastic wrap and marinate in refrigerator for 2 to 4 hours.
- Preheat an outdoor grill for high heat and lightly oil the grate.
- Remove beef from marinade and shake off excess marinade. Thread 1/4 the meat onto each metal skewer.
- Arrange skewers on the preheated grill and cook until the meat stops sticking to the grill, about 1 to 2 minutes. Flip skewers over onto other side and cook until meat is well browned and shows grill marks, 2 to 2 1/2 minutes. Turn onto first side again and cook until meat is still slightly pink, 2 more minutes. Transfer to a platter and let skewers rest about 2 more minutes before serving.

CHICKEN SATAY WITH PEANUT SAUCE
Perfectly grilled chicken satay skewers in the most flavorful marinade. Served with THE BEST creamy peanut sauce ever!!!

- To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside. In a medium bowl, combine coconut milk, soy sauce, curry powder, turmeric, garlic, ginger, brown sugar and fish sauce. In a gallon size Ziploc bag or large bowl, combine chicken and coconut milk mixture; marinate for at least 2 hours to overnight, turning the bag occasionally. Drain the chicken from the marinade, discarding the marinade. Preheat grill to medium high heat. Thread chicken onto skewers. Brush with canola oil; season with salt and pepper, to taste. Add skewers to grill, and cook, turning occasionally, until the chicken is completely cooked through, reaching an internal temperature of 165 degrees F, about 12-15 minutes. Serve immediately with peanut sauce.
BEEF SATAY WITH A PEANUT DIPPING SAUCE

- Place the beef strips in a medium-sized bowl and pour the teriyaki sauce over them. Add 1 tablespoon of ginger, 1 tablespoon garlic and the salt to the bowl and stir to combine. Marinate, refrigerated, while you make the dipping sauce. In a small bowl, combine the remaining ginger, peanut butter and coconut milk in a small bowl and whisk together. Add the sesame oil, soy sauce, brown sugar, lime juice, fish sauce, cayenne pepper and 1 teaspoon garlic to the bowl and whisk to combine. Place the sauce in a serving bowl and garnish with the cilantro and chopped peanuts. To serve the satays, set-up a Hibachi or indoor grill on the dining table with the carrots, celery and shiso around the grill. Remove the beef strips from the refrigerator and use skewers to thread the meat. Have your guests grill the satays themselves over the grill, about 30 seconds to 1 minute on each side for medium-rare. Serve, with the dipping sauce and veggies on the side.

AIR FRYER CHICKEN SATAY WITH DIPPING SAUCE
Satay is a Southeast Asian dish of skewered and grilled meat, in this case, chicken, served with a sauce. It is a regional dish, with different flavors in different areas. This recipe is a very American version of chicken satay, done in the very American air fryer! Please note: different brands and sizes of air fryers will affect the cooking time and the number of batches.

- Combine coconut milk, coconut aminos, ginger, fish sauce, garlic, curry powder, turmeric, cumin, coriander, salt, and pepper in a gallon-sized resealable bag. Add chicken pieces. Squeeze out most of the air, seal, and gently squeeze the chicken pieces until all are coated with marinade. Refrigerate, turning the bag occasionally, for at least 4 hours, and up to 24 hours.
- Prepare dipping sauce 1 hour before cooking the chicken so flavors will have time to blend. Stir together teriyaki sauce, cashew butter, orange juice, garlic, and cayenne pepper in a small bowl. Refrigerate, tightly covered, until ready to serve.
- Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
- Using a skewer accessory rack, thread chicken pieces on each skewer and place on the rack.
- Put the rack in the air fryer basket and air fry for 8 minutes. Carefully turn each skewer, and continue cooking for an additional 8 minutes. Repeat with remaining chicken. Chicken is done when an instant-read thermometer inserted into the center reads 165 degrees F (74 degrees C).
- Sprinkle chopped cashews on top of the dipping sauce. Place skewers on top of hot cooked rice, with the dipping sauce. Garnish with cilantro sprigs.
