2 cups rice wine vinegar
2 cups sugar
1/4 cup soy sauce
1/2 teaspoon salt
3 tablespoons chili-garlic sauce (to taste)
2 tablespoons garlic, chopped
1 tablespoon ginger, finely chopped

Steps:

  • Heat vinegar and sugar in a sauce pan over high heat until sugar dissolves, about 3 minutes.
  • Add soy sauce and salt.
  • Stir. Continue to cook until sauce slightly thickens.
  • Remove from heat and stir in garlic and chili sauce.

This is the base for many Thai sauces I'll be posting.... Make some up and keep it on hand, it'll keep in your refrigerator in a tightly closed jar for about half a year.

3/4 cup white vinegar

Steps:

  • Combine all ingredients in a small saucepan.
  • Heat on medium-low heat, stirring until all ingredients have dissolved/combined.

1 green onion, with top
1 tablespoon cornstarch
2 tablespoons rice vinegar
3/4 cup water
1/4 cup brown sugar
1/2 teaspoon red pepper flakes
2 tablespoons finely grated turnips

Steps:

  • Finely chop white part of green onion.
  • Cut the green top into thin 1-inch strips for garnish.
  • Combine cornstarch and vinegar in a small bowl, mixing well; set aside.
  • Combine water, brown sugar, red pepper flakes and chopped green onion in a small saucepan; bring to boil.
  • Stir in cornstarch mixture; return to boil and cook for 1 minute or until sauce is clear and thickened. Cool.
  • Sprinkle with turnip and reserved green onion strips just before serving.

3 tablespoons fish sauce
2 tablespoons sugar
1 tablespoon white vinegar or 1 tablespoon cider vinegar
1/2 teaspoon salt, to taste
2 tablespoons vegetable oil
1 tablespoon chopped garlic
8 ounces boneless skinless chicken breasts, cut into 1-inch chunks (or chicken thighs)
1 cup small cauliflower floret
1/2 cup coarsely chopped onion
2 tablespoons water
1/2 cup cubed cucumber (1/2 inch cubes)
1/2 cup halved cherry tomatoes

Steps:

  • In a bowl, combine fish sauce, sugar, vinegar and salt; stir well and set aside.
  • Heat a wok or a large deep skillet over high heat.
  • Add oil and swirl to coat pan.
  • Add garlic and toss well, until fragrant, about 15 seconds.
  • Add chicken and spread into a single layer.
  • Cook, until edges turn white, about 1 minute; toss well.
  • Add cauliflower florets and onion and toss well.
  • Add water and cook, tossing once or twice, until cauliflower is tender, about 2 minutes.
  • Add fish sauce mixture and toss well.
  • Cook, undisturbed, until chicken is cooked through, about 1 minute more.
  • Add cucumber chunks and cherry tomatoes.
  • Give one more good toss to mix everything well.
  • Transfer to a serving plate; serve hot or warm.
  • May serve over hot cooked rice.
