- Add the baking powder and then the flour to the yolk mixture.
- Beat just till blended.

Steps:
- Preheat oven according to box instructions.
- Mix cake according to box instructions adding 1/2 tsp of coconut extract to cake ingredients.
- Bake according to pan size and cool on wire rack for 5 minutes.
- Whisk the Coconut Milk, condensed milk and remaining 1/2 tsp of coconut extract together.
- While cake is still warm, poke holes with thin bamboo skewer, or long tonged fork, in even rows across top.
- If making a layer cake poke holes in both layers. (Tips: We thought the thin bamboo skewer made the best holes. First dip skewer into coconut milk mixture to prevent cake from being pulled out of holes, then poke cake.).
- Using a liquid measuring cup slowly pour 2 cups of coconut mixture into all holes, and across the cake.
- Cover and refrigerate until completely chilled.
- Save remaining coconut sauce for pancakes, it makes a delicious syrup.
- Frost 9" by 13" cake with favorite topping or whipped cream and sprinkle with coconut flakes.
- Refrigerate.
- If making layer cake unmold carefully and, using 2 wide spatulas, transfer first layer of cake to dish.
- Frost.
- Carefully layer second cake on top.
- Frost, sprinkle with flakes and refrigerate until cake is to be served.

SIMPLY THE BEST COCONUT CAKE
Incredibly moist and sweet with a delightful coconut taste that's not overwhelming, this is the best coconut cake ever. Each bite combines a cold and creamy filling, a soft cake, and a thick, sweet frosting--it melts in your mouth! And it looks fancy, like you spent all day making it, but it's actually super easy and approachable.

Steps:
- Preheat oven to 350 degrees F (175 degrees C), or 325 degrees F (165 degrees C) for coated pans. Spray two 8-inch round cake pans with cooking spray.
- Stir sugar, frozen coconut, and sour cream for filling together in a medium bowl until well combined. Set aside in the fridge until ready to use.
- Combine cake mix, pudding mix, water, oil, eggs, egg whites, and vanilla for cake in the bowl of a stand mixer fitted with a whisk attachment. Blend on medium speed for 3 minutes, scraping down the sides of the bowl as necessary. Pour batter into the prepared pans.
- Bake in the preheated oven until golden brown and a toothpick inserted into the center comes out clean, about 25 minutes. Remove from the oven and cool in the pans for 5 minutes, then invert onto a parchment-lined cooling rack to cool completely, about 30 minutes.
- Use a large, serrated knife to cut each cake layer in half lengthwise; you will have 4 pieces. Flip top pieces so all cut sides are facing up. Stack layers and filling on a serving platter as follows: 1 bottom layer, 1/3 of the filling, 1 top layer, 1/3 of the filling, remaining bottom layer, remaining filling, remaining top layer. Cover and chill, 30 minutes to overnight.
- Combine sugar, corn syrup, egg whites, water, vanilla, and cream of tartar for frosting in a large heat-proof bowl; stir until well combined. Place the bowl over a double boiler and whisk using an electric hand mixer until thick and glossy, about 7 minutes. Take care that the double boiler doesn't reach higher than a slow simmer.
- Spread frosting over cooled cake immediately and sprinkle with shredded coconut.

- Step 1: Start by adding 100g of coconut flakes, 100g of sugar, 80g of glutinous flour and 40g of potato flour to a mixing bowl then stir everything together briefly.
- Step 2: Next add 120g of coconut cream and 2 eggs to the mix, and mix everything together thoroughly until it as smooth as you can get it.
- Step 3: Now pour the mixture into a non stick baking dish – try to use a dish thats small enough that the mixture will be around 1/2 inch deep, it will rise a bit when we cook it, but the cake shouldn’t be too thick.
- Step 4: Now place the cake in the oven, and cook at around 220 degrees celsius for 20 minutes. After 20 minutes take the cake out of the oven and brush an egg yolk over the top of the cake. Then put the cake back in the oven for another 10 to 15 minutes until it is golden brown on top. Check often to ensure that it doesn’t burn! Then just allow the cake to cool for about 15 minutes, then you can cut it up and eat it!
