1/4 cup fresh lemon juice
1/4 teaspoon garlic clove, chopped
2 tablespoons fish sauce
3 tablespoons roasted peanuts, ground
1/4 cup sugar
1/4 cup water
1 dash cayenne pepper
1 teaspoon fresh cilantro, chopped
1 -2 red chile, sliced
2 -3 tablespoons onions, chopped

Steps:

Cook the sugar and water over medium heat until it becomes a light syrup.
Stir in the remaining ingredients; let cool to room temperature.

1/4 cup rice vinegar
1/4 cup olive oil
1 tablespoon sesame oil

Steps:

Place all ingredients in a jar with a tight-fitting lid; shake well. Refrigerate until serving. Shake dressing again just before serving.

Start by hard boiling the eggs. You can use your preferred method, but probably the easiest is to put the eggs in a pan, cover with cold water at least 1in/2.5cm over the eggs and bring to the boil. Once the water boils, turn off and leave the eggs in the water for 10-12min then drain and run under cold water to stop them cooking. When cool, carefully peel the eggs.
As the eggs are cooking, roughly chop the lettuce (and other greens, if using) and divide between 2-3 plates, along with the watercress.
