- In a bowl, combine egg, 1/4 cup barbecue sauce, cornflake crumbs and salt. Add beef and mix well. Shape into four oval patties, about 3/4 in. thick. , Place in a greased 11x7-in. baking pan. Spread with remaining barbecue sauce. Bake, uncovered, at 375° for 25-30 minutes or until meat is no longer pink and thermometer reads 160°; drain.

SPICY SAUSAGE MEATLOAF PATTIES WITH ITALIAN BARBECUE SAUCE
I was making my annual Christmas Pasta for the holiday and my mom and I bought duplicate meats so we had lots of leftover hot and sweet sausage and ground beef. Well, the next day, this recipe was born.

- Preheat oven to 425 degrees F.
- Heat a small skillet over medium heat with 2 tablespoons extra-virgin olive oil. When the oil is hot, saute the red pepper, half the onions, celery and carrots together, 5 minutes, season with salt and pepper then remove to a plate to cool.
- Mix ground beef and sausages with egg, bread crumbs, cheese, and cooled vegetables. Form 4 large oval shaped patties no more than 1 1/4 inches thick then drizzle with extra-virgin olive oil. Place in the oven on a cookie sheet and bake 17 to 18 minutes, until cooked through.
- Heat a medium sauce pot over medium high heat. Add a drizzle of EVOO to the pan and the pancetta. Let the pancetta crisp up a bit and render fat, then add onions and garlic and cook until tender, 8 to 10 minutes. Add a splash of red wine to deglaze the pan. Stir in the beef stock and tomatoes and season sauce heavily with coarse black pepper. Add Worcestershire and hot sauce and reduce heat to warm.
- Serve meatloaves with Italian barbecue sauce on top and green salad alongside.

- Preheat broiler. Spray broiler pan and rack with non-stick cooking spray. In a medium bowl, beat egg. Add beef, bread, onion, capers, mustard, ketchup, Worcestershire sauce, salt and pepper and mix well. Shape into 3-inch patties. Place on broiler rack. Broil 6 inches from heat source for 10 minutes for medium or until desired doneness. (It is not necessary to turn burgers over during cooking.) Serve with steak sauce.

- In a large bowl, combine the egg, bread crumbs, salt and pepper. Crumble beef over mixture and mix well. Shape into four patties. In a large skillet, brown patties on both sides. Remove and set aside; drain drippings., In the same skillet, combine the remaining ingredients. Return patties to the skillet. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes or until a thermometer reads 160°. Freeze option: Cool beef patties in sauce. Freeze in freezer containers. BEEF PATTIES WITH MUSTARD CREAM SAUCE

- Shape beef into 6 oval patties. Melt butter in large skillet and add oil. Heat until foaming. Add green onions and saute until softened; stir in garlic and saute for 30 seconds. Add beef patties and cook to desired degree of doneness. Season with salt and pepper. Set beef patties aside to keep warm on a hot platter.
- In same skillet, saute mushrooms until limp and add to the warm beef patties.
- To prepare Mustard Cream Sauce, deglaze pan with dry white wine. Reduce volume by half. Add Dijon mustard, heavy cream, tomatoand capers. Heat slowly until hot but do not boil.
- Pour Mustard Cream Sauce over beef and mushrooms. Sprinkle parsley over top to garnish, if desired.
- Good served over hot buttered noodles.

BEEF WITH MUSHROOMS AND CAPERS

- Dry the pieces of beef and dust them lightly with flour. Heat one tablespoon of the butter and one tablespoon oil in a heavy three-quart casserole. Brown the meat over medium-high heat without crowding. Add a little more oil if necessary. Remove the beef from the casserole and lower the heat.
- Saute the onion in the casserole until tender. Add the garlic and saute another minute. Stir in the stock and vermouth, scraping the bottom of the casserole. Return the beef and any juices it might have released to the casserole. Add the thyme and rosemary. Bring to a simmer, season to taste with salt and pepper and cover. Adjust heat so the stew simmers gently. Simmer for 1 1/2 hours.
- Heat the remaining tablespoon of butter and 1 tablespoon of oil in a skillet and saute the mushrooms quickly over very high heat until they are lightly browned. Drain them and add them to the casserole. Continue cooking the stew for another 15 minutes or so, until the beef is tender. If you are making this stew in advance, complete it up untll this point, then finish step four just before serving.
- Combine the cream and mustard. Stir a little of the hot sauce from the stew into this mixture, then add the cream mixture back to the casserole. Add the capers, recheck seasonings, bring the sauce to a simmer once again and then serve.

- Preheat the oven to 400 degrees F (200 degrees C).
- Crumble the ground beef into a large skillet over medium-high heat. Cook until evenly browned. Add the onion, bell pepper, corn and tomatoes. Cook and stir until vegetables are tender. Drain excess grease, and stir in the barbeque sauce. Spread the beef mixture in an even layer in a 9x13 inch baking dish.
