The Best Instant Pot Cilantro Lime Rice image

This is the Best Instant Pot Cilantro Lime Rice recipe ever! An easy side dish that uses simple ingredients and is done in less than 20 minutes leaving you with flavorful fluffy rice every time.

2 cups long grain white rice
1 tablespoon grape seed oil or vegetable oil
2 cups vegetable broth
3/4 cup water
4 tablespoons juice of lime, divided
1/4 teaspoon smoked paprika
1/2 teaspoon cumin
Zest of one lime
1/2 cup of fresh chopped cilantro
1/2 teaspoon salt

Steps:

  • To the instant pot, add rice and grape seed oil. Using a wooden spoon, stir to coat the rice with the grape seed oil. (this will help it not stick to the bottom of the pan.)
  • Then add the broth, water, 2 tablespoons of lime juice, smoked paprika and cumin to in the Instant Pot. Lock the lid in place and push the "Rice" button on the Instant Pot. Set for 12 minutes. When the Instant Pot finishes it's cycle, do a natural release for 5 more minutes. Then do a quick release for the remainder of the pressure. Carefully remove the lid.
  • Transfer the rice to a large bowl. Fluff the rice with a fork. Then add 2 tablespoons of lime juice, lime zest, chopped cilantro, and salt. Stir and fluff the rice again with a fork. Serve warm.

1 tablespoon butter
1 cup long-grain rice
1 cup water
½ cup chicken broth
¼ cup lime juice
½ teaspoon salt
1 lime, zested
4 wedges lime
1 tablespoon chopped cilantro, or to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter. Once butter is melted and hot, stir in rice. Cook, stirring occasionally, until rice becomes opaque, about 2 minutes. Stir in water, chicken broth, lime juice, and salt. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes more. Unlock and remove the lid. Stir in lime zest and fluff rice with a fork.
  • Serve immediately with lime wedges, garnishing with chopped cilantro.

2 cloves garlic, minced
2 tbsp. lime juice (divided)
3 cups chicken broth
2 tsp sugar
3 tablespoon chopped cilantro

Steps:

  • In the bowl of the Instant Pot, combine rice, butter, garlic, 1 Tablespoon lime juice, chicken broth, and sugar. Place the lid on top and set the Instant Pot to manual high pressure for four minutes. When the timer goes off, let the pressure naturally release for 10 minutes. Stir in cilantro and last tablespoon of lime. Fluff and enjoy!
