THE BEST INSTANT POT CILANTRO LIME RICE
This is the Best Instant Pot Cilantro Lime Rice recipe ever! An easy side dish that uses simple ingredients and is done in less than 20 minutes leaving you with flavorful fluffy rice every time.

Steps:
- To the instant pot, add rice and grape seed oil. Using a wooden spoon, stir to coat the rice with the grape seed oil. (this will help it not stick to the bottom of the pan.)
- Then add the broth, water, 2 tablespoons of lime juice, smoked paprika and cumin to in the Instant Pot. Lock the lid in place and push the "Rice" button on the Instant Pot. Set for 12 minutes. When the Instant Pot finishes it's cycle, do a natural release for 5 more minutes. Then do a quick release for the remainder of the pressure. Carefully remove the lid.
- Transfer the rice to a large bowl. Fluff the rice with a fork. Then add 2 tablespoons of lime juice, lime zest, chopped cilantro, and salt. Stir and fluff the rice again with a fork. Serve warm.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter. Once butter is melted and hot, stir in rice. Cook, stirring occasionally, until rice becomes opaque, about 2 minutes. Stir in water, chicken broth, lime juice, and salt. Close and lock the lid.
- Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, about 5 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes more. Unlock and remove the lid. Stir in lime zest and fluff rice with a fork.
- Serve immediately with lime wedges, garnishing with chopped cilantro.
