BUTTERMILK CHICKEN
Served with slaw or potato salad, this chicken dinner will feel like an indoor picnic. Any leftover chicken will make a great school lunch.

- Preheat oven to 400 degrees. Generously rub a baking sheet with oil. In a food processor, pulse bread until it turns into coarse crumbs.
- In a large bowl, stir together buttermilk, hot-pepper sauce, 3/4 teaspoon salt, and 1/2 teaspoon pepper. In a separate bowl, mix breadcrumbs, Parmesan, thyme, and 1/8 teaspoon pepper.
- Place the chicken in the buttermilk mixture, turning to coat evenly. Working with one piece at a time, remove chicken from liquid, letting excess drip back into bowl; dredge in the breadcrumb mixture, turning to coat evenly. Place coated chicken pieces on prepared baking sheet.
- Bake until chicken is golden brown, about 35 minutes.
BUTTERFLIED CHICKEN WITH THYME, LEMON AND GARLIC
Steps:
- Whisk together the oil, 2 tablespoons of the garlic, 2 tablespoons of the thyme, 1 tablespoon of the lemon zest and 1 tablespoon of onion in a large baking dish. Add the chicken and turn to coat in the oil. Cover and let marinate in the refrigerator for at least 2 hours and up to 8 hours.
- Preheat the grill to medium. Remove the chicken from the marinade and season both sides with salt and pepper. Place the chicken on the grill, skin side down and slowly grill until the fat renders and the skin becomes golden brown and crisp, about 15 minutes. Turn the chicken over, close the cover and continue grilling until just cooked through, about 20 minutes longer. Remove from the grill, loosely tent with foil and let rest 10 minutes before cutting.
- Mix together the remaining garlic, thyme and 1 tablespoon of lemon zest and sprinkle over the cut chicken.
CHEF JOHN'S BUTTERMILK FRIED CHICKEN
I love the tangy tenderization that the buttermilk provides. After the buttermilk soak, dredge the chicken pieces in seasoned flour, and fry them in hot oil until crisp and cooked.

- Toss together chicken pieces, black pepper, salt, paprika, rosemary, thyme, oregano, sage, white pepper, and cayenne in a large bowl to coat.
- Stir in buttermilk until chicken is coated. Refrigerate for 6 hours.
- Combine flour, salt, paprika, cayenne, garlic powder, white pepper, and onion powder in a large shallow dish.
- Remove chicken from the buttermilk and dredge each piece in the seasoned flour. Shake off any excess and transfer to a plate.
- Heat peanut oil in a large Dutch oven to 350 degrees F (175 degrees C). Add all the chicken to the pan and cook for 10 minutes.
- Turn chicken pieces and cook for another 10-15 minutes.
- Remove chicken from the oil and transfer to a cooling rack set over a paper towel lined baking sheet. Let sit for 10 minutes before serving.

BUTTERMILK BARBECUE CHICKEN
Buttermilk is a very popular marinade for fried chicken, but for whatever reason, it isn't often used with other chicken cooking methods. Which is kind of surprising, especially when you taste just how effective it is for something like this beautiful barbecued chicken. Yogurt, a very similar product, is quite popular in grilled chicken marinades. So, why not use buttermilk? This goes great with coleslaw, potato salad, and a squeeze of lemon.

Steps:
- Whisk buttermilk, brown sugar, cider vinegar, garlic, thyme, pepper, paprika, cumin, cayenne, and salt together in a bowl.
- Trim wing flats from the chicken. Cut along both sides of the backbone from the tail to the neck; remove backbone. Make a 1/4-inch-deep cut through the piece of cartilage in the center. Open up both sides to reveal breastbone; lift out. Cut chicken in half through the center line.
- Place both halves in a resealable zip-top bag and pour in the buttermilk marinade. Place the bag in a bowl to catch any leaks. Press air out and seal. Marinate in the fridge for 6 to 18 hours.
- Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken from marinade and transfer onto a paper towel-lined plate. Blot off excess marinade.
- Place chicken on the grill cut-side down, skin-side up; cover and cook for 20 minutes.
- Flip chicken over and continue grilling for 7 to 10 minutes. Flip once more and grill until no longer pink in the center, about 15 minutes more. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C).

I created this recipe years ago after one of our farmers market customers, a chef, shared the idea of marinating chicken in buttermilk. The chicken is easy to prepare and always turns out moist and delicious! ROAST CHICKEN WITH GARLIC AND THYME

- Preheat oven to 450 degrees. Let chicken stand at room temperature for 30 minutes. Rub chicken all over with cut side of garlic. Season cavity with salt and pepper; stuff with garlic halves and thyme. Brush chicken with butter; generously season with salt and pepper. Transfer chicken to a rimmed baking sheet. Cross legs, and tie with kitchen twine.
- Roast chicken, basting after 30 minutes, until skin is crisp and golden and an instant-read thermometer inserted into thickest part of thigh reaches 165, about 1 hour. Let stand for 10 minutes before carving. Garnish with thyme.
BUTTERMILK HERB FRIED CHICKEN
Another recipe found in my Land O Lakes Cookbook. The tang of buttermilk and the flavor of herbs blend together for a well-seasoned fried chicken.

- Combine all coating ingredients in 9-inch pie pan. Dip chicken in buttermilk, then in coating mixture.
- Melt butter in 12-inch skillet until sizzling; add chicken. Cook over medium-high heat, turning occasionally, until chicken is golden brown and fork tender (20 to 25 minutes).
- Buttermilk Substitute: Use 1 teaspoon vinegar or lemon juice plus enough milk to equal 1/3 cup. Let stand 10 minutes.
- TIP: If chicken breasts are too thick, pound them to 1/2-inch thickness using a meat mallet.
- TIP: Reduce heat if chicken browns too quickly.
BUTTERMILK-BRINED FRIED CHICKEN WITH SAGE
There is no true definition of buttermilk, according to Anne Mendelson, the author of "Milk." Originally it was the liquid that separated from churned butter. In warm climates, like the American South or India, it refers to sour milk, since unrefrigerated milk turns within hours. Today most buttermilk is made from milk to which cultures of lactic-acid bacteria are added.

- Twenty-four hours before cooking, prepare the brine: In a large bowl, whisk 1/4 cup plus 2 tablespoons water with the remaining brine ingredients until the salt has dissolved. Submerge the chicken pieces in the brine. Cover and refrigerate. (To save space, you can also put the chicken and brine in a large sealable bag.)
- When ready to cook, prepare the breading by whisking together 2 cups of the flour and 2 teaspoons kosher salt in a medium bowl. In a separate medium bowl, whisk the eggs to break them up, then whisk in the buttermilk. In a large bowl, whisk together the remaining 2 cups of flour, the cornmeal, sage, mustard, paprika, thyme and 1 tablespoon kosher salt.
- Dredge the chicken in the plain flour, then in the buttermilk, then in the cornmeal mixture, taking care not to let the breading get too thick. Let sit at room temperature for 20 minutes.
- Meanwhile, set a large 12-to-14-inch cast-iron skillet over medium-high heat and fill with oil to 11/2 inches below the top. Heat until the oil reaches 325 degrees. Working in batches, fry the chicken pieces, turning them 3 or 4 times to create an even, dark-golden crust. Cook until the internal temperature reaches 160 degrees, about 10 minutes. (Place a splatter guard over the pan as you fry.)
