4 to 6 cloves garlic, crushed
1/8 pound pancetta, sliced and chopped
2 tablespoons (2 turns around the pan in a slow stream) extra-virgin olive oil
1 medium onion, chopped
2 pounds escarole, washed and coarsely chopped (2 medium bunches or 1 large bunch)
2 (14-ounce) cans, cannellini beans, drained
1 quart prepared chicken stock or broth
A couple pinches ground nutmeg or fresh grated nutmeg
Coarse salt and black pepper
Shaved Parmigiano-Reggiano, for topping
Warm, crusty bread, for mopping

Steps:

  • In a deep, large, heavy pot over moderate heat, saute garlic and pancetta in extra-virgin olive oil for 3 minutes. Add onions and cook 1 or 2 minutes longer.
  • Add the greens and wilt them down to fit them all in the pot. Add beans, broth, and nutmeg, salt and pepper. Cook over moderate to medium-high heat for 12 minutes, or until greens are no longer bitter. Serve with shaved cheese, bread, and good red wine.

This recipe is adapted from Sarah Copeland's forthcoming book, "Feast" (Chronicle Books).The deep savoriness of tuscan kale, a backyard-garden staple in northern Italy, makes a superb foundation for soups, sides, and vegetarian mains. In this deceptively simple dish (the onions are essentially quick-pickled right in the pan), the orecchiette is practically treated as a condiment. As soon as you sit at the table, stir a few slices of semisoft goat cheese into the hot greens and pasta until they soften. You'll think to yourself, I could live on this stuff.

3 tablespoons extra-virgin olive oil, divided
1 medium red onion, cut into 1/4-inch-thick slices
1/4 teaspoon red-pepper flakes, plus more for serving
1 teaspoon sugar
2 tablespoons red-wine vinegar
Coarse salt
1 pound tuscan kale, stems removed and leaves torn into 3-inch pieces (about 10 cups)
12 ounces orecchiette
2 tablespoons unsalted butter
1/2 cup grated Pecorino-Romano cheese
Freshly grated nutmeg
2 ounces semisoft goat cheese (such as Le Chevrot), for serving

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium heat. Add onion and red-pepper flakes and cook, stirring, until onion is softened, 6 to 8 minutes. Sprinkle with sugar and toss to coat. Add vinegar and cook until completely reduced, about 1 minute. Season mixture with salt and remove from skillet.
  • Add remaining 2 tablespoons oil to skillet and increase heat to medium-high. Add kale in batches and cook, stirring, until greens are wilted and just tender, 4 to 6 minutes. Season with salt. Return onion mixture to pan, stir to combine, and cook until just heated through.
  • Meanwhile, bring a large pot of generously salted water to a boil. Add pasta and cook until al dente. Reserve 1 cup pasta water; drain pasta.
  • Return pasta to pot, along with kale, butter, and Pecorino. Cook over medium heat, stirring and adding enough pasta water to form a light sauce that coats pasta. Add nutmeg to taste and season with salt. Divide among 4 bowls and serve each with a few thin slices of goat cheese on top and red-pepper flakes to taste.

Minestra is a light Italian vegetable soup with plenty of broth. This recipes makes a lovely, full-flavored soup in only 45 minutes.

1/4 cup olive oil
1 onion, chopped fine
2 1/2 cups winter squash, peeled cut into 1/2-inch dice
2 garlic cloves, minced
1 teaspoon fresh rosemary, minced
1 lb tuscan kale, stemmed and coarse chopped
4 cups chicken stock
kosher salt & freshly ground black pepper
1/2 cup ditalini or 1/2 cup tubettini pasta
1 cup canned navy beans, rinsed and drained
shaved parmesan cheese, for serving
garlic, toasts for serving

Steps:

  • In a large pot, heat 2 tablespoons of the oil and add the onion; cover and let sweat, over moderate heat, stirring often, until softened, 4 minutes.
  • Add squash, cover, let cook, stirring occasionally, until the squash is lightly browned in spots (it will not be tender), 5 minutes.
  • Stir in the garlic and rosemary and cook 1 minute; add kale and cook, stirring, until it wilts, 5 minutes.
  • Pour in the stock, cover and simmer until kale and squash are tender, 8 minutes; season with salt and pepper.
  • In the meantime, cook pasta in salted water, according to package directions, until al dente; drain.
  • Add pasta and navy beans to the soup and simmer until the soup thickens slightly, about 5 minutes; stir in the remaining olive oil.
  • Serve in deep bowls, garnished with shaved cheese, and with garlic toasts.
  • NOTE: Will keep in the refrigerator for 3 days. The next day the soup will be thicker and some prefer it this way.

The Italian word minestrone, refers to a large, hearty soup. The soup itself is part of what is known in Italy as cucina povera - literally "poor kitchen," referring to the necessity of creating dishes based on what was available and in season. As it has been passed down through the ages, there is no fixed recipe and lends itself to many variations". One thing I really like about this recipe is the step of boiling the small pasta first, and separate from the soup itself. That way the doesn't get overcooked, or soak up all the broth by the time it's finished cooking.

1 tablespoon oil, for sauteing
1 large yellow onion, chopped
2 carrots, finely chopped
4 garlic cloves, finely minced
1 (15 ounce) can diced tomatoes
1 (15 ounce) can white beans, rinsed and drained (Cannellini, Great Northern, navy)
1 bunch kale, stemmed and coarsely chopped (about 3/4 pound)
2 tablespoons fresh parsley, finely chopped
6 cups vegetable stock (or half stock and half water) or 6 cups water (or half stock and half water)
2 bay leaves
1 cup small shell pasta, cooked (elbow macaroni, shells, etc.)
salt & freshly ground black pepper, to taste

Steps:

  • Heat the oil in a large soup pot over medium heat, and add the onion and carrots.
  • Cook, stirring often, until the onion turns translucent and the carrots glisten, about 7 minutes.
  • Stir in the garlic and cook, stirring, for another minute or so, until the garlic begins to smell fragrant.
  • Add the tomatoes and their liquid and cook, stirring occasionally, for about 10 minutes, until the tomatoes have cooked down a bit.
  • Add the beans, kale, parsley, water, and bay leaves.
  • Bring to a boil, reduce the heat to low, cover partially, and simmer for 20 to 30 minutes, until the flavors are all incorporated and the kale is tender.
  • Add the cooked pasta, and stir to incorporate.
  • Cook for 5 minutes more, tasting and adjusting the salt and pepper as needed, then remove from heat and serve.
