Anne's Fabulous Grilled Salmon image

This is a grilled salmon recipe that is used at the Saint Matthew Parish picnic every year in Seattle, Washington. It works well with any cut of salmon for grilling, however we typically use salmon fillets. Use wild sockeye or king salmon.

1 tablespoon vegetable oil
1 tablespoon soy sauce
1 teaspoon Worcestershire sauce
1 lemon, juiced
½ teaspoon grated fresh ginger root
2 tablespoons honey
⅓ cup chopped fresh basil leaves
1 tablespoon finely chopped shallots
1 (3 pound) salmon fillet, with skin

Steps:

  • Make a pan out of aluminum foil by doubling up layers of foil large enough to hold your fillet. Place the foil onto a cookie sheet. Lay the fillet onto the foil with the skin side down. In a small bowl, stir together the oil, soy sauce, Worcestershire sauce, lemon juice, ginger, honey, basil and shallots. Pour over the salmon and let it marinate while you preheat the grill, about 20 minutes.
  • Preheat a grill for medium-low heat. Slide the foil with the salmon off of the cookie sheet and onto the grill. Cover with the lid and grill the fillet for 10 minutes per inch of thickness, about 20 minutes. Salmon should be able to flake with a fork, but not be too dry. When you serve the salmon, the skin will stick to the foil and your grill will remain clean. Simply slice and use a spatula to scoop the fillet off of the skin to serve.

1 cup butter, cubed
1 cup peach preserves
1 tablespoon lime juice
1 garlic clove, minced
1/2 teaspoon prepared mustard
2 salmon fillets (1 pound each)
1/2 cup chopped peeled fresh peaches or frozen unsweetened sliced peaches, thawed

Steps:

  • In a microwave-safe bowl, combine butter and preserves. Cover and microwave on high for 45-60 seconds. Stir in the lime juice, garlic and mustard until blended. Cool. Set aside 1 cup for basting and serving., Place salmon fillets in a large resealable plastic bag; add remaining peach mixture. Seal bag and turn to coat. Marinate for 20 minutes., Drain and discard marinade. Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Place salmon skin side down on grill rack. , Grill, covered, over medium heat for 5 minutes. Spoon half of reserved peach mixture over salmon. Grill 10-15 minutes longer or until fish flakes easily with a fork, basting frequently. Serve with sliced peaches and remaining peach mixture.

Grilled Wild Salmon with Garlic Scape Pesto and Summer Squash image

Wild salmon tops the list of fish that are high in omega-3 and low in mercury. So swap out farmed salmon, which contains food dyes, for the real thing. Frozen sides of wild salmon offer the best value. Garlic scapes are the young, soft stems and unopened flower buds of hardneck garlic. This variety of garlic tends to be prevalent at farmer's markets. The season for scapes is short-just a few weeks in June-so if you can't find them you can substitute scallions or baby leeks.

Coconut oil, for the grill
2 cups garlic scapes
2 cups packed kale leaves
1/2 cup olive oil
1/2 cup grated Parmesan or pecorino Romano cheese
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
4 wild salmon fillets, skin intact (1 pound)
1 pound yellow squash, sliced into 1/4-inch strips

Steps:

  • Oil a grill with coconut oil and preheat the grill over high heat.
  • Put the garlic scapes, kale, olive oil, cheese, salt, and pepper in a food processor or blender and process until finely chopped. Divide the pesto in half and reserve one- half for another use.
  • Place the salmon on the grill, flesh side down, and grill 3 to 4 minutes. Turn the salmon, and place the squash slices on the grill. Brush the pesto over the salmon and the squash.
  • Grill the squash, turning it occasionally, for 4 to 5 minutes until cooked through. Grill the salmon 4 to 5 minutes until the skin crisps but the center is still medium. Transfer to a plate and serve immediately.

1/2 large cucumber peeled, de seeded, and chopped-medium
1/2 large red, or yellow bell pepper chopped-medium
1-1/2 Tbs. capers unwashed
8 pitted Kalamata olives chopped-medium
1/3 cup red onions chopped-fine
1 medium serrano chile, seeded, veined, and chopped-fine
1/2 cup halved grape tomatoes
juice of one lime
2 Tbs. very good extra virgin olive oil, first cold press
1 large fresh peach, peeled, pitted, and chooped-medium

Steps:

  • Mix all ingredients except salmon together and let meld for at least one hour covered in the fridge. Heat gas grill on high till 450F. While preheating grill remove salsa from fridge to room teperature. Grill salmon approximately 4 minutes per side starting skin side down, skin will remain on cooking grid when turned with a stanless spatula inserted gently between skin and flesh discard skin. Cook fillets till done to your liking. Remove from grill, plate, and add a generous helping of peach salsa.....Yumulius!
