STICKY TOFFEE SAUCE

3/4 cup plus 1 tablespoon soft dark brown sugar
2 tablespoons dark corn syrup
3/4 stick unsalted butter
2/3 cup heavy cream
Serving suggestion: Vanilla ice cream

Steps:

  • Put the sugar, syrup and butter in a pan and slowly bring to the boil, allowing the butter to melt and the sugar to dissolve. Let the mixture bubble for a couple of minutes before carefully adding the cream. Cook for another 2 to 3 minutes or until the sauce is thick, sticky and glossy.
  • Serve with a couple of scoops of vanilla ice cream.

Butter, for baking dish plus 1/4 cup, melted
Scant 1/3 cup dark brown sugar, packed
1 cup plus 2 tablespoons self-rising flour
1/2 cup whole milk
1 egg
1 teaspoon vanilla extract
3/4 cup plus 2 tablespoons chopped, rolled dates
3/4 cup dark brown sugar, packed
Approximately 2 tablespoons unsalted butter in little blobs
2 1/4 cups boiling water

Steps:

  • For the cake: Preheat the oven to 375 degrees F and butter a 1 1/2-quart capacity baking dish.
  • Combine the sugar with the flour in a large bowl. Pour the milk into a measuring cup, beat in the egg, vanilla and melted butter and then pour this mixture over the sugar and flour, stirring with a wooden spoon to combine. Fold in the dates then scrape into the prepared baking dish. Don't worry if it doesn't look very full; it will by the time it cooks.
  • For the sauce: Sprinkle the sugar over the cake mixture and dot with butter. Pour over the boiling water (yes really!) and transfer to the oven. Set the time for 45 minutes, though you might find the dessert needs 5 or 10 minutes more. The top of the dessert should be springy and spongy when it's cooked; underneath, the butter, dark brown sugar and boiling water will have turned into a rich, sticky sauce. Serve with vanilla ice cream, creme fraiche or heavy or light cream, as you wish.

This is easy and can be thrown together when you're making other dishes and then cook while you're eating dinner...enjoy--

1/3 cup dark brown sugar, packed
1 cup self-rising flour, plus
2 tablespoons self-rising flour
1/2 cup whole milk
1 egg
1 teaspoon vanilla extract
1/4 cup unsalted butter, melted
3/4 cup chopped rolled dates, plus
2 tablespoons chopped rolled dates (optional...I don't like dates, so I didn't use them)
3/4 cup dark brown sugar, packed
2 tablespoons unsalted butter, in little blobs
2 1/4 cups boiling water

Steps:

  • Preheat oven to 375°F and butter a 1 1/2-quart capacity baking dish (I used a combo of Pam and butter and it worked fine).
  • Combine the sugar with the flour in a large bowl.
  • Pour the milk into a measuring cup, beat in the egg, vanilla and melted buter and then pour this mixture over the sugar and flour, stirring--just with a wooden spoon--to combine.
  • Fold in the dates then scrape into the prepared baking dish.
  • *Don't worry if it doesn't look very full: it will do by the time it cooks*.

  • Pour the boiling water over the whole thing (yes, really!) and transfer to the oven.

2 cups chopped pittted dates
1 cup water
1 teaspoon baking soda
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon ground allspice
1 pinch salt
6 tablespoons butter, softened
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
6 tablespoons butter, cut into 6 pieces
1/2 cup packed brown sugar
1/2 cup heavy cream
2 teaspoons dark rum or 2 teaspoons whiskey

Steps:

  • For the pudding: Preheat oven to 350 degrees and grease a squate 9 inch baking pan. In a small saucepan mix together dates and water, bring to a boil. Add baking soda and stir until the dates begin to break down and mixture thickens slightly, 1 to 2 minutes, set aside.
  • In a medium mixing bowl stir together flour, baking powder, allspice, and salt, set aside. In a large mixing bowl with an electric mixer on medium speed cream butter and sugar until fluffy. Beat in eggs and vanilla.
  • On low speed gradually add flour mixture alternating with date mixture and beat until combined. Pour batter into prepared pan and bake until toothpick comes out with a few moist crumbs attached, about 40 minutes. Let pudding cool in pan on a cooling rack for 10 minutes. Meanwhile make toffee sauce.
  • For the sauce: In a small saucepan mix together butter, sugar, and cream. Cook over medium heat stirring constantly, until sugar dissolves and mixture boils. Reduce heat to low and cook without stirring for 2 minutes. Remove from heat and stir in alchohol.
  • Cut pudding into squares and serve warm with sauce.

  • Combine 1 cup plus 6 tablespoons cream, sugar and butter in heavy large saucepan. Boil over medium-high heat until mixture thickens slightly and is deep golden, stirring constantly, about 10 minutes. Remove from heat; cool 5 minutes. Gradually whisk in 1 cup plus 6 tablespoons cream (mixture will bubble vigorously). Stir over low heat until mixture is smooth. (Can be made 1 day ahead. Chill. Rewarm over low heat until lukewarm, before using.

Steps:

  • Place the chocolate covered toffee bar and chocolate covered crispy peanut butter flavored candy bar in the freezer and let freeze 8 hours or overnight.
  • In a medium bowl, mix together the saltine crackers, graham crackers, and melted butter. Press the mixture into the bottom of a 9x13 inch pan to make a crust. Chill crust in the refrigerator while you make the filling.
