ORZO PASTA WITH TOMATOES, BASIL AND PARMESAN



Orzo Pasta with Tomatoes, Basil and Parmesan image

We're in love with this easy orzo pasta recipe. There's quick-to-cook orzo, tomatoes, basil, parmesan, and lots of garlic. Get this meal on the table in less than 20 minutes!

Number Of Ingredients 8

8 ounces dry orzo pasta, substitute with any pasta variety
3 tablespoons olive oil
1 tablespoon minced garlic (3 to 4 cloves)
1/4 to 1/2 teaspoon crushed red pepper flakes, depending on how spicy you like the pasta
12 ounces tomatoes, chopped (2 medium or 12 to 15 cherry tomatoes)
1/2 cup shredded parmesan cheese, plus more for serving
1 cup basil leaves, torn into pieces
Salt and fresh ground black pepper, to taste

Steps:

  • Bring a large pot of salted water to a boil, add the orzo and cook according to the package directions - usually 8 to 10 minutes. Before draining the cooked orzo, reserve 1/3 cup of the pasta water (we use this to make the sauce).
  • Add olive oil, garlic, and red pepper flakes to a large, deep skillet. Turn to medium heat. When the oil bubbles around the garlic, add the cooked orzo pasta, tomatoes, basil, and parmesan cheese.
  • Pour in two tablespoons of the reserved pasta water and cook, stirring often, for one minute. Over the minute, the sauce should begin to coat the pasta. If it seems dry, add a splash more of the reserved pasta water and cook a few more seconds. Taste for seasoning and adjust with a bit of salt if needed.
  • Serve with extra basil, parmesan, and fresh ground black pepper on top.

Steps:

  • Simmer 1 cup orzo in a saucepan with 2 1/2 cups water, 2 tablespoons olive oil, 1 teaspoon dried mint, 1 teaspoon salt, 1/2 teaspoon paprika and 2 strips lemon zest, stirring occasionally, until the orzo is tender, 12 to 15 minutes. Let cool slightly. Stir in 2 chopped scallions, the juice of 1 lemon, and salt to taste.

- 1 tablespoon minced garlic
- 1 tablespoon olive oil
- 1 cup dry orzo pasta
- 2 cups low sodium chicken broth
- 1 cup quartered cherry tomatoes
- 2 tablespoons minced fresh parsley
- 1 tablespoon minced lemon zest
- salt and black pepper to taste

Steps:

  • sauté garlic and oil in a pan over medium heat until fragrant, one minute at orzo; stir to coat with oil and cook two minutes.
  • Stir in broth, cover, and reduce heat to low. Simmer until orzo is tender and most of the liquid is absorbed, 10 to 15 minutes.
  • Add tomatoes, parsley and zest. Season with salt and pepper. Serves four

ORZO AND TOMATO SALAD IN LEMON CUPS

1 pound orzo
2 cloves garlic, chopped
2 lemons, juiced
1 cup extra-virgin olive oil
2 cups cherry tomatoes, halved
1/4 cup roughly chopped Italian parsley leaves

Steps:

  • For the salad: In salted, boiling water, cook the orzo until al dente. Strain and cool. Whisk together the garlic, lemon juice, and extra-virgin olive oil. In a large bowl, toss the orzo together with the tomatoes, parsley, and olive oil mixture. Season, to taste, with salt and fresh ground pepper.
  • For the lemon cups: Cut a small piece off both tips of the lemon. Make sure the cut does not expose any flesh, only pith. Cut the lemon evenly in half across the diameter. Use a spoon to remove the flesh of the lemon and scrape the skin clean, being careful not to cut or damage the skin.
  • To assemble: Fill each lemon cup with the orzo salad and arrange on a platter for service.

1 cup orzo
2 teaspoons grated lemon zest
2 tablespoons freshly squeezed lemon juice
2 tablespoons good olive oil
1 tablespoon minced fresh dill
1 cup small-diced feta, preferably Greek (4 ounces)

Steps:

  • In a large saucepan, bring 2 quarts of water to a boil. Add 2 teaspoons salt and the orzo. Return the water to a boil and simmer uncovered for 9 to 11 minutes, until the orzo is al dente. Drain.
  • Transfer the orzo to a bowl and stir in the lemon zest, lemon juice, olive oil, dill, 2 teaspoons salt, and 1 teaspoon pepper. Fold in the feta and serve hot.

1 tablespoon olive oil
2 cups cherry tomatoes, halved
1 clove garlic, minced
1 cup orzo
2 cups chicken stock
2 teaspoons fresh thyme, chopped
2 teaspoons capers, drained and minced
1 tablespoon pine nuts, chopped
Small handful grated Parmesan cheese
1 tablespoon lemon zest
Salt and pepper

Steps:

  • Pour the olive oil into a large skillet set over medium heat. Dump in the tomatoes and the garlic and cook, stirring often, until the tomatoes become a little soft, about 3 minutes. Turn off the heat and set aside.
  • Pour the chicken stock and orzo into a large pot. Turn the heat to high and bring to a boil. Reduce the heat to a gentle simmer, cover, and cook for 7 minutes. Turn off the and let the pot sit, covered, for an additional 3 minutes.
  • Stir in the thyme, capers, pine nuts, cheese, lemon zest, and the cooked tomatoes and garlic. Season with salt and pepper to taste.

6 cups water
Salt to taste
3/4 cup orzo (rice-shaped pasta)
2 tablespoons olive oil
1 teaspoon minced garlic
1/2 pound ripe plum tomatoes, cored and cut into 1/3-inch cubes
Freshly ground pepper to taste
2 tablespoons loosely packed shredded fresh basil or Italian parsley
2 tablespoons freshly grated Parmesan cheese

Steps:

  • Bring water with salt to a boil in a saucepan. Add orzo and cook, stirring, for about 10 minutes or until tender. Do not overcook. Drain.
  • Meanwhile, heat oil in a saucepan and add garlic. Cook briefly, stirring; do not brown. Add tomatoes, salt and pepper. Stir and cook for 3 minutes. Add orzo, basil and cheese. Blend well and serve.
