PAD THAI

Pad Thai image

This is a traditional Pad Thai recipe used by a friend's mother. You can use chicken, pork, beef, tofu, or a combination. You may want to start with less pepper, and work your way up.

Time 1h

Yield 6

Number Of Ingredients 13

1 (12 ounce) package rice noodles
2 tablespoons butter
1 pound boneless, skinless chicken breast halves, cut into bite-sized pieces
¼ cup vegetable oil
4 eggs
1 tablespoon white wine vinegar
2 tablespoons fish sauce
3 tablespoons white sugar
⅛ tablespoon crushed red pepper
2 cups bean sprouts
¼ cup crushed peanuts
3 green onions, chopped
1 lemon, cut into wedges

Steps:

  • Soak rice noodles in cold water 30 to 50 minutes, or until soft. Drain, and set aside.
  • Heat butter in a wok or large heavy skillet. Saute chicken until browned. Remove, and set aside. Heat oil in wok over medium-high heat. Crack eggs into hot oil, and cook until firm. Stir in chicken, and cook for 5 minutes. Add softened noodles, and vinegar, fish sauce, sugar and red pepper. Adjust seasonings to taste. Mix while cooking, until noodles are tender. Add bean sprouts, and mix for 3 minutes.

Time 1h

Yield 6

Number Of Ingredients 15

1 (8 ounce) package pad thai rice noodles
¼ cup tamarind paste
⅓ cup boiling water
¼ cup ketchup
2 limes, juiced
3 tablespoons soy sauce
1 tablespoon white sugar
1 tablespoon chili paste (sambal oelek)
¼ cup vegetable oil
½ pound firm tofu, drained and cubed
5 cloves garlic, minced
4 eggs, beaten
3 cups bean sprouts
½ cup coarsely ground peanuts
5 green onions, thinly sliced

Steps:

  • Place the rice noodles in a large bowl, pour in enough very hot tap water to cover, and let them soak for 30 minutes. Drain the noodles, and set aside.
  • Stir together the tamarind paste with boiling water in a bowl until well mixed, and let the mixture stand for 15 minutes. Press the paste mixture through a fine-mesh sieve to strain, and discard any fibers or seeds. Combine the strained tamarind paste with the ketchup, lime juice, soy sauce, sugar, and chili paste in a bowl.
  • Heat the vegetable oil in a wok over medium-high heat until the oil shimmers. Cook and stir the garlic and tofu until the tofu begins to show brown edges, 3 to 4 minutes. Pour in the eggs, and scramble for 30 seconds, then add the noodles, tamarind mixture, and bean sprouts. Cook and stir until the noodles are separated, heated through, and covered with sauce, about 5 minutes. Sprinkle with peanuts and sliced green onions.

  • If you're using dry rice noodles (instead of fresh ones), soak the noodles in cold water for two hours, or in warm water for one hour.
  • Heat a wok over high heat—you'll know it's ready when a drop of water sizzles and dances across the bottom. Add vegetable oil to evenly coat the wok, then scramble the egg in the pan. If you wish to include meat, add it now and stir fry until it's cooked through.
  • Next, knead the tamarind until it breaks up and combines thoroughly with the water. Strain this mixture into a small bowl and discard the tamarind solids.
