2 bell peppers (1 red, 1 yellow), cut into thick strips
1 small bulb fennel, trimmed, halved, cored and thinly sliced, plus 1/4 cup chopped fronds
1 red onion, sliced into 1/4-inch-thick rings
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
One 9-ounce package spinach or cheese tortellini
One 5-ounce package baby spinach (about 8 cups)
2 ounces thinly sliced salami, cut into thin strips
1/2 cup Food Network Kitchen™ Inspirations Italian Herb & Garlic Dressing
1/2 cup torn basil or flat-leaf parsley leaves

Steps:

  • Preheat the oven to 425 degrees F.
  • Toss together the peppers, fennel, onions, oil, 1/2 teaspoon salt and a few grinds of pepper on a rimmed baking sheet. Bake, stirring occasionally, until the vegetables are tender and lightly browned, about 25 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add the tortellini and cook as the label directs; drain. Combine in a large bowl with the roasted vegetables and cool slightly.
  • Add the spinach, salami and Italian Herb & Garlic Dressing to the bowl and toss. Season with salt and pepper. Sprinkle with the basil and fennel fronds.

1/2 cup + 2 tablespoons white balsamic or rice vinegar
1/3 cup extra virgin olive oil
2 tablespoons mayonnaise
2 teaspoons Italian seasoning
1 teaspoon salt
1/8-1/4 teaspoon red pepper flakes, depending on personal heat preference
3 cloves garlic, chopped
1 tablespoon extra virgin olive oil
1 1/2 pounds 700 grams fresh, refrigerated 7 cheese tortellini (it is not necessary to have a 7 cheese tortellini; use any multi-cheese tortellini you have available.)
8 ounces (weight) grape or cherry tomatoes, sliced in half lengthwise
1 small onion, small diced (about 1 1/2 cups)
12 ounces (weight) diced marinated artichoke hearts, any tough leaves removed before dicing (I used the Costco Kirkland brand, about 1/3 of a 33 ounce jar))
1 cup sliced kalamata olives
2 tablespoons finely chopped peperoncini
2 tablespoons finely chopped fresh basil, optional

Steps:

  • In a medium bowl, whisk together the white balsamic vinegar, 1/3 cup extra virgin olive oil, mayonnaise, Italian seasoning, salt, and red pepper flakes until well blended.
  • To toast garlic: heat 1 tablespoon olive oil in a small skillet over medium heat. Add the chopped garlic and cook, stirring constantly until garlic is golden brown. Do not over-cook because garlic will become bitter. Add the garlic to the dressing ingredients and whisk well. Set aside.
  • Cook tortellini according to package directions. Drain, then rinse under cool water until tortellini has cooled. Drain well.
  • In a large bowl, lightly toss together the tortellini, tomatoes, onion, artichoke hearts, olives, peperoncini and basil (if using).
  • Pour dressing over salad and mix lightly to distribute evenly. Cover and refrigerate for at least one hour. Can be made up to 24 hours ahead of time. Just before serving, mix lightly again.

Our Test Kitchen came up with this full-flavored vinaigrette. Roasted garlic is blended with Italian seasoning, Dijon mustard, tarragon vinegar and lemon juice in the zesty dressing. Try it drizzled over crisp greens or cherry tomatoes.

3 whole garlic bulbs
1 teaspoon plus 2 tablespoons olive oil, divided
3 tablespoons tarragon vinegar

1-1/2 teaspoons Italian seasoning
1/2 teaspoon Dijon mustard
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with 1 teaspoon oil. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Squeeze softened garlic into a blender. Add the vinegar, water, sugar, lemon juice, Italian seasoning, mustard, salt, pepper and remaining oil; cover and process until smooth. Store in the refrigerator.

1 pound fresh tortelloni pasta,
2 cups baby spinach ((packed))
1 cup cherry tomatoes ((halved))
1 cup fresh parsley ((chopped) )
1 cup fresh basil ((chopped) )
1 cup baby mozzarella balls
1/2 cup sundried tomatoes in oil ((chopped, drained) )
1/2 cup olives ((sliced, any kind you like))
2 cloves garlic ((minced))
1 lemon ((juice of))
2 tablespoons red wine vinegar
1/3 cup extra virgin olive oil
1 tablespoon fresh thyme
1 teaspoon dried oregano
Kosher salt and black pepper

Steps:

  • Cook the tortellini pasta in salted boiling water according to package instructions (about 5 to 7 minutes). Drain and rinse in cold water.
  • Transfer the pasta to a large bowl. Add the rest of the salad ingredients and toss gently.
  • In a small bowl, combine the garlic, lemon juice, vinegar, olive oil, and herbs. Add a big pinch of kosher salt and black pepper. Whisk to combine.
  • Pour the dressing over the salad. Toss to combine.
  • For best flavor, allow the salad to rest for 30 minutes or so for the flavors to meld before serving. Transfer to a platter and serve.

1/2 cup chopped fresh basil
3 tablespoons fresh lemon juice
1 shallot, minced
1 garlic clove, minced

1 lb asparagus, tough ends trimmed and sliced thin on the bias
2 (9 ounce) packages fresh cheese tortellini
1/4 cup pine nuts
1 pint grape tomatoes or 1 pint cherry tomatoes, halved
1 ounce parmesan cheese, grated (about 1/2 cup)

Steps:

  • Whisk the olive oil, basil, lemon juice, shallot, garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper together in a bowl large enough to hold the salad.
  • Cook the asparagus in 4 quarts boiling water seasoned with 1 tablespoon salt until tender, about 3 minutes.
  • Transfer the asparagus to a colander using a slotted spoon (do not discard the boiling water).
  • Shake out any excess water and toss with the vinaigrette.
  • Return the water to a boil, add the tortellini, and cook until tender, following the package directions.
  • Drain the tortellini thoroughly, then toss while hot with the asparagus and dressing.
  • Refrigerate until chilled, about 30 minutes.
  • Toast the pine nuts in a small skillet over medium heat until golden and fragrant, about 5 minutes.

Tortellini With Roasted Garlic Sauce (Appetizer) image

This is a wonderful appetizer and a nice change from the usual chips and dip or crackers and spread combo. We especially loved the sauce! If you roast the garlic ahead of time, it all comes together rather quickly. I didn't heat the sauce after pureeing, just served it at room temperature. Note added 12/26/05: I agree with Marie Nixon's review that there is enough sauce for 2 packages of tortellini. I did actually make 2 packages, and there was plenty of sauce for that amount.

1 large head of garlic
1 (9 ounce) package fresh tortellini (I used tri-colored five cheese)
2 -3 tablespoons olive oil
1/2 cup reduced-fat mayonnaise
1/2 cup nonfat sour cream (I used light, rather than nonfat)
1/3 cup grated parmesan cheese
2 tablespoons Frank's red hot sauce

Steps:

  • Preheat oven to 350°F Cut 1/2-inch off top of garlic and remove papery outer skin, leaving cloves intact. Wrap garlic in foil and bake 1 hour, or until tender when pierced with a sharp knife. Let stand until cool enough to handle.
  • Cook tortellini according to package directions (do NOT overcook, best to undercook a bit). Rinse under cold water, drain well on paper towels. Heat 2 tablespoons oil in large nonstick skillet over medium heat(medium-high worked better for me). Add tortellini in batches to oil, cook and stir 3-5 minutes or until lightly golden. Add more oil if necessary. Drain on paper towels.
  • Separate cooled garlic into cloves; pinch each clove so roasted flesh comes out and place in blender or food processor. Add mayonnaise, sour cream, Parmesan cheese and hot sauce. Cover and process until pureed and very smooth. Spoon into small saucepan; cook and stir over low heat until hot and bubbly. Transfer to small serving bowl.
  • To serve, arrange tortellini on serving platter. Dip into Roasted Garlic Sauce.
