TROPICAL MELON JELL-O GELATIN DESSERT
Melon balls and pineapple slices create pitch-perfect garnishes for this dual-layer, ultra-tropical JELL-O dessert. Enjoy it with seven very lucky friends.

Steps:
- In a mixing bowl add 1 cup of hot water and dissolve the JELL-O Tropical Fusion Flavor Gelatin. When the gelatin is dissolved add one cup of cold water and combine.
- Pour the gelatin into a 6 X 4 inchs round gelatin mold and refrigerate until the gelatin sets but not firm (gelatin should stick to finger when touched). (Takes around 2-3 hours.)
- Then prepare the JELL-O Melon Fusion Flavor Gelatin following same steps as described above and refrigerate for another 1 1/2 - 2 hours or until slightly thickened (consistency of unbeaten egg whites).
- Spoon over gelatin layer in mold. Refrigerate 4 hours or until firm.
- Take the Tropical Melon JELL-O Dessert out of the fridge, unmold and plate.
- Decorate with the fruits and the mint leaves as shown in the picture.

Steps:
- Cut the melon in half lengthwise, remove seeds& dry center well with a paper towel Prepare Jello powder following package Instructions for 30 minute set.
- Place melon halves in small bowls and spoon the liquid jello into the centers, fill to the brim Chill until firm apprx 3 hours.
- Cut into wedges to serve.
- when placing on serving plates do it carefully so the jello stays on the melon wedge.

- With a melon baller, scoop out melon (to yield about 8 cups). Spoon melon into a 9-by-5-inch loaf pan; set aside.
- In a small bowl, sprinkle gelatin over 1 cup cold water; stir to combine. Let stand until softened, about 5 minutes.
- Meanwhile, in a small saucepan, heat 1/4 cup water and sugar over medium, stirring, until sugar has dissolved.
- Remove pan from heat; stir in honey and softened gelatin until dissolved. Stir in 1 1/4 cups cold water. Pour mixture over melon in pan; place plastic wrap directly on surface and top with another loaf pan (to keep melon submerged).
- Refrigerate until gelatin is set, about 3 hours. To unmold, run a knife around edges; dip pan in hot water for 5 seconds, and invert onto a platter. Cut into slices, and serve.

- Add 1 cup boiling water to each flavor gelatin mix in separate bowls; stir 2 min. until completely dissolved. Pour each flavor into separate 8-inch square pan. Refrigerate 1 hour or until firm.
- Meanwhile, combine evaporated milk, condensed milk, fruit cocktail and orange zest; refrigerate until ready to use.
- Cut gelatin into 1/2-inch cubes; place in medium bowl. Add milk mixture; mix lightly. Sprinkle with coconut just before serving.

TROPICAL FRUITY JELLO
To make jello a little more interesting, I added my favourite tropical fruits and it worked beautifully! This is so refreshing on a hot day and the low sugar version is great for waistline-watchers. I use sugar free jello but feel free to use a small packet of regular peach jello. I have been told that fresh pineapple prevents gelatin from setting so only use canned for this recipe. Cook time is chilling time.

- In a heatproof jug, mix the jello powder with the boiling water until dissolved.
- Add the cold water and pineapple juice. Put in the fridge for about an hour, until starting to set but not set yet.
- Add the fruit, evenly scattered through the jello (if it immediately falls to the bottom, put it back in the fridge to set a little more).
- Put back in the fridge until completely set.

- In a small bowl, dissolve one package of strawberry gelatin in 3/4 cup boiling water. Stir in 3/4 cup cold water. Divide among 12 dessert dishes and refrigerate until set, or pour into a 3-qt. gelatin mold coated with cooking spray and refrigerate until set but not firm, 20-25 minutes., In a small bowl, dissolve remaining package of strawberry gelatin in 1/2 cup boiling water. Add 1/2 cup cold water and scant 1/2 cup cream of coconut; stir. Spoon over the first layer. Chill until set but not firm, 20-25 minutes., Repeat six times, alternating plain gelatin layers with creamy gelatin layers. Chill each layer until set but not firm before spooning next layer on top. Refrigerate for 4 hours or overnight. Unmold onto a serving platter.
