Toss with 12 ounces cooked spaghetti and 3 tablespoons olive oil, adding up to 3/4 cup pasta-cooking water to loosen the sauce; season with salt and pepper.

5 cups small shell pasta
1 1/4 cups penne pasta
1 cup spinach fettuccine (3-inch pieces)
2 tablespoons canola oil
2 (6 ounce) cans tuna in water
2 cups sweet pickle juice (small jar contains about 1 cup)
1 3/4 cups mayonnaise
1 1/2 cups sweet pickles (diced)
1 cup celery (diced)
1/2 cup sour cream
1 1/2 tablespoons dried tarragon leaves
1 teaspoon salt
1/2 teaspoon white pepper

Steps:

  • For the pasta: In a large pot, bring 3 quarts of water and 1 tablespoon salt to a full boil. Add pastas and cook for about 10 minutes until al dente. Immediately strain pasta and cool by running cold water over pasta in strainer. Drain pasta completely and place in a bowl. Coat pasta with canola oil to prevent sticking.
  • For the dressing: Place tuna in a large bowl and break down into small pieces. Add the remaining dressing ingredients and thoroughly whisk to combine.
  • Combine the dressing and cooked pasta and mix thoroughly. ALLOW SALAD TO MARINATE FOR 8 HOURS! After 8 hours, top with more pickle juice and salt and pepper to taste.

2 whole turbot, 3 pounds each, or other firm, white-fleshed fish
1 medium onion, peeled
4 shallots, peeled
3 medium carrots, peeled
3 leeks, well washed, outer greens and coarse green ends removed
2 stalks celery
2 medium tomatoes
2 cloves garlic, peeled and crushed
15 white peppercorns
Pinch cayenne
1 cup dry white wine
1/2 cup white vinegar
2 bunches tarragon
1 sprig rosemary
1 sprig basil
1 sprig mint
6 tablespoons unsalted butter
Kosher salt and freshly ground black pepper to taste

Steps:

  • Have a fishmonger fillet and skin the turbot, then save and chop the bones for you. Rinse bones for 1 hour under cold running water.
  • Roughly chop half of the onion, shallots, carrots, leeks, celery and tomatoes. Julienne the remaining onions, shallots and leeks. Thinly slice the remaining carrots and celery. Peel, seed and dice the remaining tomato.
  • Fill a stockpot halfway with water and bring to a boil. Add the fish bones and blanch for 2 minutes. Drain, rinse and return them to the pot with 2 quarts water. Boil, lower the heat and simmer, uncovered, 20 minutes.
  • Strain the stock through a fine-mesh sieve, discard the bones and return stock to the pot. Add the roughly chopped vegetables, garlic, white peppercorns and cayenne and bring to a boil. Simmer for 45 minutes, skimming the foam off the top. Add the wine and vinegar; simmer 15 minutes more.
  • Strain the stock, discarding solids. Return stock to the pan and add 1 1/2 bunches of the tarragon and the rosemary, basil and mint. Cover the pot and set aside to infuse for at least a half-hour.
  • Bring a pot of salted water to a boil and add the remaining vegetables. Cook until just tender, about 3 minutes, then plunge them into cold water to stop the cooking. Drain and set aside.
  • Reserve 4 small sprigs of tarragon for garnish and chop the rest. Set aside.
  • Season the fish with salt and pepper. Strain the stock, discarding the herbs. In a deep skillet, heat the broth. When just simmering, add the fillets. Cook for 3 minutes; turn and cook until opaque throughout, about 3 more minutes. Remove the fillets and keep warm.
  • Add the cooked vegetables to the hot broth and heat them. Swirl in the butter and add the chopped tarragon. Season to taste with salt and pepper. Place the fillets in four soup bowls and spoon the tarragon broth and vegetables over them. Add the tarragon sprigs and serve.

2 small carrots, peeled and coarsely chopped
2 medium stalks celery, peeled and coarsely chopped
1 small onion, coarsely chopped
1 medium leek, coarsely chopped and well washed
1 medium ripe tomato, coarsely chopped
15 whole black peppercorns
2 medium cloves garlic
3 cups water
3/4 cup dry white wine
1/4 cup white-wine vinegar
2 sprigs fresh thyme
1 sprig fresh tarragon

Steps:

  • Combine carrots, celery, onion, leek, tomato, peppercorns, garlic, and water in a medium saucepan. Bring to a boil. Reduce to a simmer, and cook for 45 minutes. Add the wine, vinegar, and thyme; cook for 15 minutes more. Remove from heat. Add tarragon, and allow to cool to room temperature. Strain just before using. The broth can be stored refrigerated in an airtight container for up to 3 days.

4 pounds plum tomatoes, halved
2 medium yellow onions, diced
3 garlic cloves, smashed and peeled
1/4 cup extra-virgin olive oil, plus more for drizzling
Coarse salt and ground pepper
4 cups low-sodium chicken broth, plus more for thinning
2 tablespoons fresh chopped tarragon

Steps:

  • Preheat oven to 450 degrees. Toss together tomatoes, onions, garlic and oil; season with salt and pepper. Arrange vegetables in a single layer on a rimmed baking sheet and bake until tomatoes are deep brown in spots and onions are soft, 45 minutes.
  • Transfer vegetables and all juices to a large dutch oven or heavy pot. Add chicken broth and bring to a rapid simmer. Cook until slightly reduced, about 25 minutes.
  • Transfer soup to a large bowl. In batches, fill blender halfway with soup, puree until smooth, transferring to pot as you work (use caution when blending hot liquids). Stir in tarragon and season with salt and pepper. If necessary thin with additional chicken broth. Serve with a drizzle of olive oil.

1 tablespoon water

6 fresh tarragon sprigs

Steps:

  • Whisk 1/4 cup oil, lemon juice, yolks and water in small metal bowl. Set bowl over saucepan of barely simmering water (do not allow bottom of bowl to touch water); whisk constantly until thermometer maintains 140°F for 3 minutes, about 6 minutes total. Transfer to processor. With machine running, very gradually add 1/2 cup oil in thin steady stream (if oil is added too quickly, the mayonnaise will separate and become runny). Mix in chopped tarragon. Season with salt and pepper. (Can be made 1 day ahead. Cover and refrigerate.)
  • Prepare barbecue (medium-high heat) or preheat broiler. Drizzle additional oil over fish. Sprinkle with salt and pepper. Grill or broil about 3 minutes per side for medium. Transfer to plates. Top with mayonnaise. Garnish with tarragon sprigs.

Steps:

  • Combine mayonniase, parsley, scallions, tarragon, lemon peel, lemon juice, mustard, and pepper. Stir till combined well. Now stir in tuna, breaking up any large pieces.
  • Place 4 bread slices on a clean work surface, and evenly divide the tuna mixture on top of each slice. Top the tuna with tomato, if using, and cheese. Spread one side of the remaining bread slices with half the butter. Place bread slices, buttered side up, on top of cheese. Place sandwiches, buttered side down, on a large nonstick skillet or griddle, over medium heat. Carefully butter top bread slices. 1 quart water
1/2 cup white-wine vinegar
1/2 cup sugar
1/4 teaspoon salt, plus more to taste

1 large onion, peeled and sliced very thin

1 teaspoon finely chopped rosemary
4 cloves garlic, peeled and minced
6 tablespoons poppy seeds

Steps:

  • To make the tomatoes, preheat the oven to 280 degrees. Place the tomatoes on a baking sheet and sprinkle with the thyme, sugar, half of the garlic and salt and pepper. Bake for 3 1/2 hours.
  • Meanwhile, to prepare the onions, combine the water, vinegar, sugar, salt and pepper in a medium-size saucepan and bring to a boil. Add the onion and cook for 5 minutes. Drain and let cool. Toss with the olive oil and set aside.

Remove from pan and cut each piece across into 1/4-inch thick slices.
  • Divide the onion mixture among 4 plates. Place the tomato mixture over the onions. Top with tuna slices, season with salt and serve immediately.
