APPLE TUNA SANDWICHES
My husband and his buddies love to pack this tasty lunch when they go on fishing trips. My tangy tuna sandwich recipe gets fun flavor from sweet pickle relish and lots of crunch from apples, celery and walnuts. Each satisfying sandwich is a complete meal in itself. -Ivy Eresmas, Dade City, Florida

- In a large bowl, combine the first six ingredients; stir in tuna and apple. Spread 1/2 cup tuna mixture on three slices of bread. Top with lettuce and remaining bread.

TUNA APPLE SALAD
A lovely tuna salad with a twist; it uses apples and light Italian dressing! I like to use Gala or Golden Delicious apples. I also like to serve this with potato chips on the side, but it holds its own if you choose to serve it solo. Enjoy!

SOUTHERN APPLE TUNA SALAD
I grew up eating a similar tuna salad, I have since adjusted it to be a little healthier than before. The apples make it fresh and delicious! Serve on bread of your choice with lettuce. Yum!

APPLE PECAN TUNA SALAD
I grew up eating tuna salad made with sour pickles, onions, and mayonnaise. When I married, my m-in-law made a delicious tuna salad with apples as one of the main ingredients. I LOVED it and began to use that recipe. My husband likes pecans (Texas' state nut) in everything, so I always add a handful, but they are optional. It's better to begin with the chopped apple so you can sprinkle lemon juice over the pieces to keep them from turning brown. I also prefer unpeeled apples. I am saying this makes 6 servings because we like THIN sandwiches. I also sometimes make my sandwich ingredients the night before because allowing to set a while makes the flavors blend.

Steps:
- Chop unpeeled Granny Smith (or any tart, crunchy apple -- Fuji and Gala are also good).
- Sprinkle lemon juice (fresh or bottled) over apples and toss to coat evenly.
- Add drained tuna fish and flake, mixing with apples.
- Add celery, onion, and mayonnaise. Amount of mayonnaise may be adjusted according to texture preference. More crumbly (less mayonnaise) is better to eat with a fork on a lettuce leaf. More "pastey" texture is better for sandwiches.
- Taste, and add a pinch of sugar and salt if needed. (Some apples require a tiny bit of sugar).
TUNA SALAD SANDWICH WITH APPLES AND WALNUTS
This dish can be served as a sandwich filling or as a stand-alone salad accompanied by favorite lettuces and veggies. We use canned tuna packed in spring water because it's lighter than tuna packed in oil, and we make sure the apple is tart and crisp. Granny Smith apples are fine, but also Mutsu, Honeycrisp, or any good local crispy, tart apple will do. Add half the dressing at first and see if you need more-it's up to you how well coated you want the tuna and apples to be.

Steps:
- Toast the walnuts in a small nonstick skillet over medium heat for 2 minutes, or until golden brown, stirring occasionally. Alternatively, roast the walnuts in a preheated 300°F oven for 10 minutes, or until they smell toasted. Remove the walnuts to a plate and set aside to cool.
- Whisk together the mayonnaise, sugar, and cider vinegar in a small bowl. Add salt and pepper to taste. Adjust the seasonings as needed.
- Combine the walnuts, apples, tuna, red onion, and parsley in a bowl. Toss with half the dressing. Add more dressing, if desired.
- Spread the salad over 4 slices of bread. Top with the other 4 slices. Cut each sandwich in half, and serve.
