SOUTHWEST TURKEY BULGUR DINNER
In the past few years, I've been trying to incorporate more whole grains in our dinners. Bulgur is one of my favorite grains to work with because of its quick cooking time. - In a large nonstick skillet coated with cooking spray, cook turkey and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer., Stir in the beans, tomatoes, water, corn, chili powder, cumin, pepper and salt. Bring to a boil. Stir in bulgur. Reduce heat; cover and simmer for 13-18 minutes or until bulgur is tender., Remove from the heat; let stand 5 minutes. Fluff with a fork. Meanwhile, in a small bowl, combine the yogurt, green onion and cilantro. Serve with turkey mixture.

BULGUR MEATLOAF WITH PRUNES AND GOUDA
Tender ground meats are bulked up with bulgur, Gouda and prunes for a twist on classic meatloaf.

Steps:
- Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
- Combine the meatloaf mix, bulgur, Gouda, prunes, chives, parsley, Worcestershire, eggs, onion, garlic, 1/4 cup of the ketchup, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
- Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
- Stir together the apricot preserves, soy sauce, ginger, vinegar and remaining 1/4 cup ketchup in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the turkey, egg, onion, and bread crumbs. Adjust the amount of bread crumbs as needed to make a stiff mixture. Season with salt and pepper. Transfer the mixture to a 9x5 inch loaf pan, and sprinkle with poultry seasoning.
- Bake 1 1/2 hour in the preheated oven, or until meat is cooked through and the internal temperature is at least 170 degrees F (70 degrees C) when taken with a meat thermometer.

- In a small saucepan, bring broth and water to a boil. Place bulgur in a large bowl. Stir in broth mixture. Cover and let stand for 30 minutes or until most of the liquid is absorbed. Drain. Stir in the turkey, cucumber, beans, onions, olives and cranberries., In a small bowl, whisk the oil, lime juice and cranberry juice concentrate. Stir into bulgur mixture. Add tomatoes and parsley; gently toss to coat. Serve at room temperature or chilled.

- Preheat oven to 325 degrees.
- Boil the bulgur gently in the water in a covered saucepan for 20 to 25 minutes, until fluffy-tender.
- Cook for 15 minutes, then mix with remaining ingredients, using your hands.
- Pack into a well-greased 9 x 5 x 3 inch loaf pan and bake uncovered for 1 1/2 hours or until the loaf is nicely browned and pulls slightly from the sides of the pan. Cool the loaf upright in its pan on a wire rack for 30 minutes, then turn out and serve.
- You can wait less than 30 minutes for it to cook, but it has a tendency to fall apart.
- Still tastes good though!

- Put bread in a bowl with milk and, using hands, mix together. Add turkey. In a small pan, melt butter and add celery, onion and garlic, and saute until cooked but still crunchy. Cool briefly, then add to turkey. Add curry, coriander, nutmeg, egg, salt and pepper and mix well.
- Preheat oven to 400 degrees. Put the mixture into a 6-cup loaf pan, packing it tightly with a spoon. Top with bay leaf and cover loosely with foil. Put pan into a larger pan half filled with water, place in oven and cook 1 hour. Let loaf rest about 15 minutes before slicing.

- Heat oven to 180C/160C fan/gas 4. Heat the oil in a large frying pan and cook the onion for 8-10 mins until softened. Add the garlic, Worcestershire sauce and 2 tsp tomato purée, and stir until combined. Set aside to cool.
- Put the turkey mince, egg, breadcrumbs and cooled onion mix in a large bowl and season well. Mix everything to combine, then shape into a rectangular loaf and place in a large roasting tin. Spread 2 tbsp barbecue sauce over the meatloaf and bake for 30 mins.
- Meanwhile, drain 1 can of beans only, then pour both cans into a large bowl. Add the remaining barbecue sauce and tomato purée. Season and set aside.
- When the meatloaf has had its initial cooking time, scatter the beans around the outside and bake for 15 mins more until the meatloaf is cooked through and the beans are piping hot. Scatter over the parsley and serve the meatloaf in slices.
