Turkey and stuffing like Grandma used to make. Sage adds a special pungent flavor to this simple recipe. Adjust the ingredients and cooking time as appropriate for different sized turkeys.

1 (12 ounce) package dry bread stuffing mix
5 cups water
1 large onion, chopped
4 celery, chopped
4 tablespoons dried sage
12 pounds whole turkey, neck and giblets removed

Steps:

  • Prepare stuffing according to package directions, and set aside in a large bowl.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring water to boil in a medium saucepan over medium heat, and stir in the onion, celery and sage. Boil 10 minutes, or until the onion is soft. Stir into the prepared stuffing.
  • Rinse turkey, and pat dry. Loosely fill the body and neck cavities with the stuffing mixture.
  • Place turkey in a large roasting pan and cook 3 to 3 1/2 hours in the preheated oven, or until the internal temperature of the thigh meat is 180 degrees F (80 degrees C) and the stuffing is at least 165 degrees F (75 degrees C).

With butter sauce and creamy havarti cheese, these Turkey Sliders on Hawaiian rolls are ready in 30 minutes and are a perfect party food.

24 Party Rolls (we use Hawaiian rolls)
24 slices turkey
12 slices creamy Havarti cheese (sliced thinly)
½ cup unsalted butter (melted)
½ tablespoon Dijon mustard
½ tablespoon Worcestershire Sauce
1½ teaspoons poppy seeds
1 teaspoon dried minced onion

Steps:

  • Preheat the oven to 350°F.Slice the tops off the rolls and carefully set them aside until ready to use. Lay the bottom halves of the rolls in a 13x9 casserole dish.Layer cheese slices on the rolls to cover rolls completely. Overlap the cheese as needed. Layer turkey sliders on top of the cheese. Fit one slice of turkey on each bun.Carefully top with buns.
  • In a small bowl, combine ½ cup melted butter with ½ tablespoon Dijon mustard, ½ tablespoon Worcestershire Sauce, 1½ teaspoons poppy seeds, and 1 teaspoon dried minced onion. Whisk to combine and pour on top of the buns. Use a pastry brush to spread the glaze evenly.
  • Bake in the oven preheated to 350°F for 15-20 minutes until the cheese is nicely melted and the sliders are warmed through. Serve and enjoy!

Dinner rolls (King's Hawaiian rolls, or other)
Roughly cut Turkey pieces
Leftover Stuffing/Dressing
Turkey Gravy (optional)
Cranberry sauce, jellied or whole berry
Melted Butter for brushing tops of rolls

Steps:

  • Preheat oven to 400 F. Slice desired number of rolls horizontally through the center. (A thin serrated knife works best.) On bottom halves of rolls layer in this order: turkey, stuffing, gravy (if using), and cranberry sauce. ((NOTE~I microwaved the turkey and stuffing for just a few seconds before assembling sandwiches.)) Place top half of buns on sandwiches. Arrange in a baking dish. Brush tops with melted butter. Cover tightly with aluminum foil. Bake for about 10 minutes or until heated through. Serve warm.

1 1/4 cups leftover gravy
2 cups (about 8 ounces) shredded leftover turkey
One 12-pack pull-apart dinner rolls
2 cups leftover stuffing
1/2 cup leftover cranberry sauce
1 heaping cup leftover mashed potatoes, warmed
6 slices provolone
1 tablespoon unsalted butter, melted
Flaky sea salt, for sprinkling

Steps:

  • Combine the gravy and turkey in a medium saucepan and set over medium heat. Cook, stirring occasionally, until the gravy is hot and bubbling, 3 to 5 minutes. Turn off the heat, cover and set aside.
  • Put a rack in the center of the oven and preheat the broiler.
  • Split the attached dinner rolls in half horizontally, keeping them attached. Put the top and bottom halves cut-side up on a baking sheet. Cover the bottom half with the stuffing. Broil until toasted, 1 to 3 minutes.
  • Preheat the oven to 400 degrees F.
  • Spread the cut side of the roll tops with cranberry sauce. Cover the stuffing with mashed potatoes, then use the back of a small spoon to make 12 wells (1 for each slider) in the potatoes. Spoon the turkey and gravy into the wells (it will spill over the wells but this is okay) then cover with overlapping slices of provolone. Cover with the roll tops, then brush the tops with the melted butter. Sprinkle with flaky sea salt.
  • Bake until the bread is toasted and the cheese is melted, 10 to 12 minutes. Serve immediately.

Nonstick cooking spray, for the baking dish
24 mini frozen hamburgers (with buns), thawed
2 tablespoons unsalted butter
2 stalks celery, diced
1 medium yellow onion, diced
1 teaspoon mustard powder
1 teaspoon fresh thyme leaves
6 medium fresh sage leaves, finely chopped
2 cups low-sodium chicken broth
2 large eggs, lightly beaten

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-by-13-inch baking dish with cooking spray. Line a baking sheet with parchment.
  • Tear the burgers (meat and buns) into quarters. Spread in a single layer on the prepared baking sheet. Bake until the buns are dry and starting to brown and the meat is heated through, 10 to 15 minutes. Let cool slightly, then transfer to a large bowl. (Leave the oven on.)
  • Heat a large skillet over medium-high heat. Add the butter and heat until melted, then stir in the celery and onion. Cook until the onion is softened and beginning to brown, 5 to 7 minutes.
  • Sprinkle the mustard powder, thyme and sage over the onion mixture and cook, stirring to combine, about 30 seconds. Pour in the broth a little at a time, using a wooden spoon to scrape up any browned bits from the bottom of the skillet.
  • Pour the broth mixture over the burgers in the bowl and toss until coated. Add the eggs and toss until combined. Transfer the mixture to the prepared baking dish and press into an even layer. Bake until the stuffing is cooked through and starting to brown on top, 40 to 45 minutes. Serve immediately or at room temperature.

1 package (20 oz) lean (at least 93%) ground turkey

3 tablespoons fat-free (skim) milk
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
1/4 teaspoon coarse ground black pepper
5 slices (1 1/2 oz each) reduced-fat sharp Cheddar cheese
10 mini sandwich buns
2 medium plum (Roma) tomatoes, each cut into 5 slices
10 dill pickle chips (from 16-oz jar)

Steps:

  • Spray 12-inch skillet with cooking spray; heat over medium-high heat. Add onion; cook 6 to 8 minutes, stirring occasionally, until softened and lightly browned. Remove from skillet to bowl; cover to keep warm.
  • In large bowl, gently mix turkey, bread crumbs, milk, Worcestershire sauce, mustard and pepper with fork until well combined. Shape mixture by heaping tablespoonfuls into 20 balls. Flatten each ball into 3-inch patty. Cut each cheese slice in half crosswise; place 1 piece of cheese in the center of each of 10 patties. Top each with another patty; press edges together to seal.
  • Heat same skillet over medium-high heat. Add patties. Cover; cook 4 to 6 minutes, turning once, until turkey is no longer pink. Let stand 2 minutes.
  • On each bun bottom, place about 1 tablespoon onion, 1 burger, 1 tomato slice and 1 pickle chip. Cover with bun tops.

Steps:

  • Heat oven to 350°F. Line 15x10x1-inch pan with cooking parchment paper.
  • Separate dough into 8 biscuits. Cut each biscuit in half crosswise to make 2 halves. Press each piece into 5x2 1/2-inch rectangle. Place 1 piece of cheese on one half of each rectangle. Divide turkey among biscuits, and place on cheese, folding pieces of turkey if needed to fit biscuit half. Top each with second piece of cheese. 3 cups chopped leftover roasted turkey
1 cup KRAFT Shredded Cheddar Cheese
1/2 cup chopped red peppers
2 eggs, beaten
2 Tbsp. butter, divided
12 savory butter dinner rolls, split
1 jar (12 oz.) HEINZ HomeStyle Roasted Turkey Gravy, warmed

Steps:

  • Prepare stuffing in large bowl as directed on package. Add turkey, cheese, peppers and eggs; mix just until blended.
  • Shape into 24 patties, using about 3 Tbsp. stuffing mixture for each patty.
