LOADED TURKEY CHILI BAKED POTATO



Loaded Turkey Chili Baked Potato image

This loaded baked potato is stuffed with lean turkey chili, reduced fat shredded cheese and topped with some fresh chives - a quick, easy weeknight meal.

4 russet potato (5 1/2 oz each)
1 cup kid-friendly turkey chili
1 cup reduced fat shredded cheddar
1 tablespoon chopped chives or scallions
reduced fat sour cream or Greek yogurt for topping (optional)

Steps:

  • Poke holes in the potato with a fork, then cook in the microwave using the baked potato setting until potatoes are soft and cooked through (about 8-10 minutes on high for 4 potatoes).
  • If you don't have a microwave, see oven method for Baked Potatoes.
  • Either split the potato in half lengthwise down the middle or as I did in the photo, use a fork to pierce the top in an oval shape, then remove the top of each potato.
  • Top with 1/4 cup shredded cheese, 1/4 cup of turkey chili, and 1 teaspoon of chives.

4 spray(s) Calorie controlled cooking spray
1 large Onion(s) finely chopped
1 clove(s) Garlic crushed
1 tablespoons, level Chilli Powder mild
1 teaspoons, level Ground Cumin
500 g Turkey Breast Mince, raw
1 can(s), large Tinned Tomatoes
1 cube(s) Chicken stock cube(s) 200ml stock
4 medium Baked potato(es)
4 tablespoons, level Reduced Fat Soured Cream
2 medium Spring Onions finely sliced
6 individual Cherry Tomatoes chopped

Steps:

  • Mist a frying pan with cooking spray and cook the onion for 5-7 minutes on a medium heat, then add the garlic, spices and turkey (break it up with a spoon). Cook for 10 minutes until the meat is done.
  • Add the tomatoes and 200ml stock, then season. Simmer for 5 minutes. Top each split jacket potato with the turkey mixture, soured cream, spring onions and cherry tomatoes.

4 large baking potatoes
1 tbsp olive oil
1 onion , chopped
1 garlic clove , crushed
300g turkey mince
1 tbsp smoked paprika
1 tbsp ground cumin
1 tbsp cider vinegar
1 tbsp soft light brown sugar
350ml passata
reduced-fat red leicester , grated, to serve
4 spring onions , chopped, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Use a fork to prick the potatoes all over. Rub with a little of the oil, and bake for 45 mins until tender.
  • Meanwhile, make the chilli. Heat the remaining oil in a large frying pan over a medium heat. Add the onion, garlic and some seasoning, and cook for 5 mins until soft. Add the turkey mince and season again, then increase the heat and break up the mince with the back of your spoon. When it's cooked through, add the spices, vinegar, sugar and passata. Reduce to a simmer and cook for 10 mins or until the liquid has reduced.
  • Cut a cross in the top of each potato and spoon in the chilli. Serve each potato sprinkled with cheese and spring onions.
