Turkey Quesadillas with Cranberry Salsa image

A sweet-tart cranberry salsa is the ideal accompaniment to leftover turkey in this breezy quesadilla. With a hint of lemon and pear, the salsa is also good with chicken or pork. -Jodi Kristensen, Macomb, Michigan

3/4 cup fresh or frozen cranberries
2 tablespoons sugar
1/4 cup water
1 small pear, chopped
1/4 cup chopped red onion
1 jalapeno pepper, seeded and chopped
3 tablespoons chopped celery
2 teaspoons grated lemon zest
1 tablespoon lemon juice
1/2 teaspoon ground cumin
4 flour tortillas (6 inches)
2 cups cubed cooked turkey breast
1 cup shredded reduced-fat white or yellow cheddar cheese

Steps:

  • For salsa, in a small saucepan, combine cranberries, sugar and water; bring to a boil. Reduce heat to medium; cook, uncovered, until berries pop, about 10 minutes, stirring occasionally. Remove from heat; cool slightly. Stir in pear, onion, jalapeno, celery, lemon zest and juice, and cumin., Preheat griddle over medium heat. Top one half of each tortilla with 1/2 cup turkey; sprinkle with 1/4 cup cheese. Fold tortilla to close. Cook on griddle until golden brown and cheese is melted, 1-2 minutes per side. Serve with salsa.

Wonderful appetizers and great way to use up turkey leftovers. A Pillsbury recipe adapted for my family's taste.

8 flour tortillas (6 inch)
1 (12 ounce) container cranberry-orange sauce
1/2 lb thinly sliced smoked turkey
1/2 lb havarti cheese or 1/2 lb swiss cheese, thinly sliced
1 tablespoon olive oil

Steps:

  • Top 4 tortillas with 1 tablespoon of the cranberry-orange sauce; spread it out to the edges.
  • Top each with turkey, cheese, and second tortilla.
  • Brush one side of quesadilla with oil.
  • Place oil side down in a skillet over medium heat; press down with pancake turner.
  • Cook 1 to 2 minutes or until browned.
  • Brush top side of quesadilla with oil; turn quesadilla over and cook and additional 1 to 2 minutes or until browned and cheese is melted.
  • Do the same thing with each quesadilla.
  • Cut each quesadilla into 6 wedges.
  • Serve with cranberry-orange sauce for dipping.

I wanted to whip up a quick snack for my partner one morning and these were what I had in the fridge. A simple snack that turned out pretty good! I am sure this works well for leftover turkey and between sandwiches too!

100 g turkey ham, thinly sliced
1 tablespoon cranberry sauce
1 tablespoon cream cheese (or jam, I bought mine from the Ikea deli)
dried cranberries
2 tortillas
cheese, grated (optional)

Steps:

  • Spread cream cheese on 1 of the tortilla, and cranberry sauce/jam on the other.
  • Arrange the turkey ham on 1 of the tortilla.
  • Sprinkle dried cranberry all over it.
  • Place the other tortilla over the one with turkey ham, sprinkle some grated cheese over the tortilla if desired and bake for about 4 minute.
  • Cut into wedges and serve warm.

1/2 cup shredded cheese such as jack or cheddar
1/4 pound turkey, cooked, shredded
2 tablespoons cranberry sauce
1/2 jalapeno, finely diced
1 green onion, sliced
1 handful cilantro, chopped

Steps:

  • Heat a pan over medium heat, place one tortilla in and top with the half of the cheese followed by the turkey, cranberry sauce, jalapeno, green onion, cilantro and the remaining cheese and tortilla. Cook the quesadilla until golden brown and the cheese is melted, about 2-4 minutes per side. (You can place a plate on top of the quesadilla in the pan and then flip it onto the plate and slide it from the plate back into the pan to easily flip it without loosing the contents.)
