TURKEY MEATBALL BURGER MELTS
These Turkey Meatball Burger Melts are basically a tender, moist, and FLAVORFUL meatball transformed into a burger. The "meatball" patty is smothered with sweet marinara, covered in gooey fresh mozzarella and baked, for the perfect hand-held classic Italian dish.

Steps:
- Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
- Add ground turkey through egg to a medium bowl. Using hands to gently mix the mixture just until combined. Form into four equal patties.
- Heat a small sauce pan to a medium-low heat. Add 2 tsp olive oil. Add garlic, cook 30 seconds. Add tomato paste. Cook 1 minute. Whisk in water, sugar and salt. Bring to a simmer. Simmer for 5-6 minutes while the burgers continue to cook.
- Heat a large cast iron skillet or griddle to a medium heat. Once the pan is hot, add 2 teaspoons olive oil. Spread evenly on pan or griddle. Sear burgers until golden brown and crusty on both sides, about 3-4 minutes per side.
- Once burgers have seared, spoon a little bit of sauce on each patty. Cover with a slice or two of mozzarella. Transfer to the oven and bake until cheese is melted. Slide patties on to bun, sprinkle with parsley. Serve warm

- In a large bowl, add the panko, milk, egg, sage, thyme and salt and pepper. Combine and let sit for a few minutes. Add in the turkey and combine well. Form into oblong patties (same size as the rye bread) Place on a parchment paper lined sheet pan and refrigerate for 20-30 minutes.
- While burgers are resting, in a large saute pan, heat 1/4 cup of the butter and 1 Tablespoon canola oil. Add onions and saute 15 to 20 minutes or until nicely caramelized. Set aside, but keep warm.
- In the same pan as the onions sauteed, add 3 tablespoons canola oil and the mushrooms and saute 6-8 minutes over medium high heat until softened. Set aside, but keep warm.
- Heat a griddle or cast iron skillet to medium high heat, add 1 Tablespoon canola oil and spread evenly. Add in the turkey burgers and cook for 4 to 5 minutes per side. Remove from heat, cover and keep warm.
- Butter the rye bread and add to the pan, place the gruyere on bread, then place the turkey burgers on the cheese, pile with onions and the other piece of rye, repeat for all four burgers. After 2 to 3 minutes, turn sandwich over carefully and brown on other side. Remove to cutting board and cut on the diagonal. Serve with mustard and hot cherry peppers.
TURKEY MEATBALLS
Steps:
- Bring a large pot of salted water to a boil for the pasta. In a bowl mix together; green onion, garlic, egg, bread crumbs and Parmesan cheese. With a fork stir in ground turkey or chicken and season to taste with salt and pepper. (You can crumble some in a skillet, cook, taste, and then adjust seasoning). Shape mixture into small meatballs. In a large skillet heat olive oil. Add meatballs in a single layer and let them cook for 2 to 3 minutes a side, without disturbing. If they stick, loosen with a slotted spoon. Stir in tomato sauce into the skillet, cover and simmer 10 to 15 minutes (while spaghetti is cooking) to reheat sauce and cook meatballs through. Drain pasta and then return to the pot and toss with remaining 2 tablespoons of olive oil. Dish out a portion of pasta on each plate and spoon some meatballs and sauce in center.
TURKEY BURGERS OR MEATBALLS

- Chop all the vegetables as instructed. For faster results use a food processor. Combine the onion, garlic, carrot, celery and mushrooms with the ground turkey meat. S&P to taste. Add the egg and the chicken stock to the meat mixture, and continue to combine. (Add breadcrumbs, if used). Score the meat into quarters for patties or roll into meatballs sized with a tablespoon. Can make up to 4-6 patties, or 10-12 meatballs. For Meatballs: Pre-heat oven to 375 degrees. Place all pre-rolled meatballs in an oven proof sauté pan. Once oven is preheated bake for about 20 minutes. For Burgers: Cook on medium heat about 5-6 minutes on each side.

- Heat 1 tablespoon of the oil in a large cast iron skillet over medium heat.
- Add the onion, season with some salt and pepper, and cook until golden, about 7 minutes.
- Put in a bowl and set aside. Wipe out the skillet and add another tablespoon of oil.
- Season the turkey patties with salt and pepper, and cook in the remaining oil until well browned, about 3 minutes per side. Remove from the skillet. Wipe out the pan.
- Divide the onions among 4 bread slices, and top with a slice of cheese, a patty, another slice of cheese, and a slice of bread.
- Spread the top and bottom of the sandwiches with some butter.
- Heat the cast iron skillet over medium heat.
- Cook the sandwiches, in batches if needed, turning once, until lightly browned and the cheese melts, about 2 minutes per side.
- Halve the sandwiches and serve with cranberry sauce, if desired.
