TURKEY, AVOCADO AND BACON PANINI
This Turkey, Avocado and Bacon Panini recipe is simple yet so delicious. I'll show you how to make it with a panini press or in a skillet!

Steps:
- Cut Ciabatta rolls in half. On the bottom slice put mashed avocado, tomato, 2-3 slices of turkey and 3 half slices of bacon. Add 1/4 of the cheese on top.
- Put the top half of the roll on top and spray with cooking oil.
- If you have a panini maker, on medium heat, place two sandwiches on the surface and shut the lid. Cook for 3-5 minutes so that the sandwich is heated, and cheese is melted. Repeat for the other two sandwiches. If you are using a frying pan, on medium heat place two sandwiches and press them with a spatula occasionally. Cook until roll browns and cheese melts. Repeat for the other two sandwiches. Serve while hot.

TURKEY BACON AVOCADO PANINI
This delicious Turkey Bacon Avocado Panini is so easy to make and the flavors are amazing!

Steps:
- Preheat the oven to 425 degrees F.
- Place a pound of bacon on a parchment lined half sheet pan. Sprinkle generously with granulated maple sugar. Bake in the preheated oven for about 20 minutes, or until golden and crispy. Use tongs to remove the bacon from the hot sheet pan and place on paper towels on a plate.
- Spread a thin layer of mayonnaise on both pieces of sourdough bread. Layer 3 slices of turkey breast, maple sugar coated bacon, avocado slices and one slice of each cheese.
- Place on a preheated panini press, on medium to high heat. Press down and cook the sandwich for 3 to 4 minutes, or until the cheese is melted good and the bread is nicely browned. Repeat with the second sandwich.

Just in time for those Thanksgiving leftovers. I made the cranberry sauce yesterday and the candied bacon this morning. Hopefully, you'll have some cranberry sauce left.

- Make cranberry sauce (or use leftover) as follows:.
- Mix cranberries, sugar, orange juice and water in a medium saucepan. Bring to a boil; simmer until berries pop. Chill until ready to use.
- Make candied bacon:.
- Preheat oven to 400*. Mix brown sugar and chili powder. Coat each slice of bacon on both sides with sugar mixture. Place bacon on a cookie sheet with sides and bake 15-20 minutes. Drain.
- Saute onions, poblano, and red bell pepper in olive oil.
- Spread rolls with mayo (if using). Spread cranberry sauce over mayo. Top with basil, turkey, sauteed veggies, bacon, and cheese.
- Cook on preheated panini grill until hot and cheese is melted, about 5-10 minutes. Serve with additional cranberry sauce on the side.
TURKEY AVOCADO PANINI
This is such an easy, light, refreshing and YUMMY sandwich!

- Mash the avocado and the mayonnaise together in a bowl until thoroughly mixed.
- Preheat a panini sandwich press.
- To make the sandwiches, split the ciabatta rolls in half the flat way, and brush the bottom of each roll with olive oil. Place the bottoms of the rolls onto the panini press, olive oil side down. Place a provolone cheese slice, half the spinach leaves, half the sliced turkey breast, and a sliced roasted red pepper on each sandwich. Spread half of the avocado mixture on the cut surface of each top, and place the top of the roll on the sandwich. Brush the top of the roll with olive oil.
- Close the panini press and cook until the bun is toasted and crisp, with golden brown grill marks, and the cheese has melted, about 5 to 8 minutes.

ROAST TURKEY, AVOCADO AND BACON SANDWICH
Steps:
- Preheat the oven to 400 degrees F.
- To prepare the Roast Turkey: toss the herbs and butter into the bowl of a food processor and pulse until green and smooth. Rub the turkey breast with half of the herbed butter and with salt and pepper. Place the turkey on a rack in a roasting pan and put in the oven. Let the turkey cook for 1 hour, basting every 20 minutes with the butter and pan juices. The turkey is done when it reaches an internal temperature of 165 degrees F. Let rest for 15 minutes on the cutting board.
- To assemble the sandwich: spread a thin layer of the remaining butter on 1 piece of the bread. Place 1 slice of the cheese and several slices of the turkey breast on unbuttered side of the bread. Peel and slice the avocado, toss with the lemon juice, olive oil, salt and pepper. Add avocado slices, crispy bacon slices, lettuce and another slice of fontina cheese to the top of that. Sprinkle again with salt and pepper. Slather the remaining piece of bread with the butter and place on unbuttered side out, on top of the bacon.
- Heat a cast-iron or other heavy skillet over medium-low heat. Add 1 tablespoon of butter and let it melt, swirling the pan around to coat. Put the sandwich in the pan and weigh it down with a heavy pot or can (or wrap an ordinary brick in aluminum foil and set it on top to compress the sandwich.) Toast for 1 minute, turn the sandwich over before the bread begins to burn. Repeat with remaining sandwiches. Cut the sandwiches in half and serve.

- Preheat the oven to 350 degrees F.
- Melt the butter in a small saucepan. Add the zest and juice of the lemon and 1 teaspoon of thyme leaves to the butter mixture. Set aside.
- Take the giblets out of the turkey and wash the turkey inside and out. Remove any excess fat and leftover pinfeathers and pat the outside dry. Place the turkey in a large roasting pan. Liberally salt and pepper the inside of the turkey cavity. Stuff the cavity with the bunch of thyme, halved lemon, quartered onion, and the garlic. Brush the outside of the turkey with the butter mixture and sprinkle with salt and pepper. Tie the legs together with string and tuck the wing tips under the body of the turkey.
- Roast the turkey about 2 1/2 hours, or until the juices run clear when you cut between the leg and the thigh. Remove the turkey to a cutting board and cover with aluminum foil; let rest for 20 minutes.
- Slice the turkey and serve.
TURKEY AND BACON PANINI WITH CHIPOTLE MAYONNAISE
This is one of my favorite sandwiches to make, I whipped it up one day when I was trying to use up leftover ingredients. My family raved! It's also excellent as a vegetarian sandwich if you leave out the turkey and bacon.

- Preheat a panini press according to manufacturer's instructions.
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Meanwhile, melt the butter in a large skillet over medium heat. Cook and stir the garlic and onion until the onion has softened and turned translucent, about 10 minutes. Stir in the spinach and cook until wilted, about 3 minutes more.
- While the onions and spinach are cooking, stir together the mayonnaise, minced chipotle peppers, and adobo sauce in a small bowl. Spread the mayonnaise over 4 slices of focaccia bread. Place a slice of cheese onto the 4 slices, then divide the turkey among the sandwiches. Place 2 strips of bacon onto each sandwich and top with the spinach mixture. Place the remaining slices of bread onto the sandwiches.
- Cook the sandwiches in the preheated panini grill according to manufacturer's directions until crispy and golden brown, about 5 minutes.
