Amazing Turkey Burgers with Mushroom Cream Sauce are easy enough to make for everyday dinners, but elegant enough to serve for the most discerning guest. Once formed, the turkey burgers can be individually frozen, and cooked on demand in a matter of minutes. The Mushroom Cream Sauce is out of this world delicious. You will absolutely love the combination of the two!

1 1/2 cups (8 ounces) chopped onion (1 large onion)
5 Tablespoons unsalted butter, divided
1 1/4 pounds (20 ounces) ground turkey (See Note 1)
1/2 cup (2 ounces) dry breadcrumbs
1 1/4 teaspoon Kosher salt
1/4 teaspoon dried thyme
1/4 teaspoon freshly ground black pepper
1 large egg
1 Tablespoon olive oil
1/4 cup finely chopped onions
1 cup (4 ounces) chopped mushrooms, squeezed to remove liquid (See Note 2)
1/4 cup Dry Vermouth (See Note 3)
1/4 cup Madeira (See Note 3)
1 cup heavy cream

Steps:

  • Sauté onion in 2 tablespoons butter in a large skillet over medium heat for 10 minutes, or until soft and lightly browned. Remove from heat; allow to cool 15 minutes.
  • Add sautéed onions along with the turkey, breadcrumbs, salt, thyme, pepper, egg, and 2 tablespoons of butter to the food processor fitted with a steel blade. Process 15 seconds; scrape down sides. Process an additional 15 seconds.
  • Divide mixture into 6 equal pieces (around 4.51 ounces each). (See Note 4). Shape into patties about 1/2-inch thick. (See Note 5)
  • Place remaining tablespoon of butter and olive oil in a large skillet set over medium heat. When the butter foam begins to subside, add the patties and cook for 5 minutes. Turn and cook for 5 minutes more (a total of 10 minutes). Place the patties on paper towels to drain, and keep warm while finishing the sauce.
  • Add chopped onion to same skillet used to cook the turkey burgers. Sauté over medium heat for 3 to 4 minutes without browning. Increase the heat to medium high; add mushrooms and sauté for a minute or two without browning.
  • Add the Vermouth and Madeira. Increase heat to high and boil down quickly until the liquid is syrupy, 2 to 3 minutes. Stir in the cream; boil down again over high heat until the cream has thickened slightly, 1 to 2 minutes.
  • Pour Mushroom Cream Sauce over turkey burgers and serve. (See Note 6) Yield 1 1/2 cups.

My turkey patties with mushroom gravy have a mix of onions, garlic, coriander, curry, and oatmeal topped in a protein-enriched, mushroom gravy.

2/3 cup of finely chopped onion
2 cloves of finely chopped garlic
1 pound of ground turkey (or ground beef, if you prefer)
½ teaspoons of ground coriander
½ teaspoons of curry powder
1/4 teaspoon of black pepper
½ teaspoons of hot sauce (whatever variety that you have works)
1 teaspoon of salt
1/3 cup of quick oats
1 large egg
3 tablespoons of olive oil
Mushroom Gravy Ingredients:
1 package fresh mushrooms (8-oz. cleaned and sliced)
1 tablespoon of cornstarch
1 teaspoon of mustard
1 teaspoon of catsup
1/2 teaspoons of salt
1/4 teaspoon of black pepper
½ cups of cold water
1/2 cups of milk
drippings in the pan

Steps:

  • To Prepare the Patties:
  • Clean and chop the onion and garlic.
  • In your mixing bowl, add the chopped onion, garlic, ground turkey, spices, egg, and oats.
  • Shape into four big patties.
  • Preheat the olive oil in your skillet and brown the patties before proceeding to make the mushroom gravy.
  • To Prepare the Mushroom Gravy:
  • After the patties are browned on both sides, remove the patties to a plate until you make the gravy.
  • Stir in the cornstarch in the cold water to blend through.
  • Add the mustard, catsup, salt, and pepper to the cornstarch liquid along with the sliced mushrooms. Stir the ingredients and cook until a nice consistency.
  • Now add the 1/2 cup of milk to the cooked mixture.
  • Return the meat patties to the pan and continue cooking until thickened and the patties are thoroughly cooked.
  • Add more catsup or mustard according to your taste. We like an equal balance to keep it from being too tart or too heavy on the tomato taste.

125g (4oz) Stilton cheese
45 ml (3 level tbsp) chopped flat-leafed parsley
15 ml (1 level tbsp) chopped fresh thyme
125 g (4oz) fresh breadcrumbs
700 g (11⁄2lb) cooked turkey meat
4 large eggs
10 ml (2 level tsp) ready-made English mustard
1 garlic clove
Salt and ground black pepper
Flour for dusting
For the sauce
450 g (1lb) wild or button mushrooms
50 g (2oz) butter
300 ml (1⁄2 pint) vermouth
500 ml tub crème fraîche
Vegetable oil for frying

Steps:

  • Cut the Stilton cheese into 5mm (1/4in) cubes. Mix the chopped fresh herbs with the fresh breadcrumbs.
  • Roughly cut the cooked turkey meat into pieces and place in a food processor with three eggs, the mustard and the crushed garlic. Process until the mixture forms a fine paste. Season well with salt and pepper.
  • Divide the turkey mixture into 12 rounds. On a lightly floured surface, pat each round into a flat circle about 6.5cm (21/2in) in diameter. Put a cube of cheese in the centre and gently bring the turkey mixture around to cover completely. Dust each patty with flour, brush with the remaining beaten egg and roll in the breadcrumb mixture. Refrigerate, uncovered, while you make the sauce.
  • To make the mushroom sauce, finely slice the mushrooms. Melt the butter in a frying pan and cook the mushrooms for 5min over a high heat. Pour in the vermouth, bring to the boil and bubble until reduced by half. Add the crème fraîche, return to the boil and bubble for a further 10min or until the mixture is syrupy. Season.
  • To cook the patties, shallow-fry for 3min on each side (see Cook's Tip). Drain well on absorbent kitchen paper. Serve the patties with the mushroom sauce.

1 lb lean ground turkey breast
1/4 teaspoon dried basil
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 1/2 tablespoons olive oil, divided use
8 ounces button mushrooms, sliced
1 large onion, chopped
1/8 cayenne
2 teaspoons Dijon mustard

Steps:

  • In a medium bowl, stir together turkey, basil, salt, pepper, and garlic powder. Form into 4 patties.
  • In a large nonstick skillet, heat 1 T. oil over medium-high heat, swirling to coat the bottom. Cook the patties for 5 minutes; turn over and cook for 4 minutes, or until no longer pink in the center. Transfer to a plate, and cover to keep warm.
  • Still on medium high, heat the remaining 1 1/2 teaspoons oil in the skillet, swirling to coat the bottom. Cook the mushrooms, onion, and cayenne for 4 minutes, or until the onion is soft, stirring frequently. Remove from heat.
  • To serve, spread the mustard over the patties, and top with the mushroom mixture.

3 tablespoons extra-virgin olive oil, 2 turns of the pan for the mushrooms, 1 turn for the patties
8 cremini mushrooms, (baby portobellos), chopped
8 shiitake mushrooms, chopped
1 shallot, chopped
Salt and pepper
1 1/3 pounds ground turkey, the average weight of 1 package
3 or 4 sprigs fresh sage, leaves chopped, about 2 tablespoons
1 tablespoon Worcestershire sauce, eyeball it
1/2 cup Italian bread crumbs
1 egg, beaten
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups chicken stock
1 teaspoon poultry seasoning

Steps:

  • Heat a nonstick skillet over medium high heat. Add oil, 2 turns of the pan. Add chopped mushrooms and shallots and season with salt and pepper. Saute mushrooms 5 or 6 minutes until dark and tender. Remove from heat. Transfer mushrooms to a bowl and return pan to stove top to preheat to cook patties.
  • Add turkey to the mushroom mixture. Make a well in the center of the meat. Add sage, Worcestershire sauce, bread crumbs and beaten egg and season with salt and pepper. Mix turkey meat loaf and make a small 1-inch patty. Place meat in the hot pan and cook 1 minute on each side. Taste the mini patty to help you adjust seasonings. Divide meat loaf mixture into 4 equal parts by scoring the meat before you form patties. Form 4 equal oval patties 1 inch thick. Add 1 tablespoon extra-virgin olive oil, 1 turn of the pan, and arrange patties in the skillet. Cook 6 minutes on each side and transfer to a serving plate or individual dinner plates. Return pan to heat and add butter. When butter melts, whisk in flour and cook 1 to 2 minutes. Whisk in stock and season gravy with poultry seasoning, salt and pepper, to taste. Simmer gravy until it reaches desired thickness, and pour over patties, reserving a little to pass at the table.

2 tablespoons extra-virgin olive oil, plus more for brushing the grill grates
2 cups cremini mushrooms, finely chopped
1/4 cup finely chopped shallots
2 garlic cloves, chopped
1 1/4 pounds ground turkey (dark meat preferred)
1/2 cup Greek yogurt, plus extra for the buns
1/2 cup dry breadcrumbs
1 large egg, beaten
Kosher salt and freshly ground black pepper
4 brioche buns, split and toasted
4 slices ripe tomato
16 thin cucumber slices

Steps:

  • Add the oil to a medium skillet over medium-high heat. When the oil is hot, add the mushrooms and cook, without stirring, until the undersides are browned, 2 to 3 minutes. Stir and let brown on the other side, about 2 minutes, then reduce the heat to medium and add the shallots and garlic. Cook and stir until the shallots are softened, about 5 minutes. Remove from the heat, then cool the mixture.
  • Combine the turkey, yogurt, breadcrumbs, egg and cooled mushrooms in a large bowl. Season with salt and pepper. Mix together lightly with a wooden spoon just to combine; don't overmix. Form into four 1-inch-thick patties. Refrigerate for 2 to 3 hours and up to overnight.
  • Preheat a grill or grill pan to medium-high heat. Sprinkle the outsides of the patties with salt and pepper. Brush the grill grates with oil and grill the burgers until nicely marked, cooked through and the internal temperature reads 155 to 160 degrees F, about 6 minutes per side. Serve on the buns with additional yogurt, tomato and cucumber slices.

1/4 cup finely minced shallots
1 1/2 pounds ground turkey
2 tablespoons finely chopped parsley
2 tablespoons Dijon mustard
1/4 cup dry bread crumbs
1 tablespoon brandy
1/4 cup chicken stock
Salt and freshly ground black pepper

Steps:

  • Heat one tablespoon of the oil in a heavy skillet. Saute the shallots over medium heat until they begin to turn golden. Remove the pan from the heat, scrape half the shallots into a mixing bowl and reserve the rest in a small dish.
  • Add the turkey, one tablespoon parsley, one tablespoon mustard and the bread crumbs to the bowl. Mix until the ingredients are well blended. Shape the mixture into eight patties of equal size, each about three-fourths of an inch thick.
  • Heat the remaining oil in the skillet. Add the patties and saute over medium heat about 10 minutes, turning them once, until they are cooked through. Remove the patties to a warm platter and cover with foil.
  • Return the reserved shallots to the pan and stir in the remaining mustard along with the brandy and stock. Cook, stirring, a minute or two until the sauce thickens slightly. Season to taste with salt and pepper and stir in the remaining parsley.
  • Pour the mixture over the patties and serve.

2 tablespoons butter, melted

1 1/2 cups finely chopped onions
1 teaspoon finely chopped garlic

1 egg, lightly beaten
Salt and freshly ground pepper to taste
1 tablespoon butter
pound fresh mushrooms, thinly sliced, about 2 cups

1/4 cup dry white wine
1/2 cup chopped peeled fresh tomatoes or canned crushed tomatoes
3/4 cup fresh or canned chicken broth
1 teaspoon chopped fresh tarragon or 1/2 teaspoon dried
2 teaspoons arrowroot or cornstarch
1 tablespoon water

Steps:

  • Place the lamb in a mixing bowl.
  • Heat two tablespoons of the oil in a small skillet and add the onions and garlic. Cook briefly, stirring, until wilted. Sprinkle with cumin and stir, blending well. Cool briefly.
  • Scrape the onion mixture into the lamb. Add the coriander, bread crumbs, egg, salt and pepper. Blend well with fingers and shape the mixture into 20 patties. Set aside.
  • For the mushroom sauce, heat the butter in a saucepan and add the mushrooms, shallots, salt and pepper. Cook over medium-high heat until all the moisture from the mushrooms has evaporated.
  • Add the wine and simmer briefly over high heat. Add the tomatoes, broth and tarragon. Cook about 5 minutes, stirring occasionally.
  • Blend the arrowroot with the water. Stir into the sauce and cook briefly.
  • Meanwhile, heat the remaining olive oil in a nonstick skillet large enough to hold the patties in one layer. Add the patties and turn them so they brown evenly, about 5 minutes. Drain the fat.
  • Add the patties to the sauce, cover and simmer about 10 minutes.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C), and grease a 9x12 inch baking dish.
  • Mix the ground turkey, bread crumbs, onion, egg, salt, and pepper in a bowl, and form into 6 patties. Place the patties in the prepared baking dish.
  • Stir together the maple syrup, ketchup, mustard, vinegar, and oil in a bowl, and set aside.

3/4 pound ground turkey
2 teaspoons Worcestershire sauce
1 teaspoon Dijon mustard
3 teaspoons olive oil
1 small onion, chopped
1/2 pound mushrooms, sliced
1/4 teaspoon crumbled dried sage
3/4 cup chicken broth
2 teaspoons all-purpose flour
cranberry sauce as an accompaniment

Steps:

  • In a bowl stir together turkey, Worcestershire sauce, and mustard and form into two 3/4-inch-thick burgers. Season burgers with salt and pepper.
  • In a large heavy skillet heat 2 teaspoons oil over moderately high heat until hot but not smoking and sauté burgers until cooked through, about 6 minutes on each side. Transfer burgers to a plate.
  • To skillet add onion and remaining teaspoon oil and cook over moderate heat, stirring, 3 minutes. Add mushrooms and sage and cook, stirring, until liquid mushrooms give off is evaporated. In a small bowl whisk together broth and flour until flour is dissolved and stir into mushrooms. Simmer gravy, stirring, 5 minutes and spoon over burgers.
  • Serve burgers with cranberry sauce.

8 ounces cremini mushrooms or shiitake-mushroom caps, or a combination, chopped (2 1/4 cups)
Kosher salt and freshly ground pepper
1 pound ground turkey
3 ounces pancetta, finely chopped (2/3 cup)
1 tablespoon minced garlic (from 3 cloves)
1 tablespoon tomato paste
2/3 cup dry white wine, such as Sauvignon Blanc
1 cup low-sodium chicken broth
2 1/2 cups All-Purpose Tomato Sauce
3/4 cup whole milk
12 ounces rigatoni
Grated Parmigiano-Reggiano, for serving

Steps:

  • Heat 3 tablespoons oil in a pot over medium-high. When it shimmers, add onion, carrots, and mushrooms; season with salt. Cook, stirring occasionally, until vegetables are tender and golden in places, 8 to 10 minutes (if bottom of pot browns too quickly, reduce heat to medium).
  • Add remaining 1 tablespoon oil, turkey, and pancetta; season with salt and pepper. Cook, breaking turkey into bite-size pieces, until browned in places, about 5 minutes. Stir in garlic and tomato paste; cook until fragrant, about 1 minute more. Add wine and boil, scraping up any browned bits, until mostly evaporated. Add broth and tomato sauce; bring to a boil, then reduce heat to low and simmer, stirring a few times, until thickened and reduced slightly, about 30 minutes.
  • Stir in milk and continue simmering until again thickened and reduced slightly, 12 to 15 minutes more. Remove from heat. Meanwhile, cook pasta in a large pot of generously salted boiling water according to package instructions.
  • Drain, reserving 1 cup pasta water. Toss pasta with a few spoonfuls of Bolognese and enough pasta water for sauce to evenly coat pasta. Serve pasta with more Bolognese, topped with cheese, parsley, and a drizzle of oil.
