These are served in every restaurant in the Middle East. You can easily make them at home and make them taste just as good, if not better. Don't substitute sour cream for the yogurt, as the yogurt is a meat tenderizer.

¼ cup lemon juice
¼ cup vegetable oil
¾ cup plain yogurt
4 cloves garlic, minced
2 teaspoons tomato paste
1 ½ teaspoons salt
1 teaspoon dried oregano
¼ teaspoon ground black pepper
¼ teaspoon ground allspice
¼ teaspoon ground cinnamon
⅛ teaspoon ground cardamom
2 pounds skinless, boneless chicken breast halves - cut into 2 inch pieces
2 onions, cut into large chunks
1 large green bell pepper, cut into large chunks
1 cup chopped fresh flat-leaf parsley

Steps:

  • Whisk together the lemon juice, vegetable oil, plain yogurt, garlic, tomato paste, salt, oregano, pepper, allspice, cinnamon, and cardamom in a large bowl; add the chicken and toss to coat. Transfer the chicken mixture into a large plastic bag; refrigerate at least 4 hours.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread the chicken, onions, and pepper onto metal skewers. Cook on preheated grill until the chicken is golden and no longer pink in the center, about 5 minutes each side. Sprinkle the parsley over the skewers.

Lemon and garlic bring a burst of flavor to these grilled chicken skewers. Middle Eastern Shish Tawook will make a great addition to your next cookout! NOTE: For best flavor, marinade the meat at least 4 hours, up to overnight, before grilling.

2 lb chicken breast, cut into 1-1 ½ inch pieces
1 lemon, juiced (roughly ¼ c)
6 garlic cloves, minced
¼ c plain yogurt, or Greek yogurt
2 Tb olive oil
1 tsp ground thyme
1 tsp paprika
1 tsp salt
2 tsp tomato paste
¼ tsp ground black pepper
6-7 wooden skewers, soaked in water for 10 minutes

Steps:

  • In a small bowl, mix all the marinade ingredients together.
  • Place the cubed chicken into a flat, sealable container and pour the marinade over the chicken. Mix the chicken with the marinade to be sure all the pieces are well-coated.
  • Cover the container and let marinate in the refrigerator for at least 4 hours, up to overnight.
  • Preheat your grill to a medium heat, roughly 350F. (You should be able to hold your hand about 3 inches from the cooking grate for 6-7 seconds.)
  • Thread the chicken pieces onto the soaked skewers, pressing the pieces up against each other.
  • Grill the chicken skewers for 8-10 minutes a side, until the chicken is firm and golden.
  • Serve the shish tawook with pita bread (get our pita bread recipe here) and sliced tomatoes or with rice and grilled vegetables.

1.5 cups of plain yogurt
1 Tbs paprika
8-10 cloves of garlic, minced fine
2 sprigs of fresh oregano
1/2 tsp minced fresh ginger
juice of 2 lemons
2 Tbs olive oil
1/2 tsp salt
2 lb of boneless, skinless chicken thighs, cut into 1 inch chunks

Steps:

  • Place first 8 ingredients in a large bowl, stir.
  • Add chicken, cover and place in fridge to marinate for 3 hours or overnight.
  • Skewer chicken on large skewers. Line a rimmed baking sheet with aluminum foil and place racks on top. Place skewed chicken on racks.
  • Broil in oven about 4 inches under heating element, about 8 minutes, turn. Continue broiling for about 4 more minutes. Chicken should have some charring and cooked through. Alternatively you may grill these on a gas or charcoal grill.

Steps:

  • In a large bowl, add the ingredients for the marinade (yogurt, lemon juice, olive oil, garlic, tomato paste, all the seasoning and salt/pepper) and whisk to combine.
  • Place the chicken cubes in the same bowl and coat the chicken in the marinade. Cover, and let rest/marinate in the fridge for at least 4 hours.
  • Thread the chicken on skewers right before grilling. Add one wedge of onions to each skewer, if desired.
  • Grill on medium heat for 5-8 minutes per side.

2 chicken breasts (boneless, skinless, or 4 to 5 boneless, skinless thighs)
1 medium onion
2 cloves garlic
1/2 cup plain yogurt (or milk)
3 tablespoons vegetable oil
2 tablespoons tomato paste
1 teaspoon ground black pepper
1 teaspoon paprika
1 teaspoon salt (plus more for seasoning)
Garnish: dried oregano, sumac, and paprika (optional)

Steps:

  • Gather the ingredients.
  • Pat the chicken breasts dry with paper towels.
  • Cut the meat into 1-inch pieces. Set aside.
  • Using the finest grater possible, grate the onion and garlic cloves over a medium bowl.
  • Pour the pulp and juice into a fine mesh strainer and, using a wooden spoon, press out the juice into a medium bowl. Discard the onion and garlic pulp; reserve the juice.
  • Stir together the onion-garlic juice, yogurt, oil, tomato paste, black pepper, paprika, and salt.
  • Add the cubed chicken and toss to coat.
  • Cover the bowl and refrigerate it for at least 4 hours, preferably overnight for maximum flavor.
  • Prepare a medium (350°F to 375°F) gas or charcoal grill fire. If using bamboo skewers, soak skewers in water for 30 minutes so they don't catch fire on the grill.
  • Remove the chicken pieces from the marinade and thread them onto soaked bamboo kebab skewers or metal skewers. The chunks of chicken can touch each other, but don't put them too close together to ensure they cook through. Discard any remaining marinade.
  • Sprinkle the kebabs generously with salt and place on pre heated grill. Grill evenly on all sides, about 12 minutes total.
  • Garnish with sumac, dried oregano, and paprika, if desired, and serve.

2 lbs boneless chicken breast (cut into cubes/Kabab chunks)
1 cup lemon juice
slice lemon (optional)
15 cloves garlic (crushed)
6 tablespoons plain yogurt
6 tablespoons olive oil
2 tablespoons red vinegar (or apple cider vinegar)
1 teaspoon white pepper (ground)
1/3 teaspoon ground ginger
1/2 teaspoon ground thyme (or ground oregano)
1/3 teaspoon paprika
1 teaspoon salt (or to taste)
1 teaspoon tomato paste
4 teaspoons Garlic Paste (Lebanese style)
4 loafs pita bread
4 tomatoes (grilled)
2 cups French fries
8 salted pickles (Lebanese style cucumber pickles)

Steps:

  • Cut the chicken breasts into cubes of about 2 inches each. The cubes shouldn't be too small otherwise they'll dry quickly on the grill.
  • Place chicken cubes in a bowl, add all marinade ingredients and rub with hands until all ingredients assimilated well.
  • Let marinate in a covered container in the fridge for at least 4 hours, preferably overnight.
  • Skewer the chicken right before grilling.
  • Grill on a BBQ on medium heat for 12-15 minutes maximum turning frequently. Overcooking can dry the chicken.
  • Alternatively, you can lay the skewers on the edges of a deep Pyrex dish and bake in the oven at 400F for 15 mins.
  • Once cooked, remove the chicken cubes and place in a pot while covering the lid tightly. Let rest for 5 minutes to help the chicken self-steam and turn juicier and softer.
  • Spread 1 teaspoon of Lebanese garlic paste along the center/diameter of a pita bread.
  • Add 4-5 chicken kabobs.
  • Garnish with salted cucumber pickles, French fries, grilled tomatoes or peppers (optional)., Roll and enjoy. You could also toast the wrap roll through a panini grill for 2-3 minutes.
