TUSCAN TURKEY SAUCE AND PASTA



Tuscan Turkey Sauce and Pasta image

Number Of Ingredients 10

5- to 6-pound turkey, cut in quarters and prepared as for Turkey Chili
2 large onions, coarsely chopped
3 tablespoons butter
3 tablespoons olive oil
6 large ripe tomatoes, peeled, seeded, and chopped
1/2 cup fresh basil leaves, finely chopped, or 2 to 3 teaspoons dried basil
Salt, freshly ground pepper to taste
2 to 3 pounds hot spaghettini, cooked al dente and drained
Grated Romano cheese
Grated Parmesan cheese

Steps:

  • Cook the turkey in water with onion, celery, parsley and peppers, as for Turkey Chili. Remove and cool. Cut the meat from the bird into small dice. Reduce the broth to 4 cups.
  • Sauté the onion in the butter and oil, add the tomatoes and simmer until the tomatoes are melted into the onions. Add the basil, salt and freshly ground pepper. Combine with the 4 cups broth and cook down for 20 minutes. Add the diced turkey and heat through.
  • Put the pasta on a large platter (toss it with a little oil first). Spoon some of the turkey sauce over the top and serve the remainder in a bowl. Serve grated cheese in bowls, to sprinkle on top. Drink a Volpolicella or Chianti.

1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
1 package (20 oz) boneless skinless chicken thighs, cut in 1 1/2-inch pieces
8 oz uncooked campanelle pasta (2 3/4 cups)
1/2 cup chopped drained oil-packed sun-dried tomatoes with herbs
1 package (8 oz) cream cheese, cut into cubes, softened
1 cup shredded Parmesan cheese (4 oz)
1 package (5 oz) fresh baby spinach leaves

Steps:

  • Spray 5-quart slow cooker with cooking spray. In slow cooker, mix broth, Italian seasoning, salt and pepper flakes.
  • Stir in chicken. Cover; cook on High heat setting 1 1/2 to 2 hours or until chicken is cooked through (at least 165°F). Stir in pasta and tomatoes. Cover; cook on High heat setting 25 to 30 minutes or until pasta is tender, stirring twice.
  • Stir in cream cheese and Parmesan cheese until cheeses melt. Stir in spinach until wilted. Let stand covered 5 to 10 minutes or until slightly thickened. Stir before serving.

This is a recipe that is now a favorite in our house. I've made this with 4 to 6 potatoes instead of squash and both are excellent!

2 tablespoons all-purpose flour
1 teaspoon chipotle chili powder
½ teaspoon garlic powder
½ teaspoon ground cinnamon
½ teaspoon ground coriander
½ teaspoon salt
¼ teaspoon ground black pepper
1 (4 pound) skinless, boneless turkey breast half
1 tablespoon olive oil
1 acorn squash, seeded and cut into quarters
3 large carrots, peeled and cut into 3 pieces
2 red onions, quartered
6 unpeeled garlic cloves

Steps:

  • Mix flour, chipotle chili powder, garlic powder, cinnamon, coriander, salt, and black pepper in a large resealable plastic bag and shake to combine. Place the turkey breast into the bag, seal, and shake to coat turkey with the spice mix.
  • Heat olive oil in a large skillet over medium heat and sear the seasoned turkey breast in the hot oil until browned on both sides, about 5 minutes per side (meat will still be pink inside).
  • Place acorn squash quarters, carrots, red onions, and garlic cloves into the bottom of a large slow cooker. Place the browned turkey breast on top of the vegetables. Cover cooker.
  • Cook turkey breast until meat and vegetables are very tender, 3 1/2 to 4 hours on High or 7 to 8 hours on Low. Transfer turkey breast to a platter and allow to rest for about 10 minutes before slicing.
  • Peel squash and garlic cloves. Arrange the cooked vegetables around the turkey meat and spoon the juices from the slow cooker over the turkey and vegetables to serve.

2 bone-in turkey thighs (about 1 1/2 lb), skin removed
1 can (14.5 oz) diced tomatoes with Italian-style herbs, undrained
2 tablespoons tomato paste
2 cloves garlic, finely chopped
1 cup uncooked couscous
1 1/2 cups water
2 cups sliced zucchini

Steps:

  • In 3 1/2- to 4-quart slow cooker, place turkey thighs. In small bowl, mix tomatoes, tomato paste and garlic. Pour over turkey.
  • Cover; cook on Low heat setting 6 to 8 hours.
  • About 25 minutes before serving, cook couscous in water as directed on package. Increase heat setting on slow cooker to High. Stir zucchini into tomato mixture. Cover; cook about 20 minutes longer or until zucchini is tender.
  • To serve, remove bones from turkey. Stir gently to break up turkey. Serve over couscous.

1 cup uncooked small pasta shells
1 pound lean ground turkey
2 medium onions, chopped
2 garlic cloves, minced
3 cans (14-1/2 ounces each) reduced-sodium chicken broth
2 cans (15 ounces each) cannellini beans, rinsed and drained
2 cans (14-1/2 ounces each) Italian stewed tomatoes
2 teaspoons dried oregano
2 teaspoons dried basil
1 teaspoon fennel seed, crushed
1 teaspoon pepper
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large stock pot, cook turkey, onions over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain.
