KOREAN PORK CHOPS WITH GOCHUJANG MARINADE

Korean Pork Chops with Gochujang Marinade image

Provided by Food Network

Time 30m

Yield 4 servings

Number Of Ingredients 22

4 9-ounce Porterhouse pork chops, 1 inch thick
1 scallion, finely chopped
3 tablespoons Korean chili paste* (See Cook's Note)
3 tablespoons soy sauce
2 tablespoons Asian sesame oil
2 tablespoons Chinese rice wine or dry sherry
1 tablespoon rice vinegar
1 tablespoon light brown sugar
2 teaspoons peeled and minced fresh ginger
2 garlic cloves, minced
2 teaspoons sesame seeds, for garnish
Asian slaw, optional (recipe below)
3 tablespoons rice vinegar
1 tablespoon coarsely ground Korean hot red pepper flakes
2 teaspoons soy sauce
2 garlic cloves, minced
1/2 teaspoon salt
1/4 cup vegetable oil
1 tablespoon Asian sesame oil
1 14-ounce bag coleslaw
1 cup carrots, julienned or shredded
2 scallions, finely chopped

Steps:

  • To make marinade: Whisk first 9 ingredients (excluding pork) together in medium bowl. Pour into one-gallon sealable plastic bag. Add pork chops, coating pork in marinade. Close bag and refrigerate, turning bag occasionally, for at least 2 and up to 6 hours. To make pork: Prepare outdoor grill for direct cooking over medium-high heat, about 450 degrees F. Brush grill grates clean. Remove pork from marinade - do not shake off excess marinade. Discard remaining marinade. Grill, with grill lid closed, turning once, until the internal temperature reads between 145 degrees F. (medium rare) to 160 degrees F. (medium) on a digital meat thermometer, about 10 minutes. Remove from heat and let rest 3 minutes. If making with Asian slaw, divide slaw among 4 dinner plates. Top each with a chop, sprinkle with sesame seeds and serve immediately.

MOMMY'S PAN-FRIED PORK CHOPS

Mommy's Pan-Fried Pork Chops image

Delicious with mashed potatoes with gravy and corn. We also like to eat it with rice and gravy with a side of veggies.

Provided by Mebriella

Categories     Pork

Time 35m

Yield 4 , 4 serving(s)

Number Of Ingredients 14

1 1/2 lbs pork chops (thinly sliced, boneless)
1 1/2 cups flour
2 teaspoons garlic powder
2 teaspoons salt
1 teaspoon pepper
1/4 teaspoon msg
2 eggs
1 cup oil
1/4 cup flour (milk gravy)
2 cups milk (milk gravy)
1 teaspoon salt (milk gravy)
1/2 teaspoon pepper (milk gravy)
2 (7/8 ounce) packages mccormick pork gravy mix (gravy for rice)
1 3/4 cups water (gravy for rice)

Steps:

  • Instructions for Pork Chops:.
  • In a large skillet add the oil, start to preheat oil on medium heat.
  • Line a plate with paper towels to drain the pork chops once they come out of the pan.
  • Combine flour, garlic powder, salt, pepper, and MSG in a large bowl with lid. Stir to mix well.
  • Crack eggs in a rectangle bowl and beat eggs well.
  • Add the pork chops to flour mixture bowl and place lid on bowl. Shake the bowl vigorously to coat the pork chops.
  • Shake off excess flour from each pork chop and set aside on plate.
  • Dip each side of pork chop in egg and place in flour mixture bowl. Do this with the rest of the pork chops. Place lid on bowl and shake vigorously to evenly coat the pork chops.
  • Raise heat for oil to medium high.
  • Carefully place pork chops in the oil. Fry for 2-3 minutes. Using a fork, carefully flip pork chops over and fry for another 2-3 minutes. The coating should be a nice golden brown color.
  • Placed cooked pork chops on plate with paper towels to absorb the oil. Fry the rest of the pork chops the same way. Turn off heat when done.
  • Milk Gravy Instructions:.
  • Carefully pour out all the oil into an oil jar or into a heat safe bowl to throw away the oil after it has cooled.
  • Wipe the sides of the skillet to remove any oil that has dripped down the sides.
  • Add 3-4 tablespoons of the oil used to cook the pork chops into the same skillet.
  • Turn heat on medium high heat.
  • Add the 1/4 cup of flour and mix with the oil. Mix constantly until the flour turns a golden brown.
  • Add the 2 cups of milk and stir constantly. The gravy will start to thicken.
  • Add the 1 tsp salt and 1/2 tsp of pepper. Remove from heat and place gravy in a bowl. Serve with mashed potatoes.
  • Gravy for Rice Instructions:.
  • Empty 2 packages of pork gravy mix into a medium saucepan.
  • Add 1 3/4 cups of water and whisk well until all the lumps are gone.
  • Turn heat on high and whisk constantly until the gravy begins to boil.
  • After it starts to boil, whisk for another 1-2 minutes. The gravy should now be thick. Remove from heat and turn off stove.
  • Place gravy into a bowl and serve over pork chops and cooked rice.

OLD-FASHIONED PAN-FRIED PORK CHOPS

Old-Fashioned Pan-Fried Pork Chops image

I thought it was time to revisit on old-fashioned cooking method: Pan Frying. Is it time to bring it back? Go into any of the wonderful family-style restaurants in the South and order a pan-fried pork chop, and you are served a thing of beauty. For some reason, this no-fuss, easy method has fallen out of favor with home cooks (maybe because most recipes are so vague..."Season pork chop, cook in frying oil until done".) Follow my instructions and you will yield a beautifully browned, moist chop...serve with Macaroni & Cheese and some greens, and you will have a fast, old-fashioned weeknight supper.:)

Provided by Alan in SW Florida

Categories     Pork

Time 35m

Yield 4 serving(s)

Number Of Ingredients 9

1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper (ground red pepper)
1 cup unbleached all-purpose flour
4 bone-in-rib pork chops (chops between 3/4 and 1 inch are best for this recipe) or 4 center-cut pork chops, about 3/4-inch thick (chops between 3/4 and 1 inch are best for this recipe)
3 slices bacon, chopped
1/2 cup vegetable oil

Steps:

  • Combine the garlic powder, paprika, salt, pepper, and cayenne in a bowl. Place the flour in a shallow dish. Pat the chops dry with paper towels. Cut 2 slits about 2 inches apart through the fat on the edges of each chop (Since pork chops have a tendency to curl when cooked at high heat, cutting the slits will prevent this from happening). Season both sides of the chops with the spice mixture, then dredge the chops lightly in the flour (do NOT discard the flour). Transfer to a plate and let rest for 10 minutes.
  • Meanwhile, cook the chopped bacon in a large nonstick skillet over medium heat until the fat renders and the bacon is crisp, about 8 minutes. using a slotted spoon, transfer the bacon to a paper towel-lined plate and reserve for another use. (if having baked potatoes with the pork chops, serve with sour cream, chopped chives, and sprinkle on the cooked, chopped bacon -- YUM!) Do NOT wipe out the pan!
  • Add the oil to the fat in the pan and heat over medium-high heat until just smoking. Return the chops to the flour dish and turn to coat. Cook the chops until well browned, 3 to 4 minutes per side.
  • Serve and enjoy!
