4 boneless, skinless chicken breast halves (about 8 ounces each), sliced in half horizontally
1 teaspoon dried thyme
Kosher salt and freshly ground pepper
3 tablespoons extra-virgin olive oil
1/4 cup all-purpose flour
1 red onion, thinly sliced
1 small bunch fresh thyme, leaves chopped
1/4 cup white wine (optional)
1 cup low-sodium chicken broth
Juice of 2 lemons
2 tablespoons unsalted butter
One 9-ounce bag spinach

Steps:

  • Season the chicken with the dried thyme, and salt and pepper to taste. Heat a large saute pan over medium heat and add the olive oil. Put the flour in a shallow dish. Working in batches, dredge the chicken in the flour and add to the pan; saute until cooked through, about 3 minutes per side. Transfer to a plate and tent with aluminum foil.
  • Add the red onion and fresh thyme to the pan and cook over low heat, stirring occasionally, until aromatic, about 5 minutes.
  • Combine the wine, chicken broth and the juice of 1 lemon in a bowl. Turn the heat under the pan to high and deglaze with the broth mixture, scraping up the pan with a wooden spoon. Cook until the liquid starts to reduce, about 10 minutes. Remove from the heat and whisk in 1 1/2 tablespoons butter. Season with salt and pepper.
  • Meanwhile, put the spinach in a microwave-safe dish and add 3 tablespoons water; cover loosely with plastic wrap and microwave until hot and wilted, 5 to 6 minutes. Drain and toss with the remaining 1/2 tablespoon butter, the juice of the remaining lemon, and salt and pepper to taste. Arrange on a platter and top with the chicken. Spoon the sauce on top.

1/4 cup freshly squeezed lemon juice
4 large onions, thinly sliced
salt and freshly ground black pepper, to taste
1/8 teaspoon minced fresh habanero chile, or to taste
5 tablespoons peanut oil
1 frying chicken (2 1/2 to 3 1/2 pounds), cut into serving pieces
1 habanero chile, pricked with a fork
1/2 cup pimento-stuffed olives
4 carrots, scraped and thinly sliced
1 tablespoon Dijon-style mustard
1/2 cup water

Steps:

  • In a large nonreactive bowl, prepare a marinade by mixing the lemon juice, onions, salt, pepper, minced chile, and 4 tablespoons of the peanut oil in a large bowl. Place the chicken pieces in the marinade, making sure that they are all well covered. Cover the bowl with plastic wrap and allow the chicken to marinate for at least 3 hours in the refrigerator.
  • Preheat the broiler. Remove the chicken pieces, reserving the marinade and onions, and place the chicken in a shallow pan. Broil the the chicken until it is lightly browned on both sides. Remove the onions from the marinade. Heat the remaining tablespoon of oil in a flameproof 5-quart casserole or Dutch oven and cook the onions slowly until tender and translucent. Add the reserved marinade. When the liquid is thoroughly heated, add the chicken pieces, pricked chile, olives, carrots, mustard, and water. When the dish has reached the desired degree of hotness, remove the chile and reserve (it can be served separately to the chile heads). Stir to mix well, then bring the yassa slowly to a boil. Lower the heat and simmer, covered, for about 30 minutes, or until the chicken is cooked through. Serve hot over white rice.

1 cup fresh lemon juice
4 lbs chicken pieces, cut in halves
3 lbs white onions
1/2 cup chopped fresh parsley
1 tablespoon coarse black pepper
1 tablespoon coarse salt
3 bay leaves
1 teaspoon thyme
1 teaspoon crushed red pepper flakes (optional)
1 cup salad oil
1 quart chicken stock
white rice
watercress (to garnish) or fresh parsley (to garnish)

Steps:

  • Pour: 1 cup lemon juice and 1 cup salad oil over the chickens;.
  • Allow to marinate for 30 minutes.
  • Remove the chickens and broil (preferably over charcoal) until chickens brown on all sides and are about half done.
  • Simmer the onion mixture above over direct heat stirring up from bottom to prevent onions from browning. Onions should remain white. cook no longer than 5 minutes.
  • Return chickens to pan, smothering them with the onions.
  • Pour 1 quart chicken stock over the mixture.
  • Bake at 375F for 20 minutes until onions turn a light golden color.
  • cook 1/2 to 1 lb white rice as directed on package.
  • Place serving of cooked rice on a dinner plate. Top with 1 broiled chicken half.
  • Cover with 1/2 to 1 cup Yassa onion mixture.
  • Garnish with watercress or parsley.
