PURPLE YAM (UBE) CRINKLE COOKIES
Purple cookies, with a crunchy exterior, a soft center, and delicious Ube taste. A perfect snack to accompany your coffee or tea.

Steps:
- Wash the outer skin. Peel the bark like outer skin of the Ube. Ube is very slimy, be careful when peeling.
- Boil or steam for about 25 - 30 minutes. If using sweet purple potato, boil it or steam it for about 20 minutes.
- Drain the water and mash the ube / purple sweet potatoes using a potato masher or food processor. Set aside.
- In a small mixing bowl, combine flour, baking powder, sugar, and salt. Mix until combined and set aside.
- In a stand mixer, cream the butter and sugar until it reaches a fluffy light yellow color. Add eggs and mix until combined. Once it is combined, you can add the mashed ube, and ube extract (optional). Beat again until incorporated.
- Gradually add flour into the mixture and beat. Beat until just combined, do not over mix. Refrigerate the dough for at least 4 hours or overnight. The dough will be very wet, refrigerating it allows it to be shaped.
- Preheat the oven to 350° F
- Scoop 1 tbsp of the cookie dough and shape it into a ball. Place it into the cookie sheet.
- Roll each of the balls into powdered sugar. Make sure that all the ball is fully coated. Don't be afraid to roll it on generously. For a cracked sugar appearance, apply a few coats of sugar. The cookie will absorb some of the sugar in the oven.

UBE CRINKLE COOKIES

- In a small mixing bowl add all dry ingredients (flours, baking powder, salt) and whisk to combine. Set aside.
- In a larger mixing bowl for wet ingredients, combine the butter, granulated sugar, and brown sugar until fully incorporated.
- Add the eggs into the wet ingredient bowl. Then, add the ube puree and ube extract. Combine until the dough mixture color is homogenous.
- Slowly add dry ingredients into the wet ingredients while mixing until incorporated.
- Chill the bowl of dough in the freezer for about 20 minutes.
- Preheat oven to 350 °F. Line a baking sheet with parchment paper and set aside.
- Remove dough from the freezer and scoop about 1 tablespoon (I used a #50 disher to scoop) of dough and roll into a ball.
- Roll the ball of dough in a bowl of powdered sugar until it's well coated--I roll it around until it's completely white on the outside. Place dough on a baking sheet and give one-inch space between each cookie.
- Bake for 12-15 minutes or until the cookies are firm. Remove from the oven and place the cookies on a cooling rack for five minutes. Serve and enjoy.

EASY AND DELICIOUS PURPLE YAM (UBE) COOKIES
A simple recipe for purple yam cookies. These taste awesome! They're very soft and cake-like in texture. These are dome-shaped once they bake. You can flatten them as desired.This is a flexible recipe. You can add a teaspoon (or more) of baking soda instead of baking powder if you want a thinner cookie. I think you can top these with some white chocolate chips after baking.

- Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper or grease lightly.
- Mix sugar, oil, eggs, vanilla extract, salt, baking powder, purple yam powder, and flour, in this order, in a large bowl until dough is well blended. Drop tablespoons of dough onto the baking sheet.
- Bake in the preheated oven until cookies look firm, 8 to 10 minutes. Cool for at least 5 minutes before gently transferring to a wire rack.
